Easy Mexican Recipes - Tater Taco Casserole

2 pounds ground beef

1/4 cup onion, chopped

1 (1.25 oz.) pkg. Taco seasoning

2/3 cup water

1 (11 oz.) can whole kernel corn, drained

1 (10.75 oz.) can condensed nacho cheese soup, undiluted

1 (32 oz.) pkg. Tater tots

Directions

Preheat oven to 350 degrees. Prepare a 13x9x2-inch baking dish with nonstick cooking spray.

In a skillet, cook the beef and onion over medium heat until the meat is brown; drain. Stir in the taco seasoning and water. Simmer uncovered for 5 minutes. Add in the corn and soup; mix well.

Spread beef composition inside of ready baking dish. Arrange the tater tots in a singular layer over the top of beef mixture. Bake, uncovered for 30 to 35 minutes or until potatoes are crisp and golden brown.

Green Chili and Cheese Casserole

Whip up this tasty Mexican recipe using just four easy ingredients.

4 boneless, skinless chicken breasts

1-1/2 cups shredded pepper jack cheese

1 (4oz.) can diced green chili peppers, drained

1 tablespoon dry fajita seasoning

Directions

Preheat oven to 350 degrees. Prepare a 9-inch quadrate baking dish with nonstick cooking spray.

Make a deep cut into the side of each chicken breast half to form a pocket.

4 slices bread

4 slices Cheddar or Monterey Jack cheese

1 (4 oz.) can chopped green chilies, drained

2 tablespoons butter or margarine, softened

Directions

Top two slices of bread with two slices of cheese. Sprinkle green chilies on top. Place the remaining bread slices on top. Butter the exterior of the sandwiches.

In a large skillet, cook the sandwiches over medium heat. Cook on both sides until golden brown and the cheese is melted.

Hamburger Casserole Recipes - Mexican Hamburger Casserole

1 pound ground beef

1 onion, chopped

1 stalk celery, chopped

8 ounces egg noodles

1 (15 oz.) can chili

Directions

Preheat oven to 250 degrees.

In a large skillet, sauté the ground beef, onion and celery over medium heat for 10 minutes, or until the meat is wholly brown. Drain the fat out of the pan and set aside.

In other saucepan, cook the noodles agreeing to package directions. Drain water out of the noodles and stir in the meat mixture, chili, tomatoes, corn, taco sauce and the taco seasoning mix; mix well.

Spread a small estimate of the sauce aggregate in the bottom of a 9x13-inch baking dish. Alternate layers of potatoes, onions, ground beef, cheese and sauce, with 2 to 3 layers of each. Cheese should be last layer.

Bake for 45 to 55 minutes or until the potatoes are tender.

Enchilada is the traditional Mexican dish meaning 'seasoned with chilies'. It is simply dried red chili peppers soaked and ground into sauce flavored with some seasonings. The dish is very simple. It is a family staple. This Mexican invaded the American food market in the mid sixties and since then it has experienced soaring popularity. Many kinds of enchiladas are made depending on the ingredients. The red enchilada sauce is tomato based with red chilies and the green enchilada is made of tomatoes and green chilies. Mole may be used in the preparation too.
A typical enchilada may be made with corn tortilla. Fry tortilla in oil to soften it and dip it in your favorite enchilada sauce. Fill tortillas with chicken, meat or cheese fillings or vegetables, seafood, eggs, banana or even potato with white cheese and roll it, then place it in a casserole. Layer it with sauce, cheese and chopped onions. Fried eggs or salted cooked meat strips will add special touch to the side dish.
Follow the simple steps to preparing an Enchilada:
• Pre-heat the oven at 350 degree F.
• Add oil and cook a tortilla for 2-3 seconds in a heated large pan. Lift it and add another tortilla under it. Cook for 2-3 seconds. This way brown and soften the tortillas.
• Saute up onion and garlic and then turn off the heat. Add 1 cup salsa, 3 tablespoon tomato paste in 1 cup of water, crushed fire roasted canned tomatoes and prepare the sauce a bit sweet and not vinegary.
• Grease a casserole. Take the tortillas and cover it two third with shredded cheese. Roll it and place in the casserole. Cover the tortillas with sauce and the grated cheese. Put the casserole in the oven for 10 minutes till cheese melts.
It is basically tortillas stuffed with various fillings. This term is a Spanish-American name, which first came into print in 1885 and later in 1949 given the credit to be a Mexican dish for tourists. Now it is a staple for Mexican-American restaurants.
It is easy and simple to prepare. Heat oil, add onion and garlic to cook till tender. Stir some flour and mix till it is smooth. Add chicken broth, water and enchilada sauce. Cook till smooth. Stir in chilli powder and salt, cook over medium heat. Keep stirring till thick and add cheese with chicken and olives.
Dip the corn tortillas in prepared sauce for 5 seconds. Spread 3 tablespoons chicken filling in the center. Roll up and keep in a shallow dish. Pour remaining sauce over tortillas. Bake at 350 degree F for 15 minutes. Sprinkle with cheese and bake for further 10 minutes. Garnish with sliced ripe olives and serve immediately. The artistic and cooling garnish of lettuce beholds an enchilada.

Mexican Casserole Recipe - Easy Mexican Casserole

You can spice up this recipe a little more by adding taco seasoning to the ground beef before you cook it.

1 pound lean ground beef

Meat Casseroles

2 cups salsa

1 (16 oz.) can chile beans, drained

3 cups tortilla chips, crushed

2 cups sour cream

1 (2 oz.) can sliced black olives, drained

1/2 cup green onion, chopped

1/2 cup fresh tomato, chopped

2 cups shredded Cheddar cheese

Directions

Preheat oven to 350 degrees. Prepare a 9x13-inch baking dish with nonstick cooking spray.

In a large skillet, cook the ground beef over medium high heat until brown. Stir in the salsa, reduce heat and simmer for 20 minutes, or until all the liquid is absorbed. Stir in the beans and heat thoroughly.

Spread the crushed tortilla chips into the bottom of the baking dish. Spoon the beef mixture over the chips. Spread the sour cream on top of the beef mixture. Sprinkle on the olives, green onion and tomato. Top with the cheddar cheese.

Bake for 30 minutes or until hot and bubbly.

Quick and Creamy Mexican Casserole

This creamy casserole features two kinds of soup, chili peppers, salsa and sour cream.

1 (10.75 oz.) can condensed cream of mushroom soup

1 (10.75 oz.) can condensed cream of chicken soup

1 (4 oz.) can chopped green chile peppers, drained

1-1/2 cups prepared salsa

1/4 cup milk

2/3 cup sour cream

8 (6-inch) flour tortillas

6 boneless chicken breast halves, cooked and cubed

2 cups shredded Cheddar cheese

Directions

Preheat oven to 350 degrees. Lightly grease a 9x13-inch baking dish.

In a medium bowl, combine the mushroom soup, chicken soup, chile peppers, salsa, milk and sour cream; mix until well blended. Place a layer of tortilla strips in the bottom of the prepared baking dish.

Layer in the following order: 1/2 of the soup mixture, 1/2 of the chicken, 1/2 of the shredded cheese. Repeat layers until you use up all of the ingredients. End with a layer of shredded cheese.

Bake for 45 minutes, covered, then remove the cover and bake for an additional 15 minutes.

Chicken Cornbread Bake

Two great flavor sensations come together in this casserole - chicken and cornbread.

1/2 cup margarine

1 onion, finely chopped

1 clove garlic, minced

1 (15.25 oz.) can whole kernel corn, drained

1 (15 oz.) can cream style corn

1 can cream of chicken soup

1/4 teaspoon salt

2 eggs

1 (8.5 oz.) pkg. corn bread mix

2-1/3 cups cooked chicken breast, chopped

2 tablespoons canned green chili peppers, chopped

1 (4 oz.) jar chopped mushrooms, drained

1/2 cup light sour cream

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1 (8 oz.) pkg. Monterey Jack cheese, shredded

Directions

Preheat oven to 375 degrees. Grease a 9x13-inch baking dish.

Melt the margarine in a small skillet over medium high heat. Saute the onion and garlic until tender for 4 to 6 minutes; set aside.

In a large bowl, combine the corn, cream style corn, chicken soup, salt and the eggs.

Beat in the muffin mix. Fold in the cooked onion mixture. Pour into the prepared baking dish.

In another large bowl, combine the chicken, green chilies, mushrooms, sour cream, salt and pepper. Spoon chicken mixture over the corn mixture to within 1-inch from the edge. Sprinkle the top with cheese.

Bake for 35 to 40 minutes or until the edges are golden brown.

Easy To Prepare Mexican Dinner Casserole Recipes

If preparation time is an issue for you, you can prepare them up ahead of time in the morning and refrigerate. Once dinner time arrives, remove them from the refrigerator and let stand at room temperature for 10 minutes before placing them into the oven. If you have any left-overs you will need to refrigerate them in an airtight container for up to 3 days. These dishes do not freeze well, so please don't freeze your leftovers.

Meat Casseroles

Mexican Enchilada Casserole Recipe

1 lb. ground beef

1 (16 ounce) can refried beans

1 (15 ounce) can tomato sauce

1/2 cup water

1 envelope of enchilada sauce mix (purchase it near where the taco seasoning is sold)

8 (8" round) flour tortillas

2 cups cheddar cheese, shredded

1 container sour cream

Preheat oven to 350 degrees. In a large frying pan, simmer the ground beef until it is no longer pink and it's brown. Drain off any excess grease. Stir in the refried beans, tomato sauce, water and the envelope of enchilada sauce mix, bringing the mixture to a boil. Reduce heat and simmer uncovered for 20 minutes.

Arrange half of the flour tortillas on the bottom of a 3 quart casserole dish or an oblong baking pan, overlapping them as you go along. Top with half of the ground beef mixture and half of the shredded cheddar cheese. Repeat with the remaining floured tortillas and remaining ground beef mixture.

Bake in a preheated 350 degree oven for 25 minutes. Remove and sprinkle the remaining shredded cheddar cheese on top and place back into the oven for an additional 10 minutes. Remove from oven and place a few dollops of sour cream on top before serving. This recipe will make 8 hearty servings.

Cheesy Taco Casserole Recipe

1 1/2 lbs. lean ground beef

1 package of taco seasoning

12 oz. pkg. of shredded Cheddar Cheese

1 can of Cream of Mushroom Soup

1 bag tortilla chips

(optional) Your choice of salsa

Brown the ground beef and drain. Add in the taco seasoning according to package directions and simmer until its done. Add in the cream of mushroom soup, do not add water and simmer for an additional 1 to 2 minutes.

In a large casserole dish, spray non-stick spray. Place a layer of tortilla chips, layer of meat mixture, then cheese, continue till full and top with cheese. Bake at 350 degrees for about 20-25 minutes. Remove from oven and serve with optional salsa on top. This recipe will make 6 hearty servings.

Mexican Noodle Casserole

Looking for something new and exciting to make for dinner? Why not try a Mexican noodle casserole? Full of savory heat and cheese, this dish is simple to make and offers a great way to use leftover turkey. Turkey was one of the native birds of Mexico and has been on the Mexican menu for hundreds of years. If you thought that turkey didn't fit with Mexican cuisine, you can take this as your new lesson for the day. If you don't have turkey, you can easily substitute chicken.

Sopa Seca uses toasted pasta to lend a unique texture to the casserole. The flavor of this casserole is intense and delicious. You can also substitute rice for the pasta for a little different texture. You can also make this without meat if you prefer it to be a side dish. Sopa Seca is a traditional Mexican comfort food. You can always pick up some authentic Mexican cotija cheese to use instead of cheddar if you wish.

This cheesy casserole is full of flavor.

What You Need

1/4 cup oil, plus a little extra for the pan 12 ounces bundled vermicelli pasta 1 medium onion, chopped 3 cloves garlic, minced 1 teaspoon dried oregano, Mexican if you can get it 1 teaspoon chili powder 1 bay leaf 1-1/2 cups canned whole tomatoes 1 to 2 chipotles en adobo sauce, minced 1-1/2 cups chicken broth 1 teaspoon salt Freshly ground black pepper 2 cups smoked turkey, shredded 1 cup cheddar cheese, coarsely grated Sour cream thinned with a small amount of milk (optional)

How to Make It

Preheat your oven to 375 degrees F.

Apply a thin coat of oil in a 9 inch square baking dish. Heat the rest of the oil in a large skillet over medium heat on the stove. Add the pasta and let them cook. Turn them with tongs as needed until they are golden brown on all sides. This takes about 5 minutes. Remove the pasta bundles and any extra pieces to a plate.

Add onion to the skillet and let it cook until golden brown, stirring occasionally. Add the garlic, oregano, chili powder, and bay leaf, cooking until they become fragrant (about 30 seconds). Using your hands, crush the tomatoes over the pot and let the juices join the tomato pieces in the pot. Add the chipotles. Raise the heat to high and let this mixture cook until thick, about 2 minutes. Add the broth, toasted pasta, salt and pepper. Bring the mixture to a boil. Lower the heat and let it simmer gently without a cover. Break up the pasta with a spoon. Let cook about 5 minutes, and then add the turkey.

Remove the bay leaf. Move the mixture to your baking dish. Sprinkle the cheese generously over the top and loosely cover the dish with foil. Let the casserole bake until the cheese melts and everything is hot throughout; about 20 minutes. If you wish, serve with thinned sour cream drizzled over the top.

Mexican Style Country Fried Steak Recipe

What You Need

1 cup whole milk 1 large egg 1 1.25 ounce packet chili seasoning mix Salt and pepper to taste 1 cup all purpose flour 1/3 cup vegetable oil 1 1/2 pounds sirloin steak, cubed 1 10 ounce can diced tomatoes, un-drained 1 10 ounce can green chilies, drained 2/3 cup whipping cream

How to Make It

Preheat the oven to the lowest setting.

Combine the milk and egg together with a whisk in a medium sized mixing bowl.

In a shallow mixing bowl combine the chili seasoning mix with the flour along with salt and pepper to taste and stir well.

Heat the vegetable oil in a frying pan over medium heat.

Dip the pieces of steak first in the egg mixture then in the flour mixture shaking lightly to remove any excess.

Fry the pieces of steak over medium to high heat for about 5 minutes per side or until they are a deep golden brown color.

Place the cooked pieces of steak on a baking sheet and place in the oven to keep warm while preparing the sauce.

In the same frying pan, add the un-drained can of diced tomatoes, the drained can of green chilies and saute for about 2 minutes stirring often.

Add in the whipping cream with a whisk and heat everything to a boil while whisking continuously. Reduce the heat to low and simmer the sauce for 10 minutes.

Remove the pieces of steak from the oven, transfer to plates, and pour the hot sauce on top. Serve immediately with salad or warmed tortillas.

Preheat oven to 250 degrees.

In another saucepan, cook the noodles according to package directions. Drain water out of the noodles and stir in the meat mixture, chili, tomatoes, corn, taco sauce and the taco seasoning mix; mix well.

How to Make It

Mix taco seasoning into the ground beef.

Using a large size frying pan brown the meat evenly, reduce heat and then drain the grease. Try to remove as much grease as possible by removing meat from the pan and placing on paper towels or even old yet clean newspapers to soak up the grease.

Return cooked meat to the frying pan and then add water, tomato sauce, and corn. Stir until thoroughly mixed and then allow it to simmer.

Using a medium size saucepan set on medium high heat add the oil. Add the onion and cook approximately 20 to 30 minutes, reduce heat after onion begins to cook. Stirring frequently until the onion is golden brown in color.

Add garlic and bell peppers. Saute for approximately 4 to 5 minutes while stirring constantly to prevent burning. Add this mixture to the saucepan with the meat, stir, and then allow it to simmer.

Preheat your oven to 400 degrees Fahrenheit.

While simmering the meat, you will prepare the batter of one moist Mexican cornbread recipe. Directions

Preheat oven to 325 degrees. Prepare a medium sized casserole dish with nonstick cooking spray.

Place half of the tortillas on the bottom of the prepared casserole dish. Layer on half of the onion, cheese, ground beef and chilies.

1 pound boneless pork, cut into 3/4-inch cubes

1/2 cup onion, chopped

1/4 cup green pepper, chopped

1/2 teaspoon dried oregano

1/2 teaspoon salt

5 teaspoons cold water

1 (16 oz.) can refried beans

10 (6-inch) flour tortillas, warmed

Directions

In a skillet, brown pork in oil over medium high heat; drain.

Add the next 10 ingredients; bring to a boil. Reduce the heat and cover. Simmer for 1 hour or until the pork is tender.

In a small bowl, combine the cornstarch and the cold water until smooth; add to pork mixture, stirring constantly. Bring to a boil; boil and stir for 2 minutes.

Meanwhile, heat the refried beans; spread beans evenly on the tortillas. Spoon the pork mixture down the center of tortillas; fold in the sides.

1/4 cup vegetable oil

3 pound beef chuck roast, cut into 3/4-inch cubes

2 onions, chopped

2 cloves garlic, minced

1 (28 oz.) can roma tomatoes, with juice

2 (4 oz.) cans chopped green chili peppers, drained

1 (12 oz.) can or bottle beer

1 cup beef broth

2 teaspoons dried oregano, crushed

1-1/2 teaspoons ground cumin

2 tablespoons Worcestershire sauce

Salt to taste

Ground black pepper to taste

Directions

In a Dutch oven, heat oil over medium heat until hot, but not smoking.

Pat the meat dry with paper towels and brown in batches, transferring the meat with a slotted spoon to a bowl as they are done.

In the fat remaining in the pot, cook the onions until softened, about 5 minutes. Stir in the garlic and cook for 1 minute more.

Return the meat to the pot with any juices in the bowl and add the tomatoes with juice, chilies, beer, beef broth, oregano, cumin and Worcestershire sauce. Season with salt and pepper to taste.

Bring to a boil and reduce heat. Simmer, partially covered, for 2-1/2 hours or until the meat is tender.
