How to Make Meat Casseroles For Anything - Family Meals to Church Socials to Pitch-In Meals

It is always good to have some tasty casserole recipes on hand for everything from family dinners to picnics, church socials, office pitch-in meals, etc. If you are tired of using the same old casserole recipes over and over and want to bring new life to the occasion, here are some very good recipes for you. I recommend Florence's Easy Goulash. Florence has always been like a second mother to me and she was also manager of the local school cafeteria back in the days when the local ladies went in early and cooked the meals from scratch. This recipe was a favorite among the students. Florence is in her 80s now and still makes this for me when I'm in the area. Love you, Florence! If you prefer chicken over ground beef, try this Chicken and Broccoli casserole. Both recipes are okay for diabetics, too.

EASY GOULASH

2 lbs ground beef
1 small onion, diced
1/2 bell pepper, diced
3/4 tsp garlic powder
salt to taste
1 1/2 cups elbow macaroni
1 No. 2 can tomatoes, chopped slightly
1 lb Colby cheese, grated

Crumble ground beef and fry with onion, bell pepper, garlic powder, and salt. Cook macaroni until tender, drain. Drain excess fat from ground beef mixture. Add the macaroni and tomatoes. Stir well. Place in a baking dish and cover with the grated cheese. Bake at 350 degrees until cheese melts and is light brown (about 20 minutes).

CHICKEN AND BROCCOLI BAKE

2 pkg. (10-oz ea) frozen broccoli
1 cup cooked brown rice
2 tbsp butter
2 tbsp flour
1/2 tsp salt
2 cups milk
1/2 cup shredded Swiss cheese
2 cups diced, cooked chicken
3/4 cup bread crumbs
1/4 cup grated Parmesan cheese
1 tbsp butter

Cook broccoli and drain thoroughly. Combine broccoli and rice; place in an 8-inch square baking dish that has been sprayed with nonstick cooking spray. Melt 2 tablespoons butter and blend in the flour and salt. Add milk to the butter mixture and cook, stirring, until thick. Remove mixture from the heat; stir in the Swiss cheese and chicken. Spoon the chicken mixture over the broccoli mixture. Combine the bread crumbs, Parmesan cheese, and 1 tablespoon butter. Sprinkle crumb mixture over the chicken mixture. Bake uncovered at 350 degrees for 30 minutes.

Cooking Family Food on a Budget

In this interview we spoke to mum of two Kimberley Saunders about cooking healthy food for a family of four living on a tight budget.



Is it hard to cook good quality meals for our children when you are on a budget?



No, not really because it depends on how well you know the basics of cooking and nutrition. A lot of that's been lost as they didn't teach it in schools in our generation and there are people who think you have to buy things that are cheap on the price label without realising that it's not healthy or that it's actually more expensive than it lookss.



Does cheap meals mean burger and chips?



No it doesn't. You can buy a bag of chips for about a pound and that will only do one or two meals for a family of four, but you still have to have the burgers and there's a lot of fat in that food.



What are the alternatives?



You could still have a meal of hamburger and chips but adapt it. There could be a lean turkey mince homemade meat patty, put under the grill and serve with green beans and sweetcorn. For a family of four that'd be around £2.50. I'm not saying that chips aren't fine for the occasional treat. The green beans you could get fresh, tinned or frozen so it's available to anyone regardless of budget.



What about kids that are picky?



I do understand that some people say their kids won't eat some things. It takes a bit of fortitude and patience to get a child to eat healthily. One of the things that kept me going was saying that there are children in Africa who've never seen a chip in their life. If a child is hungry they're going to eat it.



What tips would you give parents?



Start small, start healthy versions of their favourite food. Chicken nuggets for example. We got chicken breasts and made our own. We did roasted potatoes instead of chips. Fish fingers we turned into tuna patties. It's a bit of tuna fish mixed with a bit of egg, put breadcrumbs over the top and cook.



What about mothers who are pressed for time?



The tuna patties are as simple as opening the tin and popping under the grill. I know a lot of mothers are pressed for time. Why not invest in a slow cooker. You can do roasts, soups, casseroles. You can even do puddings in it.



Should we shop in the supermarkets or smaller shops?



Look at what you're getting and what you have available in your area. If you have a good market by you it's cheaper to go to the market to get your vegetables. If you've got a good local butcher get to know him. If you have some garden space grow your own vegetables. It's important that children know where their food comes from. I know my children wouldn't touch tomatoes until we grew cherry tomatoes in our own garden.



What basics should we have in the cupboard to try and save money?



A good stock cupboard would include tuna, tinned fruit and vegetables with no salt added. I would recommend always having eggs on hand - another quick meal.



What other tips do you have?



A big portion of our budget goes on food. I write meal plans so I know what I am going to cook. I'd go to the supermarket and not even look at the offers. You really can feed a family on a very small budget.

How To Reduce The Cost Of A Family Meal And Still Make It Tasty

If you need to make your money stretch that little bit further then, a good place to start is by reducing the cost of the family meals. The challenge is saving money without compromising the taste of the food you cook.
The following ideas should help you achieve this:
One way that people waste a lot of food is because they do not preserve it properly so that it lasts longer. For example, when you buy green leafy vegetables like lettuce or spinach wash it thoroughly in clean cold water and add a little vinegar. Rinse the vinegar off with more water and remove any excess moisture with a dry cloth. Once it is dry place the lettuce in a sealed and air tight container or bag and place it in the fridge until ready to use. By doing this the lettuce or most green leaf vegetables can keep for an extra 5 or 6 days.
Do not rinse vegetables that are grown in the ground until you are ready to eat or cook them. This goes for vegetables like potatoes, carrots and turnips. The reason for this is because the soil acts as a preserver and protects the outer skin from mould and rot.
When cooking a main course think ahead by reducing the main portion of the meat by adding extra side dishes like roast vegetables, rice or pasta. Even bread as this is quite good at filling you up.
Find creative ways to use or recycle stale food. For example, stale bread can be used for bread and butter pudding or baked jam tarts. Stale oat or wheat biscuits can be used as the biscuit base for cheesecakes or a variety of desert pies.
Try and use cheaper cuts of meat for the Sunday roast. Instead of the more expensive loin cuts use shoulder or rib. The cheaper cuts can also be used for soups, stews and casseroles which can be made in large quantities to feed the family for several days.
When shopping at the supermarket train your mind to focus on sale and promotional items. For example, stock up on essentials that are on sale. Stock up on bread when it is on sale and store it in the fridge to make it last longer.
Buy eggs in bulk and put them in the freezer and use them when you need them for making omelettes or cakes. Do the same with the meat you buy, freeze it until you need it.

How to Make Quick and Easy Casseroles to Feed Your family

Casseroles are all the time an easy way to get ready meals. They merge several ingredients manufacture lots of sides unnecessary, they bake while the cook does other things, and they can be salutary alternatives to fast food. Meat Casseroles

1 pkg (10-oz) icy cut broccoli
2 cups fully cooked ham, chopped
1/4 cup onion
3/4 cup light mayonnaise
3 egg whites
1 tsp dry mustard
2 tbsp grated Parmesan cheese

Thaw broccoli in a colander under hot running water. Drain well and evenly divide among four 10-oz custard cups. merge the ham with the onion and 1/4 cup of the mayonnaise; spoon over the broccoli in the custard cups.

For the topping, in a small mixer bowl with mixer on high beat the egg whites until stiff peaks form. Stir the remaining half cup of the mayonnaise and the mustard together. Fold the mayonnaise mixture into the egg whites. Spoon the egg whites over the ham. Sprinkle the Parmesan cheese over the egg whites. Bake in a preheated 350 degree oven for 15 to 18 minutes or until the topping is golden brown.

Quick Pizza Casserole

6 oz fettuccine*, broken up
1 pkg (3 1/2-oz) sliced pepperoni
1 jar (15 1/2-oz) pizza sauce
1 1/2 cups shredded mozzarella cheese
1 can (4-oz) sliced mushrooms, drained
1 can (2.25 oz) can sliced pitted ripe olives, drained
1 tbsp grated Parmesan cheese

Bring 8 cups of hot water to boiling. Add the fettuccine, boil gently for 8 to 10 minutes until tender. Drain; return to the pan. Cut the pepperoni slices in half and add to the fettuccine. Stir in the pizza sauce, 3/4 cup of the mozzarella cheese, mushrooms, olives, and the Parmesan cheese. Change the mixture to a baking dish that has been sprayed with nonstick cooking spray. Sprinkle the remaining mozzarella cheese over the top. Bake in a 400 degree oven about 15 minutes or until heated through.

*Use whole-wheat fettuccine for an even healthier dish.

With unemployment numbers chronic to rise and our economy chronic to falter, many of us are seeing for ways to cut expenses. If you are seeing for ways to cut back on your grocery budget, casseroles are one of the best ways to do so. This Cornbread Beef Casserole is a good example of an entree that is quick and easy to make and it is also economical. But you aren't giving up taste or feeding your house an unhealthy meal. In this one dish you have meat, vegetables, cheese, and the cornbread. Add a quick salad, steamed broccoli or some corn and you have a meal your house will love.

Cornbread Beef Casserole

Meat Casseroles

1 lb ground beef
1 garlic clove, crushed
2 tbsp chili powder
1 can (16-oz) pinto beans
1/4 cup chopped onion
2 cans (8-oz) tomato sauce
1 cup shredded cheddar cheese
1 pouch Mexican cornbread mix

Preheat oven to 400 degrees. Spray a 12 X 8-inch baking dish with nonstick cooking spray.

In a 10 or 12-inch skillet crumble and cook the ground beef with the crushed garlic and onion until the meat is browned; drain off excess fat. Stir the chili powder and the tomato sauce into the meat mixture. Spoon the meat combination into the prepared baking dish. Sprinkle the cheese evenly over the meat mixture. Spoon the pinto beans over the cheese. Prepare the cornbread mix according to the container directions and pour the batter over the beans. Bake at 400 degrees approximately 25 minutes or until the cornbread is browned.

Variations:

If you don't want the extra spice of Mexican cornbread, use a yellow or white cornbread mix pouch. For a bit of a sweet taste, use Jiffy Cornbread mix.

If you like more heat, use pepper jack cheese instead of cheddar.

If you don't like to use red meat, substitute lean ground chicken or turkey for the ground beef. You will need to add a tablespoon of canola oil to the skillet before browning the meat.

Savory Casseroles For the Family

This article is going to list a few casserole recipes that I think any family can enjoy. Some people shudder at the word "casserole," however there are many great recipes that people simply aren't aware of! A casserole can be savory or sweet, crunch or soft. There are just so many great and unique combinations! Casseroles are a great way to use up extra food items in a way that will feed families big and small, with the potential for leftovers the next day! Plus, an easy casserole dish is just the ticket for busy moms and dads who simply can't spend hours cooking for a family!

Tuna Casserole

Meat Casseroles

1 (12 oz) package egg noodles
2 (6 oz) cans tuna, drained
2 (10 oz) cans condensed cream of mushroom soup
2 cups frozen green peas
10 slices American processed cheese
1 onion, chopped
ground black pepper to taste

In a large pot of boiling water, cook noodles and frozen peas until al dente, then drain. Pour the noodle and pea mixture back into the pot, then add the mushroom soup, onions, cheese, and tuna. Stir until well mixed, then serve.

Cabbage and Cheddar Casserole

4 1/2 cups shredded cabbage
2 cups shredded cheddar cheese
1 can condensed cream of celery soup
2 1/2 cups roughly crushed cornflakes
1/2 cup melted butter or margarine
1/3 cup chopped onion
1 cup milk
1/2 cup mayonnaise
1/4 teaspoon pepper
1/4 teaspoon salt

Combine the cornflakes and butter, then sprinkle half of the mixture into a greased 9 x 13 inch casserole dish. Top with cabbage, onion, pepper, and salt. In a large bowl, mix together the soup, mayonnaise, and milk. Mix well, then spread over the top of the cabbage and onions. Sprinkle with cheese and the rest of the corn flakes. Bake for 50 minutes at 350 degrees F.

Barley, Carrot, and Celery Casserole

1 1/2 cups uncooked medium barley
2 finely chopped carrots
2 chopped celery stalks
4 1/2 cups chicken broth, divided
1/2 cup slivered almonds
7 green onions, chopped
4 garlic cloves, minced
1 tablespoon butter or stick margarine
2 tablespoons minced fresh parsley
1/2 teaspoon salt
1/8 teaspoon pepper

Sauté the celery, onions, carrots, and garlic with the butter in an ovenproof pan. Add barley, pepper, and salt, stirring well. Add 2 1/2 cups of broth. Cover with tin foil and bake for half an hour at 350 degrees F. Remove the tin foil and add the parsley, remaining broth, and almonds. Stir well. Bake WITHOUT the foil for 40 minutes (until barley has become tender).

Go ahead and whip up one of these terrific dishes. I think you'll find that even the toughest to please in your family will be impressed!

Feeding A Family Deli Meat Or Roast Chicken Sandwiches

The deli section of your local grocery store has been very helpful to many families. The variety of meat you can find will suit any families needs. Your meat can be beef, chicken, pork, you can have it sliced thin or thick.

Lunch Meat is a product that is very expensive to consume. It is fast, and easy which means expensive. For many families trying to stay on a budget deli meat can take up a major portion of a weekly budget. Replacing deli Meat with cooked meat can save you a substantial amount of cash.

Meat Casseroles

The next time you are planning meals for your family include purchasing low-cost chicken. For many grocery stores this will be legs with the thigh attached. You should be able to purchase five times as much chicken this way then from the deli.

Cooking chicken is another task which really has become simple to do. Take the pieces of chicken out of the package and give them a good wash with cold water and pat dry with paper towel. If you are going to use a roaster throw a couple big pieces of carrot and celery in the bottom before you put the chicken in the roaster. Rub the chicken with a little olive oil and sprinkle with salt and pepper. Adding a couple potatoes or sweet potato and you will also have a meal when the meat is cooked and the leftovers can be used later.

Cooking with a slow cooker is almost the same as roasting. Vegetables are placed in the bottom, add the chicken and pour enough water to cover the chicken and forget about it while it takes a couple hours to cook.

When your chicken is cooked remove and let cool. The chicken should be tender enough to break apart with your bare hands. The next step will be to remove the meat from the skin and bone and place in another container. The remaining skin and bone will go back in your slow cooker for a couple more hours to extract all the flavor.

Your chicken is now ready to be stuffed into sandwiches, top the sandwiches with your favorite toppings for an amazing lunch.

The left over broth should be allowed to cool before freezing or put in the fridge. Use this broth for your next soup.

Your friends will be envious of the high quality sandwiches you eat which cost only a fraction of regular deli meat sandwiches.

How to Make Meat Casseroles For Anything - Family Meals to Church Socials to Pitch-In Meals

It is always good to have some tasty casserole recipes on hand for everything from family dinners to picnics, church socials, office pitch-in meals, etc. If you are tired of using the same old casserole recipes over and over and want to bring new life to the occasion, here are some very good recipes for you. I recommend Florence's Easy Goulash. Florence has always been like a second mother to me and she was also manager of the local school cafeteria back in the days when the local ladies went in early and cooked the meals from scratch. This recipe was a favorite among the students. Florence is in her 80s now and still makes this for me when I'm in the area. Love you, Florence! If you prefer chicken over ground beef, try this Chicken and Broccoli casserole. Both recipes are okay for diabetics, too.

EASY GOULASH

Meat Casseroles

2 lbs ground beef
1 small onion, diced
1/2 bell pepper, diced
3/4 tsp garlic powder
salt to taste
1 1/2 cups elbow macaroni
1 No. 2 can tomatoes, chopped slightly
1 lb Colby cheese, grated

Crumble ground beef and fry with onion, bell pepper, garlic powder, and salt. Cook macaroni until tender, drain. Drain excess fat from ground beef mixture. Add the macaroni and tomatoes. Stir well. Place in a baking dish and cover with the grated cheese. Bake at 350 degrees until cheese melts and is light brown (about 20 minutes).

CHICKEN AND BROCCOLI BAKE

2 pkg. (10-oz ea) frozen broccoli
1 cup cooked brown rice
2 tbsp butter
2 tbsp flour
1/2 tsp salt
2 cups milk
1/2 cup shredded Swiss cheese
2 cups diced, cooked chicken
3/4 cup bread crumbs
1/4 cup grated Parmesan cheese
1 tbsp butter

Cook broccoli and drain thoroughly. Combine broccoli and rice; place in an 8-inch square baking dish that has been sprayed with nonstick cooking spray. Melt 2 tablespoons butter and blend in the flour and salt. Add milk to the butter mixture and cook, stirring, until thick. Remove mixture from the heat; stir in the Swiss cheese and chicken. Spoon the chicken mixture over the broccoli mixture. Combine the bread crumbs, Parmesan cheese, and 1 tablespoon butter. Sprinkle crumb mixture over the chicken mixture. Bake uncovered at 350 degrees for 30 minutes.

Casseroles, A Great Meal To Have With The Family

Casseroles have become a staple in American families and as families get busier and busier, making a casserole is a great way to make some quick and easy meals that you can still enjoy around the family table. Today when we think of the word "casserole dish," I picture a church potluck or a woman with her arms stretched out welcoming a neighbor to a new house or neighborhood or even a housewife like Donna Reed on a 50's television show. Clearly, there is a reason why we have this perception. These meals are quick and easy to make.

What makes the elements of a great casserole or "hot dish," as Minnesotans like to call it? Think of hamburger or tuna helper and basically you will get an idea of what the great elements are. For me it usually includes rice or some sort of pasta. Next comes a layer of some sort of condensed soup, usually cream of chicken or cream of mushroom.

Meat Casseroles

Personally, I am a little pickier, and while cream of mushroom seems to be a main ingredient in many of the recipes I like to make, I don't necessarily like it to be the main ingredient all the time. So I will often substitute the cream of chicken soup or find a way to substitute something else in that matches whatever I am making. It makes it more fun to be able to experiment and find new variations of recipes me and my family already enjoy. Next comes a meat; tuna, beef, chicken or even turkey all work. You can also add things like peas or corn to get a more balance meal.

One of my favorite things about these dinners is that you probably already have most of the stuff you need to make it in your cupboard right now. I always have mushroom or chicken soup in the cupboard, as well as, rice and noodles. Frozen vegetables and chicken are also almost always in the freezer and I am betting you have all of these ingredients too.

Recently, these type of meals seem to get a bad reputation because they throw everything together and aren't very difficult to bake. However, they are probably better than the fast food alternative and they get your family together with a quick and easy home cooked recipe that all of us should enjoy more often.

How to Use a Slow Cooker to Feed a Family Easily and Cheaply

The Slow Cooker is a great invention and is perfect for busy families who want to come home to a hot, hearty meal after work without having to spend time preparing it. It's worth getting up a bit earlier to prepare some meat and vegetables to throw into your slow cooker to cook while you're at work. There are so many recipes that can be prepared in your slow cooker - casseroles and stews, soups, puddings, mulled wine, curry and chilli. Some people even use two, and have their main meal cooking in one and their side dish or dessert cooking in the other.

Slow cookers are available in different sizes - mini for cooking for one up to large for cooking for large families or for entertaining.

If you have got one gathering dust on a shelf or in a cupboard, grab it, clean it and get searching for some recipes.

Using a slow cooker will give you many benefits:-

1.Using a slow cooker uses less electricity than cooking in a standard electric oven.

2.You can use cheaper cuts of meat because the slow cooking tenderises the meat.

3.In summer, using one will prevent your kitchen getting overly hot.

4.It saves you the time and energy of cooking a meal at the end of the day when you are tired.

5.No effort apart from initial preparation - The food does not need stirring, it can be left happily for 7-10 hours.

6.Natural juices and flavours are retained rather than boiling away.

Tips for Using Your Slow Cooker

* Keep it clean - soak the pot after use to enable you to remove any burnt on bits, otherwise they will cook into your next dish!

* Chop vegetables up small so that they cook through and make sure they are covered by the liquid. You could also saute vegetables first.

* Don't use it to reheat left overs, use a microwave to get food piping hot.

* Don't overfill it.

* Read through the manufacturer's instructions and guidelines to make sure you use your slow cooker properly and that you know what the different settings are for.

* Make sure meat and poultry are thawed out properly and don't add frozen vegetables.

* Use your slow cooker overnight to cook a hot breakfast recipe.

* Be adventurous - look for slow cooker recipes online and have fun experimenting.

* Make a big casserole, curry or chilli in it, and then freeze in batches to use on days where you haven't got time to prepare long meals.

* Once you have poured meat, vegetables and sauce into it, pour a bit of wine or stock into the frying pan you've used and scrape the pan. Add to the slow cooker for extra flavour.

* Don't add too much liquid - Follow recipes and don't be tempted to add extra liquid. Slow cooking creates liquid because steam hits the lid, condenses and drips back into the food.

* If the finished casserole is too watery, switch on to high, remove lid and cook like that for half a hour.

* Don't put prepared meat and vegetables in the pot of the slow cooker in the fridge overnight, you don't want to start with a chilled pot because cooking will take longer.

* Test whole chicken or large cuts of meat with a meat thermometer at the end of the cooking time.

* Most importantly, enjoy experimenting with your slow cooker.

How to Make the Perfect Dish For Pitch-In Meals, Family Reunions, Picnics, and More

Are you tired of taking the same old dishes to family reunions, office pitch-ins, church potlucks, or picnics? For something a little different try this recipe for 3-Meat Baked Beans. Baked Beans are always a good standby but surprise everyone this time with these baked beans with meat. The Bacon Topped Tater Tot Casserole is a more unusual potato dish. Both dishes will go over well with your family and friends.

3-MEAT BAKED BEANS

1/2 lb smoked sausage, cut in thin slices

1/2 lb. ground beef

3 tbsp chopped onion

5 slices bacon, cooked, drained and crumbled

2 cans pork and beans

1/3 cup ketchup

3 tbsp Splenda Brown Sugar Blend

1 1/2 tsp molasses

1 1/2 tsp Worcestershire sauce

1 1/2 tsp prepared mustard

Preheat oven to 350 degrees.

Combine ground beef and onion in a skillet and cook until meat in browned, stirring to crumble. Drain and rinse with hot water, draining again. Combine the beef mixture with the remaining ingredients. Pour mixture into a 2-quart casserole dish that has been sprayed with a nonstick cooking spray. Bake, uncovered, at 350 degrees for 30 minutes.

BACON TOPPED TATER TOT CASSEROLE

1 can (12-oz) fat-free evaporated milk

1 can (10 3/4-oz) condensed cream of chicken soup, undiluted

1 cup (8-oz) reduced-fat sour cream

1/4 cup butter, melted

1 tsp onion powder

1 tsp garlic powder

1 pkg (32-oz) frozen Tater Tots

1 cup shredded cheddar cheese

3/4 cup crumbled crisp-fried bacon

Preheat oven to 350 degrees.

In a large mixing bowl, combine the evaporated milk, soup, sour cream, butter, onion powder, and garlic powder until blended. Gently fold in the Tater Tots. Spray a 13x9x2-inch baking dish with nonstick cooking spray and pour the mixture into the pan. Sprinkle the top with the cheese and bacon (reserve bacon and add during last 5 minutes of cooking, if desired). Bake, uncovered, at 350 degrees for 30 to 35 minutes or until bubbly and heated all through.

Cooking Vegetarian Family Meals

Every family can benefit from increasing the amount of fruit and vegetables in their diet. Even if you are not vegetarians, consider cooking a couple of "meat free" meals each week. People who follow a vegetarian diet tend to have lower cholesterol, stronger immune systems and are more likely to maintain a healthy body weight.

Here are some tips to help you make the switch:

Start with a "family favourite" recipe, such as lasagna or bolognese, and modify the recipe for a meat free version. Remember, you don´t have to make the meal solely from vegetables. Use one of the many soya-based meat equivalents.
If you find the thought of cooking a vegetarian meal from scratch a little daunting, buy a couple of supermarket ready meals first. Most stores offer a great choice of dishes and it should be easy to find one that appeals to the family´s taste.
Buy a cheap vegetarian cookbook or download recipe ideas from the internet. There is a wealth of information out there, so there are no excuses for serving limp salads!
When eating out, try to switch to a vegetarian option. Even the fast food chains offer vegeburgers and bean burritos, so making the switch is easy. Just make sure that you go easy on the side orders. French Fries might be made of potato but they are still loaded with fat!
If you find the taste of some vegetarian meals a little bland, use herbs, spices and seasoning to add taste and flavor.
Think of all the recipes that your family enjoys and eats anyway. Chances are that there are quite a few vegetarian meals in the list! Tomato soup, bean salad, coleslaw, macaroni cheese..it should be easy to put together a vegetarian menu a couple of times a week.
Go easy on the higher fat foods such as cheese. It is still possible to gain weight on a vegetarian diet if you eat the wrong foods in large portion sizes. Remember to check that any cheese you buy is vegetarian, as some cheeses are made from animal rennet.
Increase your consumption of beans and pulses in tasty stews and casseroles. Legumes are a good source of protein.
If you don´t think you can miss meat out of your recipes altogether, try giving up red meat instead. Switch to chicken or turkey mince in pasta sauces and burgers, as the fat content is considerable lower.
Most cooking styles will have a wealth of vegetarian options available, meaning you can have an extensive and varied repertoire of family meals. Italian pasta sauces, stir fry recipes, mexican food, curries.. the choice is endless.
Many vegetarian dishes can be easily cooked in your slow cooker. Vegetable stew, Winter Vegetable Casseroles, soups and curries. Save time, effort AND calories with these healthy choices.

Try making the switch and see if your family can tell the difference. The first time I made lasagna to the usual recipe, but with soya mince, no-one around the table even noticed. And if your family enjoys the meals so much that you decide to make a lifestyle change, remember that you will have to start checking the ingredients on every food item that you buy. Read the nutritional labels of every product carefully, as animal products do turn up in the strangest places!

Family Meals For Under $5 - Cheesy Potato and Ham Casserole

"Weekly grocery circulars often read "feed a family of 4 for under $10!". I'm sure most of you have laughed at this as I did. As a result, I began to wonder what does dinner really cost for my family of 8? So I set a challenge for myself and I figured if I kept it under $5, I was doing good..."

I came up with this recipe one night when I was desperately trying to figure out what to make for dinner out of what I had in my house - ever been there? So instead of running to the store, I adapted a recipe I had for scalloped potatoes and ham with what I had and what my family likes. Here is the result.

Cheesy Potato and Ham Casserole

2c diced turkey ham - 1.42 lb for Festive brand @ Wal-Mart = .94
1 10.5 oz can cream of mushroom soup = .50
8 potatoes, scrubbed and diced - .07 ea = .56
2 green onions, sliced - 39c pkg - .03ea = .06
½ c powdered cheese sauce from Provident Pantry = .88
Mixed w/ 1c warm water to make 1 c sauce

Mix soup and sauce in a 13 x 9 dish. Add potatoes, ham and onions. Stir to mix well. Cover with foil and bake in a 350 oven for 1 hr.

Serve with tossed green salad and steamed carrots

Tossed Green Salad

½ head Romaine lettuce = .75
1 carrot grated = .09
1 sm tomato on the vine @ .96 lb = .25

Steamed Carrots

10 carrots scrubbed and sliced = .90
Steam until tender

Total = $4.93

Alternative Options

I realize many who read this may not have powdered cheese sauce or know what it is. Think of it as the cheese sauce that comes in a box of cheap macaroni and cheese. I buy it in a #10 can to have in my food storage since my family LOVES cheese. More about food storage in later posts.

I've included a couple of alternatives to this, along with their prices and subsequent totals.

1 10.5 can cheddar cheese soup = $1.39
If you choose this option omit the steamed carrots to keep your total under $5
Option 2 Total = $4.54

2. 2 c grated cheddar cheese - $3.78 2lb loaf on sale - .34c = .68
¼ c milk = .03
Option 3 Total = $4.76

Pizza Casserole With Three Cheeses, a Dish Family, Friends, and Surprise Guests Will Love

Holidays are a time to visit with family, friends, and unexpected guests. These visits are fun for everyone, a time to catch up on news and make plans for the future. While making plans is easy, making dinner can be hard. Can you make a meal that young kids, teens, parents, and grandparents will enjoy? Yes, and it is Pizza Casserole, a blend of healthy pasta, lean ground beef, pizza sauce, and three kinds of cheese.

Cook the pasta the day before to save preparation time. Drain the pasta in a colander, put it in a zipper plastic bag, and coat elbows with a little olive oil to prevent clumping. This recipe calls for Ronzoni Smart Taste pasta (name trade marked), a new product with added fiber and calcium. It also calls or a specific brand of pizza sauce, but you may substitute another brand if you wish.

Cream cheese is the surprise ingredient and it adds richness to the dish. If the casserole has been refrigerated for a long time take it out of the refrigerator a half hour before baking and uncover it. Oven temperatures vary and you may have to bake the casserole a bit longer than stated. Remove the casserole from the oven when the sauce bubbles and the cheese starts to brown. Here is the recipe for Pizza Casserole with Three Cheeses, a holiday dish that may become a family favorite all year long.

INGREDIENTS

Half a 14.5-ounce box of Ronzoni Smart Taste elbow pasta

1 large onion, finely chopped

1 tablespoon extra light olive oil

1 teaspoon butter

1 1/4 pounds 93% lean ground beef (or 96% lean)

2 15-ounce cans De Fratelli all natural pizza sauce

1 1/2 cups 2% cottage cheese

8 ounce carton low-fat cream cheese, room temperature

2 cups reduced fat mozzarella cheese, shredded

1/2 teaspoon oregano leaves

METHOD

Cook pasta in boiling water, drain, and transfer to a large bowl. Put olive oil and butter in skillet. As soon as the butter has melted add chopped onions to the skillet and cook until soft. Add onions to pasta. Brown beef in skillet, breaking it into small pieces as it cooks. Combine cooked beef with onions, pasta, and pizza sauce.

In a small bowl combine cottage cheese and cream cheese. (Make sure there are no lumps of cream cheese.) Coat a 9 1/2" x 13 1/2" glass baking dish with cooking spray. Layer half of the meat mixture in the dish. Spread cheese mixture over meat layer. Top with remaining meat mixture. Spread mozzarella cheese over casserole and sprinkle with oregano. Bake in a 350 degree oven for 30 minutes. Serve Pizza Casserole with a a green salad, garlic toast, and fresh fruit for dessert. Makes 10-12 servings.

Beef and Eggplant Casserole Family Dinner Recipe

During the mid to late summer, our eggplant from our garden comes into season. One of our favorite eggplant recipes is this easy to make casserole dish with the addition of lean ground beef.

This recipe does take some time to make, so I would recommend it for a weekend dinner, however, your efforts to make it will be rewarded as it is very delicious.

Beef and Eggplant Casserole

2 tablespoons butter, softened
1/3 cup onion, finely chopped
1 clove garlic, minced
3 cans (8 ounce) tomato sauce
1 1/2 lbs. lean ground beef
2 teaspoons oregano
1 teaspoon basil
1/2 teaspoon parsley
1/8 teaspoon anise seed
1 eggplant (about 1 1/4 pounds in size)
2 eggs, slightly beaten
1/2 cup seasoned dried bread crumbs
1 cup grated Parmesan cheese
2/3 cup vegetable oil
1-2 packages Mozzarella cheese, sliced

In a large skillet, melt the butter and then saute the onions, garlic and ground beef until the beef is no longer pink. Stir in the tomato sauce, oregano, basil, parsley and anise seed, mix well. Simmer the mixture for 7 minutes over low heat, then set aside.

Preheat oven to 350 degrees. Lightly spray a 9 x 13" baking dish with nonstick vegetable spray. Wash eggplant and slice down to 1/4" thick pieces.

Combine eggs and 1 tablespoon water in a medium-sized bowl, mix well. In a large pie plate, combine the bread crumbs and a 1/2 cup of grated Parmesan cheese. Dip the eggplant slices in egg mixture and then into the bread crumbs mixture, until they are coated in crumbs.

In a frying pan with a little bit of vegetable oil, saute the eggplant slices until they are golden brown on both sides, drain on paper towels.

Place a single layer of eggplant in the bottom of your baking dish. Sprinkle with some of the remaining Parmesan cheese, top with a few slices of Mozzarella cheese and then cover with some of the sauce. Repeat layering until all ingredients are used, making sure to cover the top with Mozzarella cheese.

Bake in a preheated oven for 25 minutes or until the cheese is melted and bubbly. Makes 4-6 servings.

Ground Meat Recipes My Family Loves

I am a ground meat lover. I love hamburgers, meatloaves and more. I do rotate between ground beef and ground turkey when I cook as my daughter prefers the poultry over the beef.

While I love to cook, I also like to prepare dinner in under an hour, eat and then have the rest of the evening to do the things I want to do.

I'd like to share three ground meat recipes with you, all that my family loves.

I remember having meatloaf as a child. It was one of my least favorite meals. Then about a year ago, my dad was in the hospital and the cafeteria served a turkey meatloaf. It was excellent. I knew I wanted to try and make this at home. What I ended up with was a Parmesan meatloaf that we loved. I do use ground turkey to make this, so it does come out very soft. Here is the ingredient list:

1/2 cup spaghetti sauce
1 pound ground turkey
1/2 cup bread crumbs
1/2 cup Parmesan cheese
1/4 cup chopped onion
1 egg, beaten

Set aside 1/4 cup sauce and 1/4 cup cheese. Mix remaining ingredients together and form into loaf. Place into loaf pan and cover with remaining sauce and cheese. Bake at 375 degrees for 45 minutes.

I make this in just 10 minutes, then bake it for the 45 minutes. This dish is ready in under one hour.

We make our own quick and easy sloppy joes. My kids like ground beef mixed with barbeque sauce and served on a roll. I crumble the meat into a skillet and slow cook the beef. After draining the beef I add the barbeque sauce and simmer for ten minutes. When I make this for myself, I chop up some onion and garlic and saute that right in. We toast the buns, serve with a salad and this is a very quick and easy meal.

I happen to love Mexican food. We make a taco casserole that is very quick to prepare and quite tasty. Here's a list of the ingredients needed:

1 pound ground meat
1 cup Monterey jack cheese, shredded
1 cup Colby cheese, shredded
2 cups crushed tortilla chips
1 cup prepared salsa
1/2 cup mayonnaise
2 teaspoon chili powder
1 tomato, chopped
1 small can sliced black olives
2 cups shredded lettuce
1/2 avocado, sliced

Brown and drain ground meat. Add in the mayo, salsa, and chili powder. Mix well. Pour half the meat into a casserole dish. Place one cup of the chips on top and half of the two cheeses. Repeat these layers and bake for 20 minutes at 350 degrees. Cut into portions. Once on plate, add lettuce, tomato, olives and avocado on top.

We buy the multi packs of ground turkey at Costco. I'm a happy camper to have at least a few meals a week with ground beef/turkey.
