There are several different foods from the Italian culture that are worth noting, but it is the Italian sausage that seems to come to mind so many times. This meat is absolutely delightful, and it is a meat that has a place in many great dishes not only back in the mother land but in North America too. This meat is available just about anywhere today, and there are various forms of the sausage that you can purchase in most grocery stores let alone the butcher shops. Finding the type of sausage that pleases you is really not difficult, you are just going to have to try as many as you can.
Excellent For Sauces
When it comes to Italian pasta sauce, you are obviously going to find some meat that will be added. One such meat that graces a wonderful sauce is the Italian sausage. This meat can be spicy and it is very easy to cut, making it a great meat to work with and an excellent choice. With mild, medium, and hot on the menu you are not going to struggle to find a decent meat for your sauce. These sausages can be cut into small disks or even chunks that are great to stew within a pasta or tomato sauce for hours at a time. Usually the meat is not cooked prior, as it is going to stew for a great number of hours within the broth. This will not only instill the sauce within the meat, it will bring out the great flavors of the meat into the sauce.
Finding The Right Sausage
It is not difficult today to find good Italian sausage, and depending on how much you are looking for and what variety you should have no troubles at all locating it. Most grocery and specialty stores carry this sausage today, and if you are fortunate enough to have an Italian butcher shop near your home you can find it there. This is not to say that you cannot find it elsewhere, it is simply to imply that there are great chances of finding this sausage at the fore mentioned locations first. Most deli's whether they are Italian or not, will usually carry this sausage as it very popular. Many sub shops and sandwich shops will carry it now as well, as they usually have a hot Italian sub on the menu.
Other Uses
Italian sausage is not solely reserved for Italian food today, as you will find many restaurants and sandwich shops all having this meat on their roster of fine foods. The sausage is relatively cheap, and you can bet that there are more than a few people that eat in these locations that consider it a favorite. This meat is easy to prepare, and you have almost endless options when it comes to its uses. Soups and stews are always popular with this meat in them, as too are great casseroles and bakes foods.

Everyone agrees that eating less meat is healthier -- for you, for your pocketbook, for the planet. But I've tried to adopt vegetarianism and found it doesn't work for me. I never really feel good on a 100% vegetarian diet.
I believe that each body is different, and that some people simply need meat protein. So how do you balance that need with your desire for a healthier lifestyle?
One excellent answer is centuries old -- vegetarian Italian cuisine! Since Roman times, Italian food has mainly focused on eggs, cheese, bread, olives and fresh seasonal vegetables. The Romans reserved meat and fish for special occasions.
As time went on, however, meat-eating became a privilege of the wealthy. Country folk continued to grow their own food, and usually raised cattle as a source of milk and cheese, not meat.
In the 1980s, Italy gave birth to the international Slow Food movement, which strives to preserve traditional and regional cuisine, and promotes farming methods in line with the local ecosystem.
These things, and more, have contributed to a culinary tradition rich in meatless options.
So why not go beyond pizza and pasta, and try one unusual vegetarian Italian dish this week? Here are a few suggestions to get you started:
Polenta
A strange but yummy cornmeal porridge that's easy to make. A cousin to American grits, polenta is a staple in northern Italy and makes a satisfying winter meal. You can find it in most grocery stores, with directions on the package.
A soft mound of polenta can be the base for cooked greens, sauteed portabello mushrooms or any vegetable. It can also be baked in a loaf pan, then thinly sliced. Sliced polenta can replace bread or lasagna as a base for almost any filling, including pesto, mozzarella, tomato sauce and roasted peppers.
Risotto
A delicious creamy rice dish that can be enhanced with almost any vegetable. It must be made from Arborio rice, which can be found in most grocery stores. Risotto has a reputation for being tricky, but the new oven-baked and crockpot methods are almost effortless. Favorite vegetarian additions include asparagus, mushrooms and artichoke hearts (frozen work fine). Butter and freshly-grated parmesan cheese add flavor and texture.
Toward a More Creative Cuisine
My purpose is not to convert you to vegetarianism, but to inspire you to eat more creatively. I do recommend eating bread, butter and cheese in moderation, and as close to homemade as you can find. Avoid low-fat versions. Try fresh mozzarella, the type that comes in water. Frequent artisan bakeries and farmers' markets. Eat vegetables in season, not those flown in from the opposite hemisphere.
When you concentrate on fresh, whole, local ingredients, you'll discover that your cravings for fat and sugar decline. Centuries of eating this way can't be wrong!

Why Fish
Fish is one of the best ways to get in your daily protein without worrying about fat. Fish is extremely lean. Fish is also the one meat that many people do not like to cook as they never know how to prepare it right. You will have the option to boil, bake, or lean fry the fish of your choice. No matter how you choose to cook it, the herbs will be the way to your heart and taste buds. Depending on what type of fish you plan to serve, you can find hundreds of favorite Italian recipes online to help you get the right flavor. For Chicken Lovers
For those who are looking for something leaner than red meat, but are not fond of fish, chicken is the best option. When it comes to using Italian meats, you will find that chicken is used quite a bit. There are many traditional meals prepared with chicken as well as new Italian dishes that are made healthier by substituting beef for poultry. To find the best poultry dressings and recipes it is best to look in an Italian cookbook where you can see how each piece is prepared and what spices you may need. Some herbs used in chicken recipes need to be fresh and if you plan to use dried you may need to find the equivalent amount before using.

So, you haven't tasted giardiniera yet? Well, that's ok because millions of people haven't, but then again, millions have and they are singing the praises of this unique Italian style condiment. Here are five unique uses for mild or hot giardiniera that are sure to liven up your meals...
Introduction To Hot Giardiniera
Giardiniera is an Italian term that loosely translated means "from the garden", and a garden is what you'll find when you open a jar of this delicious garnish. Although styles and recipes of giardiniera differ, most include a banquet of hot or mild peppers, carrots, celery, pitted olives, and even cauliflower.
Both hot and mild varieties are available. Don't let the term "hot" concern you though. While there's a definite kick to the hot style, the heat is not so overwhelming as to numb your taste buds.
Whether hot or mild, the product is packed in a jar along with healthy, shelf stable oil mixtures. There's no need to store it in your refrigerator. In fact, doing so will change the complexion of the oil and negatively affect the taste. We recommend storing giardiniera in a cabinet with your other spices and condiments.
Hot giardiniera is especially versatile and will add a zesty accent to just about any dish. In particular, use it to add a tasty kick to plain and simple meals or leftovers. Here are five unique uses you'll want to try...
Frozen Pizza
We are generally fans of good frozen pizzas, but let's face it, sometimes they are a little lacking. Before putting the pizza in the oven, spread two or three fork fulls on top and let it bake in. You've just added a whole new dimension to your pizza!
Pita Sandwiches
Pita sandwiches are all the rage because they are easy to handle and eat. Plus, the pocket keeps everything neat and clean. Mix in some hot giardiniera for a new twist. It particularly livens up tuna or chicken salad.
Meatloaf
Yes, meatloaf! While mixing the meat, include some hot giardiniera. You'll never hear meatloaf is boring again! The mixture bakes together and creates a whole new taste that is lively and vibrant.
Casseroles
Using the same concept, add your giardiniera along with all the other ingredients before placing in the oven to bake. The flavor accents perfectly with the slightly creamy texture of a tuna or chicken casserole.
Scrambled Eggs With A Kick
Switching to breakfast, this is one of our favorite uses. It's the perfect eye opener! Just mix it in while the eggs are cooking. We also love a fork full of hot giardiniera folded into an omelet or melded in to eggs prepared over hard.
Summary
The uses for hot giardiniera is only limited by your culinary imagination. If you normally use it only on Italian beef sandwiches, try it in one of our five suggestions and see what you think. If you've never tried hot giardiniera, come on in and join us! This traditional Italian style condiment will add a zesty accent to any meal.

If you are looking for a delicious meal for your whole family that is also budget friendly, lasagna is the way to go. Easy to make, filling, and economical, this popular Italian dish is popular with almost everyone that loves Italian food.
Origins
Lasagna is a type of casserole that layers meat, sauce, and cheese. There are numerous variations, including some with spinach and others with white sauce. It was originally known by another name, but over time came to be known as lasagna after the special type of pan used to bake it. Versions of lasagna can be found all around the world. The Greeks make Pastitsio, a type of lasagna that includes large tubular noodles, ground meat, feta cheese, and cinnamon. In Poland there is Lazanki, which uses flat lasagna noodles, cabbage, and bacon.
The following recipe is the more traditional form of lasagna that most people are familiar with, the southern style lasagna. This means that it uses a tomato sauce, mozzarella, and ricotta cheese as part of the recipe.
What You Will Need
In order to prepare your lasagna, you will need to gather a few ingredients if you do not have them at home already. You will want:
o An 8 ounce box of lasagna noodles
o A 15 ounce can of crushed tomatoes
o A 28 ounce jar of pasta sauce, preferably one with a bold flavor, though any flavor will work
o One pound of Italian sausage
o 15 ounces of ricotta cheese
o 8 ounces of shredded mozzarella cheese
o 1 teaspoon of Italian seasoning
o ¼ teaspoon of garlic powder
o ¾ cup of dry red wine such as burgundy or cabernet
Preparing The Lasagna
Before you get started, you will want to preheat the oven to 350 degrees Fahrenheit. Next you will need to prepare the noodles. Fill a large pot with water and bring to a boil. Once water is boiling add the noodles and cook for about eight minutes. The noodles should still be slightly firm. Drain on a paper towel and return to the pan. Coat with a little olive oil and allow to cool. To make the sauce you will want to brown the sausage in a large skillet.
Once browned, add in the pasta sauce, crushed tomato, seasoning and garlic powder. Reduce the heat to low and add the red wine. Continue to cook and stir for another 10 to 15 minutes.
Once your sauce is made, you will have to assemble the lasagna. You will need a 13 x 9 pan. Ladle a quarter of the sauce into the bottom of the pan. Layer noodles on top, side by side. Ladle on another quarter of the sauce, and then sprinkle with a third of the mozzarella and a third of the ricotta cheeses. Repeat these steps twice to form the different layers, ending with a ricotta topping. Bake in the preheated oven for 45 minutes. Allow to set 10 minutes before cutting to serve. If you prefer, the lasagna can be frozen for up to 3 months and reheated as desired.
