Seafood Pasta Casserole.
Ingredients:
1 lb. Egg noodles, med. Width;
2 cans cream of mushroom soup;
1 lb. Shrimp or crab meat (cooked);
8 oz. Cheddar cheese;
8 oz. Swiss cheese;
1/2 lb. French style green beans;
1 jar artichoke hearts (sub.);
1/2 lb. Carrots;
8 oz. Coarsely chopped almonds;
6 oz. Flavored bread crumbs;
1 Sm. Can pitted black olives;
2 oz. Pimentos;
1 lemon.

Directions:Cook pasta and set aside to cool, keep in cool water. Next place a layer of artichokes or green beans on bottom of casserole dish. In isolate bowl toss pasta with carrots, olives, both cheeses grated, almonds if green beans are bottom layer and add pimentos. Add seafood and continue to toss, and then add all to the casserole dish. Pour both cans of cream of mushroom soup over aggregate and allow it to be soaked up. Cover top with the bread crumbs. Squeeze a diminutive lemon on top for flavor. Place in 300 degree oven for 30-45 minutes and serve.

Macaroni Cheese (Crock Pot).
Ingredients:
16 ounces elbow macaroni;
1/2 cup margarine - melted
2 large eggs - beaten;
12 ounces evaporated milk;
10 3/4 ounces condensed cheese soup;
1 cup milk;
16 ounces shredded cheddar cheese - divided;
1/8 teaspoon paprika.

Directions:Cook macaroni agreeing to package direction; drain. Place in a 5-quart slow cooker; add margarine. In a bowl, merge the eggs, evaporated milk, soup, milk and 3 cups cheese. Pour over macaroni; stir to combine. Cover and cook on low for 4 hours. Sprinkle with the remaining cheese. Cook 15 minutes longer or until cheese is melted. Sprinkle with paprika.

Tuna Pasta Casserole.
Ingredients:
1 c. Frozen peas;
1 can condensed cream of celery soup;
1/2 cup milk;
1/2 c. (2 oz) shredded Swiss cheese;
1 can (6 1/2 oz) tuna, drained and flaked;
2 c. Cooked corkscrew or other macaroni (1 cup uncooked);
2 hard boiled eggs, chopped;
1/2 c. Crumbled potato chips.

Directions:Place peas in small microwave-safe bowl. Cover with vented plastic wrap; Microwave on High 1-2 minutes or until tender. Drain and set aside. In 1 1/2 quart microwave-safe casserole, stir soup and milk until smooth. Stir in cheese. Fold tuna, macaroni, eggs and peas into soup mixture. Cover with lid; microwave on High 5-7 minutes or until hot and bubbling, stirring once while cooking. Let stand, covered, 5 minutes. Sprinkle potato chips over casserole. Note: Cream of Chicken or Cream of Mushroom can be replaced for the Cream of Celery.

These are straightforward recipes and can be made swiftly when you come home from a hard day's work.

Pasta casseroles are also suitable for vegetarians, so they make a very versatile dish if you have unexpected guests who happen to be vegetarian.

Bring Out the Slow Cooker and Make a delicious Beef Bourguignonne or Round Steak With Onions

Beef Bourguignonne

Meat Casseroles

1 lb boneless beef roast, cut into 3/4-inch cubes
2 tbsp canola oil
1 large onion, chopped
1 garlic clove, minced
1 1/4 cups Burgandy wine
1/2 cup beef broth
1 tsp dried thyme
3/4 tsp dried marjoram
1/2 tsp salt
1/4 tsp black pepper
2 bay leaves
3 cups whole fresh mushrooms
4 medium carrots, cut into 3/4-inch pieces
2 cups freezing small whole onions
3 tbsp quick-cooking tapioca
1/4 cup cold water
2 tbsp all-purpose flour
2 slices bacon, crisp fried, crumbled
3 cups hot buttered noodles

In a large skillet heat the oil until hot. Add the beef cubes, onion, and garlic; cook until the beef is browned and onion is getting tender. Drain.

Round Steak With Onion

2 lb beef round steak about 3/4-inch thick
1/4 cup flour
1/2 tsp salt
couple dashes black pepper
2 tbsp canola oil
1 medium to large yellow onion, sliced
1 can (10 3/4-oz) condensed cream of celery soup, undiluted
1/2 tsp dried oregano
1/4 tsp dried thyme
1/3 cup cold water
3 tbsp flour

Trim any excess fat from the round steak and cut steak into 6 equal portions. Coat meat in the 1/4 cup of flour; pound gently with a meat mallet. Sprinkle the meat with the salt and pepper.

Heat canola oil in a large skillet over medium-high heat. Brown the meat, on both sides, in the skillet. Remove meat from the skillet and place in slow cooker or crockpot. Discard the drippings from skillet, reserving about a tablespoonful.

Cook the onion in the reserved drippings in the skillet; stir in the celery soup, oregano, and thyme to blend well. Pour the soup blend over the meat in the cooker. Place the cover on the cooker and cook on low setting for 8 to 10 hours.

Measure out 1 1/2 cups of the cooking liquid and place into a saucepan. Blend the cold water gently into the 3 tablespoons of flour; stir into liquid. Cook, stirring, until thickened and bubbly. Season, if needed. Serve over the steak pieces.

In a 4-quart or larger crockpot or slow cooker layer the mushrooms, carrots, and onions. Sprinkle the tapioca over all. Place the meat blend atop the vegetables and add the thyme, bay leaves, marjoram, salt, and pepper. Combine the Burgandy and the beef broth; pour over the meat.

Place cover on pot and cook on low for 10 to 12 hours or on high for 5 to 6 hours until meat and vegetables are tender. Discard the bay leaves then stir in the crumbled bacon. Serve over the hot buttered noodles.

Delicious Seafood Recipes

Seared Sea Scallops in Mandarin Sauce

Ingredients:

½ lb U/10 Sea Scallops

1 tbsp Olive Oil

2 ½ oz Mandarin Oranges

1 tbsp Chopped Onions

2 tbsp Green Onions

1 oz Mandarin Juice

4 tbsp Sweet Vermouth

1 tbsp Cold Butter

Pinch Salt & Pepper

Pinch Parsley

Wedge Lemon

Heat up olive oil in medium sauté pan at a medium flame. Sear scallops on both sides until lightly browned. Add your chopped onions, garlic & mandarin oranges and stir while cooking for 1 ½ minutes. Then add sweet vermouth and reduce to a low flame. Add mandarin juice, green onions, and wedge of lemon and let stand for 1 minute. Add cold butter and stir for 2 minutes. Add a touch of Salt, Pepper and Parsley to taste. Serve and Enjoy!

Pineapple Seared Sea Scallops

Ingredients:

½ lb U/10 Sea Scallops

1 tbsp Olive Oil

2 ½ oz Diced Pineapple

1 tbsp Chopped Onions

2 tbsp Green Onions

1 oz Water

4 tbsp Sweet Vermouth

1 tbsp Cold Butter

Pinch Salt & Pepper

Pinch Parsley

Wedge Lemon

Heat up olive oil in medium sauté pan at medium flame. Sear scallops on both sides until lightly browned. Add your chopped onions, garlic, & diced pineapples and stir while cooking for 1 ½ minutes. Then add sweet vermouth and reduce to a low flame. Add water, green onions, and a wedge of lemon and let stand for 1 minute. Add cold butter and stir for 2 minutes. Add a touch of salt, pepper, and parsley to taste. Serve and Enjoy!

Enchilada is the traditional Mexican dish meaning 'seasoned with chilies'. It is simply dried red chili peppers soaked and ground into sauce flavored with some seasonings. The dish is very simple. It is a family staple. This Mexican invaded the American food market in the mid sixties and since then it has experienced soaring popularity. Many kinds of enchiladas are made depending on the ingredients. The red enchilada sauce is tomato based with red chilies and the green enchilada is made of tomatoes and green chilies. Mole may be used in the preparation too.
A typical enchilada may be made with corn tortilla. Fry tortilla in oil to soften it and dip it in your favorite enchilada sauce. Fill tortillas with chicken, meat or cheese fillings or vegetables, seafood, eggs, banana or even potato with white cheese and roll it, then place it in a casserole. Layer it with sauce, cheese and chopped onions. Fried eggs or salted cooked meat strips will add special touch to the side dish.

• Pre-heat the oven at 350 degree F.
• Add oil and cook a tortilla for 2-3 seconds in a heated large pan. Lift it and add another tortilla under it. Cook for 2-3 seconds. This way brown and soften the tortillas.
• Saute up onion and garlic and then turn off the heat. Add 1 cup salsa, 3 tablespoon tomato paste in 1 cup of water, crushed fire roasted canned tomatoes and prepare the sauce a bit sweet and not vinegary.
• Grease a casserole. Take the tortillas and cover it two third with shredded cheese. Roll it and place in the casserole. Cover the tortillas with sauce and the grated cheese. Put the casserole in the oven for 10 minutes till cheese melts.
It is basically tortillas stuffed with various fillings. This term is a Spanish-American name, which first came into print in 1885 and later in 1949 given the credit to be a Mexican dish for tourists. Now it is a staple for Mexican-American restaurants.
It is easy and simple to prepare. Heat oil, add onion and garlic to cook till tender. Stir some flour and mix till it is smooth. Add chicken broth, water and enchilada sauce. Cook till smooth. Stir in chilli powder and salt, cook over medium heat. Keep stirring till thick and add cheese with chicken and olives.
Dip the corn tortillas in prepared sauce for 5 seconds. Spread 3 tablespoons chicken filling in the center. Roll up and keep in a shallow dish. Pour remaining sauce over tortillas. Bake at 350 degree F for 15 minutes. Sprinkle with cheese and bake for further 10 minutes. Garnish with sliced ripe olives and serve immediately. The artistic and cooling garnish of lettuce beholds an enchilada.

How to Use Summer Vegetables in Delicious Old Fashion Casseroles

Enjoy those wonderful summer vegetables from your garden, grocery store, or farmer's market in delicious casseroles. Quick, easy, inexpensive and perfect for family reunions, picnics, pitch-in meals, etc. Choose from Zucchini Cheese Casserole, Shirley's Asparagus Casserole, and Summer Squash Casserole.

ZUCCHINI CHEESE CASSEROLE

Meat Casseroles

1 1/2 qts (6 cups) peeled, seeded, diced zucchini
2 eggs, beaten
1/4 cup evaporated milk
3/4 cup Ritz style cracker crumbs
6 tbsp melted butter or margarine
8-oz pkg shredded cheddar cheese

Preheat oven to 325 degrees.

Mix together all ingredients except one-half of the cheese. Pour mixture into a 9-inch square baking dish that has been lightly greased. Top with the remaining cheese. Bake at 325 degrees for 45 minutes or until zucchini is tender and casserole is bubbly.

SHIRLEY'S ASPARAGUS CASSEROLE

2 cans asparagus (or an equal amount of fresh, steamed)
2 tbsps milk
3/4 box cheese crackers or saltines
3 hard boiled eggs
1 or 2 pieces pimento, chopped
2 small cans English peas
2 cans mushroom soup
1/2 stick butter or margarine, melted

Preheat oven to 325 degrees.

Heat mushroom soup and milk together in a medium saucepan. Crumble crackers into melted butter and mix well. Using half of each layer asparagus, sliced eggs, peas, soup mixture, sprinkle with pimento. Repeat with remaining items. Top with crackers. Bake at 325 degrees until browned and bubbly.

SUMMER SQUASH CASSEROLE

2 lbs. yellow squash, sliced (can mix yellow squash with zucchini if desired)
1/4 cup chopped onion
1 can cream of chicken soup
1 cup sour cream
1 cup shredded carrots
1 pkg (8-oz) herb stuffing mix (I prefer Pepperridge Farms)
1/2 cup melted butter

Preheat oven to 350 degrees.

In a saucepan, cook the squash and onion in boiling salted water for 5 minutes; drain. Combine cream of chicken soup with the sour cream. Stir in the carrots. Fold in squash and onion mixture. Combine stuffing mix and butter. Spray a 9 x 12-inch baking pan with nonstick cooking spray. Spread half the stuffing mixture in bottom of dish. Spoon vegetable mixture over the stuffing. Top with the remaining stuffing. Bake at 350 degrees for 25 to 30 minutes.

A strange but yummy cornmeal porridge that's easy to make. A cousin to American grits, polenta is a staple in northern Italy and makes a satisfying winter meal. You can find it in most grocery stores, with directions on the package.

A soft mound of polenta can be the base for cooked greens, sauteed portabello mushrooms or any vegetable. It can also be baked in a loaf pan, then thinly sliced. Sliced polenta can replace bread or lasagna as a base for almost any filling, including pesto, mozzarella, tomato sauce and roasted peppers.

Risotto

A delicious creamy rice dish that can be enhanced with almost any vegetable. It must be made from Arborio rice, which can be found in most grocery stores. Risotto has a reputation for being tricky, but the new oven-baked and crockpot methods are almost effortless. Favorite vegetarian additions include asparagus, mushrooms and artichoke hearts (frozen work fine). Butter and freshly-grated parmesan cheese add flavor and texture.

Toward a More Creative Cuisine

My purpose is not to convert you to vegetarianism, but to inspire you to eat more creatively. I do recommend eating bread, butter and cheese in moderation, and as close to homemade as you can find. Avoid low-fat versions. Try fresh mozzarella, the type that comes in water. Frequent artisan bakeries and farmers' markets. Eat vegetables in season, not those flown in from the opposite hemisphere.

When you concentrate on fresh, whole, local ingredients, you'll discover that your cravings for fat and sugar decline. Centuries of eating this way can't be wrong!

Three Delicious Beef Casserole Dinner Recipes

As a busy mother and wife, I am a big fan of casserole dishes for our family dinners because I can get them onto the table in less than 60 minutes. If you are as busy as I am, I think you will appreciate these 3 recipes.

Time Saving Tips:

Meat Casseroles

1. Brown up your hamburger ahead of time and freeze in airtight freezer containers.

2. Chop all vegetables the night before and store in the refrigerator.

3. To save money, purchase your ground beef in large family value packs.

Onion Beef Macaroni Casserole

1 1/2 lbs. ground beef

1 tablespoons flour

2 cups water

1/4 cup cheddar cheese, shredded

1 envelope onion soup mix

1 cup tomato sauce

1 cup uncooked macaroni

Brown meat in large skillet, drain off grease. Stir in onion soup mix, flour, tomato sauce, water and macaroni. Simmer covered for approximately 10 minutes or until macaroni is almost done. Pour mixture into a lightly greased casserole dish. Sprinkle the cheese on top. Bake in a preheated oven set at 400 degrees for 15 minutes.

Taco Hamburger Casserole

1 lb. lean ground beef

1 package taco seasoning mix

1 cup water

9 oz. package frozen green beans

1/2 cup sharp cheddar cheese, shredded

1/2 cup mozzarella cheese, shredded

Preheat oven to 325 degrees. Brown ground beef in a large skillet then drain off excess fat. Add taco mix and water. Cook over low heat 8-10 minutes or until liquid has been absorbed. Meanwhile, cook green beans according to package directions, drain. Spread meat in a greased baking pan. Spread beans over meat and sprinkle with cheese. Bake 15-20 minutes or until hot and cheese melted.

Beef and Rice Casserole

1 cup uncooked rice

1 lb. lean ground beef

1 cup black olives, chopped

1/2 cup onion, chopped

1 cup celery, finely chopped

2 1/2 cups canned stewed tomatoes

1 cup water

1 teaspoon chili powder

1/2 teaspoon Worcestershire sauce

1/4 teaspoon black pepper

1 teaspoon salt

Brown ground beef in a frying pan until browned. Stir in chopped onion, celery and rice. Simmer until browned and softened. Add tomatoes, water and seasonings. Cook for 5-7 minutes and then transfer to a 2 quart casserole dish. Bake covered in a preheated 350 degree oven for 45 minutes.

5 Easy Ways to Prepare Delicious Venison Meals

Does your husband keep bringing home venison and asking you to do something with it? Most of the "hunting widows" I know have no idea what to do with the meat, so they make the same stew or chili over and over. That can get pretty boring pretty quick. When my husband started hunting seriously and I found myself with 200lbs of venison in the freezer, I decided I needed to figure out some fun things to do with it. I've made a lot of recipes, and here are the five easiest ways I've found to prepare the meat.

1. Burgers

Meat Casseroles

Venison burgers are amazing, and they are so lean and healthy. Grilled, broiled, with cheese or with out...it's all good. So if you don't have a meat grinder, invest in one. (We use an attachment to our standing mixer.) I usually add a little bit of olive oil and some Worcestershire sauce to the ground meat so the patties don't fall apart on the grill. You can also bind the meat with chopped onion or bread crumbs.

2. Salt roast

Get a 5lb bag of course salt and steam the roast. It's amazing. Just mix some water into the salt, put the roast in a deep roasting pan, and cover it with the salt mixture. As the salt hardens, it traps the steam. This keeps the meat tender and flavors it perfectly. Cook at a very low temperate. We cook a typical 4lb roast at 200 for about 4 hours. Use a meat thermometer to make sure you don't over cook it. Chisel the salt away and serve.

3. Kabobs

Cut your meat in 2-inch cubes and marinade in olive oil, lime juice, and cilantro for about 1/2 hour. Put the meat on skewers, adding onions or peppers if desired. Grill for 3 to 5 minutes on each side. They are so delicious!

4. Grilled strips

Slice the meat into strips and brush with olive oil and ground pepper. Grill for about 1 to 2 minutes per side. These grilled strips are terrific on salads.

5. Pizza

Brown ground venison with a little bit of olive oil, basil, and garlic powder. Buy a pre-made pizza crust and your favorite sauce, cheese, and toppings. The venison on the pizza is a nice change of pace to pepperoni or sausage. I like to use pesto as my sauce for a change of pace.

Eating venison doesn't have to mean eating the same boring dishes over and over. Get creative in the kitchen and have fun.

Tips for Making Delicious Casseroles

Casseroles have been around much longer than people think. The popular meal style can trace its roots back to ancient China and its mud-encrusted Beggar's Chicken. Casseroles today are common for chefs looking to save time by cooking all the ingredients at once and significantly reducing the amount of dishes that will need to be cleaned later. To make the most of your adventures into cooking casseroles, keep in mind a few essential tips.

Many of the casserole recipes you will come across will ask for some sort of canned soup. These prepared sauces are not always very nutritious. If you are concerned about caloric or fat intake, you can substitute with a low-fat version on the canned soup; if there is not one available, you can make a white sauce to use instead.

Meat Casseroles

If you plan to freeze your casserole, line the pan with tin foil, leaving an extra amount on the side to cover the dish later. You have two options with freezing a casserole: you can put it straight in the freezer uncooked or you can bake it first. If you decide to cook it, be sure to let it cool completely before putting it in the freezer. When you are ready to eat it, thaw it in the fridge overnight or simply bake it in a 350 degree oven for twice as long as you normally would. The dish is done when a skewer poked into the middle feels hot to the touch. A frozen casserole will stay good about two months.

If the recipe you are using calls for herbs, the decision on whether to use fresh or dried really depends on the length of time the casserole needs to be cooked. If it is more than an hour, you should used dried herbs; fresh herbs lose flavor with long exposure to heat. If you want to get the top nicely browned, do not cover it during baking.

You may run into recipes that require a certain pan that you do not have. This is an easy problem to fix. If you have a dish near the same size, use that. If not, keep this rule in mind: when substituting a shallower pan, take 25 percent off the cooking time; when substituting a deeper pan, add 25 percent.

Southern Living Comfort Food - A Delicious Trip Down Memory Lane

What is the first thing that comes to mind when someone asks  you what you favorite comfort food is?  Mine is baked macaroni and cheese that is just a little bit crunchy.

I love to eat, so when the book Southern Living Comfort Food  came across my desk I just had to check it out.  After skimming the index I read the foreward which is almost as good as the recipes!

2 Delicious Ground Beef Casserole Recipes

Ground beef is a versatile food item. It can be made into almost anything you desire. Also, it is very quick to prep and quick to cook. To prepare a beef casserole recipe you need to know a few things. First, wash your hands before beginning to work with the beef. This will prevent your ground beef from getting contaminated. CHILI MEATLOAF AND POTATO CASSEROLE / Serves 5

Meat Casseroles

Ingredients

MEATLOAF:

* 1 1/2 lbs hamburger meat
* 3/4 cup onion, finely chopped
* 1/3 cup saltine cracker crumbs
* 3 tablespoons milk
* 1 tablespoon chili powder
* 3/4 teaspoon salt

POTATO TOPPING:

* 3 cup prepared mashed potatoes
* 1 can whole kernel corn with red and green peppers, drained (11 oz.)
* 1/4 cup green onions, thinly sliced
* 1/2 to 1 cup taco seasoned cheese, shredded

How To Put It Together

1. Heat oven to 375 degrees. In large bowl, combine meatloaf ingredients, mixing lightly but thoroughly; gently press into bottom of 9-inch square baking pan, Bake 20 to 25 minutes or until center is no longer pink. Carefully pour off drippings.
2. Meanwhile in medium bowl, combine all topping ingredients except cheese. Spread over meatloaf to edges of pan; sprinkle with cheese. Broil 3 to 4 inches from heat for 3 to 5 minutes or until top is lightly browned. Cut into 6 rectangular servings. Makes 6 servings.

ITALIAN GROUND BEEF CASSEROLE

Ingredients

* 1 1/2 cups macaroni
* 1 1/2 lbs hamburger meat
* 1 small eggplant, peeled and chopped into 1/2 i nch pieces
* 1/2 cup chopped onion
* salt and pepper to taste
* 1/2 teaspoon basil
* 1 cup sour cream
* 1 cup shredded cheese

How To Put It Together

1. Cook pasta according to directions.
2. Brown ground beef and onion
3. Drain off fat
4. Add remaining ingredients and macaroni
5. Put in a buttered casserole dish and bake, uncovered for 45 minutes at 350 degrees.

Frugal Food - How to Cook and Enjoy Delicious Meals Without Spending a Fortune

We're all worrying about money in the current economic climate, and anything that saves some of it would be good. And we all like eating, don't we? (Size zeros need not answer that.) So, can we eat well and spend less money?

Yes, if we learn how to eat frugally.

If that sounds a bit worthy, don't worry - it doesn't mean lentils and grinding your own grain. It means using every bit of food you buy, without wasting a thing. For example, instead of using fillet steak you could try braising steak but cook it more slowly - it will be deliciously tender, and a lot cheaper.

If the notion of 'leftovers' strikes terror into your heart - and there is something dispiriting about the word - think of them as tomorrow's ingredients cooked today. A few extra potatoes and vegetables today and a lovely crunchy bubble-and-squeak tomorrow. Almost any bits and pieces can be made into soup, just simmer with some stock (from a cube is fine) and whizz or not as you like. A hot meal for pennies.

Here are some suggestions for eating frugally but very well:


Cook local food in season - fewer food miles mean better taste, and food that is in season is at its best.

Use your oven wisely - try to use all the shelves. Put some jacket potatoes in the bottom of the oven while you are baking (cakes or casseroles), for instance. Alternatively, use a slow cooker if you have one.

Don't have meat or fish every day - try beans or pulses instead. The dried ones that need overnight soaking and then boiling have the best flavour, and they are cheaper than canned varieties.

Swap ingredients - substitute cheaper ingredients for pricey ones in your favourite recipes. Don't buy ingredients that you're not going to use in any other recipe, see what's in your cupboards already! If you haven't any breadcrumbs, use crushed crackers or oatmeal instead. Or use stock instead of wine in cooking.

Make double and freeze half - then you'll have a home-made ready meal.

Choose cheaper cuts of meat - and cook them gently for longer. Shin of beef has more flavour than steak in a stew or pie, but does need several hours cooking.

Add less expensive extras - to get more portions per dish. For example, put more vegetables in stews, pies and soups. Serve dumplings with stews and Yorkshire puddings with roasts, and cook plenty of cheap seasonal vegetables as accompaniments.

Use a steamer - one of the stainless steel basket type is ideal. Simply put it over a pan of boiling water - you could be boiling potatoes in the pan and steaming some broccoli over the top.

Go for strong cheeses - such as mature farmhouse Cheddar, Stilton or Parmesan. They are more expensive than milder cheeses but their strong taste means that you need only a small amount to flavour the recipe, so they last longer.

Try a whole chicken - instead of breast/leg portions. Roast it for the first meal, then strip off the remaining meat for a casserole, and finally boil the carcass for soup (you will be able to find more meat on the bones too, after it has been boiled for a couple of hours) - three dishes instead of one.

We can eat well, feel full and still save money. What's not to like?

Cooking Basics - Tips For Making Delicious Casseroles

Casserole recipes offer something for everyone. Casseroles feed large groups, they are budget friendly and easy to prepare. You can easily use leftover meat or other ingredients in your casserole, which also saves time and money and you can also serve your casserole in the same dish you cooked it in, saving clean up. What more could you ask from one versatile dish?

Here are some tips for creating the perfect casserole dishes.

Casserole Dish Size

The most versatile casserole dish is the 13x9 rectangular dish. This holds about 15 cups of delicious casserole.

Casserole dishes also come in 8x8 inches, which holds about 8 cups and is good for a couple or a smaller family. It also comes in handy for baking recipes like cornbread or smaller cakes.

Here are some other sizes of casserole dish and their volume:

11x7 inches - holds 10 cups
9x9 inch - holds 10 cups
1 quart - holds 4 cups
2 quart - holds 8 cups

Freezing Your Casseroles

One budget friendly recipe idea is to make a large casserole and freeze the left overs. Here are some helpful hints for freezing your casserole dishes:

* Put your casserole in a container that can go into the oven or the freezer to save clean up and mess.

* Allow your casserole to cool fully before putting in the freezer. Be aware of a general rule though for food safety. Put your cooked food into the freezer or refrigerator at within two hours of taking it out of the oven so bacteria doesn't start brewing.

* Cover casserole tightly before putting into the freezer.

* If you're putting toppings on your casserole, like cheese or chips, leave these off the portion you will freeze and add them when you remove from the freezer to cook.

* Use your frozen casserole within 2-4 weeks for maximum freshness and taste.

* Defrost in the refrigerator not the counter top for food safety.

Cooking Basics

* Casseroles are easy to make ahead and just pop into the oven when you get home from work. Just allow about 15 minutes extra cooking time so all ingredients have time to warm up from the frig.

* Most casseroles can be baked at 350 degrees for about one hour, depending on whether or not your meat was cooked prior to adding it to your recipe.

* If you want a healthy casserole, watch the toppings! Mozzarella cheese made with skim milk makes a good topping and melts easily. If you use chips, make them whole grain. If you like crunchy toppings add pine nuts or other chopped nuts.

* I always cover my casserole recipes with tin foil to keep them from drying out. If I add cheese, take the foil off about the last 10 minutes of baking and allow the cheese to melt then.

* To make my casseroles healthier, I always add chopped veggies to much every recipe. Even the veggie-haters among my grandkids don't seem to mind them so much if they are buried in a tasty casserole.

While you're baking your casserole, make a fresh salad and slice up some whole grain bread and there you have it - a tasty, budget friendly dinner that the whole family will love.

1. Put the mixture of the milk, egg and mayonnaise in the larger bowl. This is the stuffing which will be used after the next steps.
2. Combine all the ingredients and put in the pan then preheat the oven.
3. The next step is baking it for thirty minutes at three hundred degrees Fahrenheit.

3. Leftover Turkey Casserole Recipe - This is a good way of using your leftover turkey.
The ingredients for this recipe are one pack of bread stuffing, one can of sour cream, one can of sweetened milk, one can of cream of celery soup, one package of onion soup, one can of green beans and two cups of chopped meat of Turkey.

Cooking Procedure:

1. Prepare the stuffing as instructed by the package.
2. In another bowl mix the cream of mushroom soup, sour cream, onion soup and celery soup.
3. Put the green beans in a dish and layer the meat of turkey on it. Put the mixture as well as the stuffing.
4. The last step is baking it for thirty minutes until it turns brown.

Delicious Southern Italian Style Lasagna at Home

If you are looking for a delicious meal for your whole family that is also budget friendly, lasagna is the way to go. Easy to make, filling, and economical, this popular Italian dish is popular with almost everyone that loves Italian food.

Origins

Lasagna is a type of casserole that layers meat, sauce, and cheese. There are numerous variations, including some with spinach and others with white sauce. In order to prepare your lasagna, you will need to gather a few ingredients if you do not have them at home already. You will want:

o An 8 ounce box of lasagna noodles

o A 15 ounce can of crushed tomatoes

o A 28 ounce jar of pasta sauce, preferably one with a bold flavor, though any flavor will work

o One pound of Italian sausage

o 15 ounces of ricotta cheese

o 8 ounces of shredded mozzarella cheese

o 1 teaspoon of Italian seasoning

o ¼ teaspoon of garlic powder

o ¾ cup of dry red wine such as burgundy or cabernet

Preparing The Lasagna

Before you get started, you will want to preheat the oven to 350 degrees Fahrenheit. Next you will need to prepare the noodles. Fill a large pot with water and bring to a boil. Once water is boiling add the noodles and cook for about eight minutes. The noodles should still be slightly firm. Drain on a paper towel and return to the pan. Coat with a little olive oil and allow to cool. To make the sauce you will want to brown the sausage in a large skillet.

Once browned, add in the pasta sauce, crushed tomato, seasoning and garlic powder. Reduce the heat to low and add the red wine. Continue to cook and stir for another 10 to 15 minutes.

Once your sauce is made, you will have to assemble the lasagna. You will need a 13 x 9 pan. Ladle a quarter of the sauce into the bottom of the pan. Layer noodles on top, side by side. Ladle on another quarter of the sauce, and then sprinkle with a third of the mozzarella and a third of the ricotta cheeses. Repeat these steps twice to form the different layers, ending with a ricotta topping. Bake in the preheated oven for 45 minutes. Allow to set 10 minutes before cutting to serve. If you prefer, the lasagna can be frozen for up to 3 months and reheated as desired.

Spicy Venison Jerky - Delicious Dried Meat Snack With a Hot Chile Flavor

Jerky is considered one of the first convenience foods in America. These nutritious dried meat strips sustained many a hungry cowboy and traveler on the plains of the western part of United States.

Dried chile flakes are the traditional seasoning for jerky. They not only flavor the meat, but also help preserve it, which the Indians discovered many years ago. Chiles contain an anti-oxident that prevents meat, and meat fat, from turning rancid as it is drying in the sun. The chiles also help in warding off insects and birds through the drying process.

Even today, along the Rio Grande River Valley of New Mexico, Pueblo Indians make venison jerky. The whole process matches the beginning of deer hunting season with the harvesting of red chiles in this region.

Making jerky, and in this case venison jerky, is a very simple process at home, using your oven to dry out the meat. Jerky can be enjoyed "as is" for a snack, or it can be served in a sauce or gravy like any dried beef.

Venison Jerky Recipe

Venison round steak, trimmed of fat, and cut in strips

Pure ground New Mexican hot red chile

Salt

For the most tender jerky, cut the venison strips across the grain of the meat. If you prefer chewy jerky that has to be torn or pulled (that's where the name "jerky" comes from), then cut the strips along the grain.

Generously sprinkle the meat strips with the ground chile and salt. The more salt used, the quicker the venison jerky will dry. Place the season strips of meat on the rack of a broiling pan, or any type of rack that will allow the circulation of air around the meat and the draining away of fat.

Set the oven at 150 degrees F., and place the pan of meat in. Prop open the oven door about 2 inches to let the juices evaporate. Dry in the oven for about 8 hours, or until the jerky reaches your desired dryness.

Store the jerky in a cool, dry place that allows for circulation. Because it is very difficult to get the meat completely dried, storing in an airtight container often causes it to mold. It can also be stored in the freezer for up to 3 months.
