Bring Out the Slow Cooker and Make a delicious Beef Bourguignonne or Round Steak With Onions

One of the best ways to cook and keep the kitchen cool on hot days, have a hot meal ready when you get home on cold days, or just put in order a tasty meal on busy days is to use your crockpot or slow cooker. These appetizing recipes for Beef Bourguignonne and a Round Steak with Onions will become family favorites and real go-to recipes!

Beef Bourguignonne

Meat Casseroles

1 lb boneless beef roast, cut into 3/4-inch cubes
2 tbsp canola oil
1 large onion, chopped
1 garlic clove, minced
1 1/4 cups Burgandy wine
1/2 cup beef broth
1 tsp dried thyme
3/4 tsp dried marjoram
1/2 tsp salt
1/4 tsp black pepper
2 bay leaves
3 cups whole fresh mushrooms
4 medium carrots, cut into 3/4-inch pieces
2 cups freezing small whole onions
3 tbsp quick-cooking tapioca
1/4 cup cold water
2 tbsp all-purpose flour
2 slices bacon, crisp fried, crumbled
3 cups hot buttered noodles

In a large skillet heat the oil until hot. Add the beef cubes, onion, and garlic; cook until the beef is browned and onion is getting tender. Drain.

Round Steak With Onion

2 lb beef round steak about 3/4-inch thick
1/4 cup flour
1/2 tsp salt
couple dashes black pepper
2 tbsp canola oil
1 medium to large yellow onion, sliced
1 can (10 3/4-oz) condensed cream of celery soup, undiluted
1/2 tsp dried oregano
1/4 tsp dried thyme
1/3 cup cold water
3 tbsp flour

Trim any excess fat from the round steak and cut steak into 6 equal portions. Coat meat in the 1/4 cup of flour; pound gently with a meat mallet. Sprinkle the meat with the salt and pepper.

Heat canola oil in a large skillet over medium-high heat. Brown the meat, on both sides, in the skillet. Remove meat from the skillet and place in slow cooker or crockpot. Discard the drippings from skillet, reserving about a tablespoonful.

Cook the onion in the reserved drippings in the skillet; stir in the celery soup, oregano, and thyme to blend well. Pour the soup blend over the meat in the cooker. Place the cover on the cooker and cook on low setting for 8 to 10 hours.

Measure out 1 1/2 cups of the cooking liquid and place into a saucepan. Blend the cold water gently into the 3 tablespoons of flour; stir into liquid. Cook, stirring, until thickened and bubbly. Season, if needed. Serve over the steak pieces.

In a 4-quart or larger crockpot or slow cooker layer the mushrooms, carrots, and onions. Sprinkle the tapioca over all. Place the meat blend atop the vegetables and add the thyme, bay leaves, marjoram, salt, and pepper. Combine the Burgandy and the beef broth; pour over the meat.

Place cover on pot and cook on low for 10 to 12 hours or on high for 5 to 6 hours until meat and vegetables are tender. Discard the bay leaves then stir in the crumbled bacon. Serve over the hot buttered noodles.

Basic Slow Cooker Tips and Delectable Roast Beef Recipes

Procedure:

One hour prior to cooking take off the roast from the refrigerator at put it in room temperature.

Using a sharp knife, you need to cut about eight small incisions colse to your roast. You will place one sliver of garlic on each incision. Place one tablespoon of olive oil colse to your roast and then sprinkle it with salt and pepper. Put your roast on the oven rack with the fatty side up and a drip pan over a rack under the roasting rack. This way, you will not be required to turn the roast.

Brown your roast at 375oF for 30 minutes. Then, put it on 225oF. It would still 2 to 3 hours to cook but if it starts to drip and is already brown externally, use your meat thermometer to check its temperature. After this, pull your roast from the oven once the climatic characteristic reaches 135 to 140oF. Place it on an aluminum foil for about 15 minutes and carve to serve.

For the gravy:

Take out the dripping pan from the oven. Place it on the stove top while it is on medium heat. Collect the drippings, add water, beef stock or red wine. This will loosen the drippings off the pan. Then, dissolve one tablespon of cornstarch with water and add this on the drip pan. Stir it speedily as the gravy thickens. You can also add some butter, salt and pepper. Chicken Stew and Corned Beef Slow Cooker Recipes

Slow cookers are time efficient appliances and very easy to use. You do not need to check on your cooking from time to time. You can cook the food for hours and it still tastes great. Here are chicken and corned beef recipes you can make using your slow cooker or crock pot.

Chicken Stew

Ingredients include 2 large-sized onions; 2 lbs. skinless, boneless chicken breasts cut into 1 inch cubes; 2 large-sized carrots that are cut into 1 in. slices or 1 cup of baby carrots; 3 ½ cups of chicken broth, 3 medium-sized potatoes that are cut into 1 in. cubes and 1 tsp. celery seeds. Other ingredients are ½ tsp. seasoned pepper mix or black pepper, 1 tsp. dried thyme, salt, 1 cup thawed frozen corn, 8 oz. sliced mushrooms and 1 cup thawed frozen peas.

Procedure:

Mix all the ingredients in your slow cooker, excluding the peas. Stir it well.Cover it and cook it on low for 8 up to 8 hours. Cook it until the chicken is well done and the vegetables become tender. You can stir-in the peas during the final 30 minutes.

Mexican-Style Chicken Stew

Braising meat is becoming some what of a trend. The benefits of it, however, are endless. It's a slow cooking technique that provides tender, juicy meat, regardless of the cut. The tricky part is truly trivial if you know what you're doing.

The main ingredient in braising is your liquid. Think about the meat you are cooking and what savory or sweet liquid would lead a good flavor to your meat i.e. Beef-red wine, Asian dish- soy sauce, Pork-beer or apple juice. When I braise pork, I like to use 1 part beer or apple juice or white wine to 3 parts chicken, veal, or pork stock. Same goes for other cuts of meat, just think about how flavorful your liquid is and cook.

Next, you want to think about other flavoring agents such as vegetables and spices. Ordinarily speaking, 1 part carrots, 1 part celery and 2 parts onions is determined the "holy trinity". These veggies are used in all primary French and Italian cooking. Garlic is also used widely or you can use shallots instead of garlic or onions. Shallots are what I tend to use most. Also, with the mention of apple juice, consider cutting up apples instead as they among other fruits are suited flavoring agents. Some people even use two, and have their main meal cooking in one and their side dish or dessert cooking in the other.

Slow cookers are available in different sizes - mini for cooking for one up to large for cooking for large families or for entertaining.

4 tbsp tomato paste
4 tbsp soft brown sugar
4 tbsp dry sherry
Plain rice to serve

Method:


Season the flour with salt and pepper; dust the chops with the flour, shaking off any excess.
Heat the oil in a frying pan (skillet) and brown the chops quickly on all sides.
Transfer to the slow-cooker.
Add the onions to the pan and cook for about 5 minutes, stirring occasionally, until beginning to turn golden brown.
Stir in the remaining ingredients and bring just to the boil.
Pour over the chops in the slow-cooker.
Cover and cook for 5-8 hours on LOW.
