Easy Mexican Recipes - Tater Taco Casserole

Tired of boring old tater tots? Here's a unique way to use those bland tater tots.

2 pounds ground beef

Meat Casseroles

1/4 cup onion, chopped

1 (1.25 oz.) pkg. Taco seasoning

2/3 cup water

1 (11 oz.) can whole kernel corn, drained

1 (10.75 oz.) can condensed nacho cheese soup, undiluted

1 (32 oz.) pkg. Tater tots

Directions

Preheat oven to 350 degrees. Prepare a 13x9x2-inch baking dish with nonstick cooking spray.

In a skillet, cook the beef and onion over medium heat until the meat is brown; drain. Stir in the taco seasoning and water. Simmer uncovered for 5 minutes. Add in the corn and soup; mix well.

Spread beef composition inside of ready baking dish. Arrange the tater tots in a singular layer over the top of beef mixture. Bake, uncovered for 30 to 35 minutes or until potatoes are crisp and golden brown.

Green Chili and Cheese Casserole

Whip up this tasty Mexican recipe using just four easy ingredients.

4 boneless, skinless chicken breasts

1-1/2 cups shredded pepper jack cheese

1 (4oz.) can diced green chili peppers, drained

1 tablespoon dry fajita seasoning

Directions

Preheat oven to 350 degrees. Prepare a 9-inch quadrate baking dish with nonstick cooking spray.

Make a deep cut into the side of each chicken breast half to form a pocket.

Stuff 1/4 cup of cheese and about 1 tablespoon of the chilies onto each chicken half. Close and regain with a toothpick so that the cheese does not fly during cooking. Place the stuffed chicken into the baking dish.

Season the meat with the fajita seasoning. Sprinkle the remaining cheese and chilies over the top.

Bake uncovered for 30 minutes until the chicken juices run clear and the cheese is lightly browned.

Green Chili Grilled Cheese Sandwich

If you love grilled cheese sandwiches, try this spiced up version.

4 slices bread

4 slices Cheddar or Monterey Jack cheese

1 (4 oz.) can chopped green chilies, drained

2 tablespoons butter or margarine, softened

Directions

Top two slices of bread with two slices of cheese. Sprinkle green chilies on top. Place the remaining bread slices on top. Butter the exterior of the sandwiches.

In a large skillet, cook the sandwiches over medium heat. Cook on both sides until golden brown and the cheese is melted.

Old Fashion Casserole Recipes for Down Home Goodness!

Bring some old-fashion down home goodness to your family's dinner table with these casserole recipes. They are easy, economical, and make delicious house meals. The first formula in this description are for Old Fashion Corn and Beef Casserole which contains two house favorites, corn and ground beef. The second formula goes in a wholly separate way with Baked Ham and Beans. The third formula goes back to corn and ground beef but adds rice this time.

Old Fashion Corn-Beef dinner
2 green bell peppers, chopped
1 onion, chopped
2 tablespoons shortening
1 pound ground beef
salt and pepper to taste
2 eggs
2 cups corn, whole kernel
4 ripe tomatoes, sliced
1/2 cup dry bread crumbs
butter

Meat Casseroles

Saute the onion and bell pepper in the shortening for about 3 minutes. Add the ground meat, salt, and pepper and brown meat lightly. Take off from heat; stir in eggs and mix well. Butter a baking dish. Put 1 cup of the corn in the bottom of the buttered dish. Add half the meat mixture and top with half the tomato slices. Repeat layers using the other half of the ingredients. Top with the bread crumbs and dot with thin pats of butter. Bake at 350 degrees for about 45 minutes until lightly browned and heated through.

Baked Ham 'N Beans
This is a formula my mom got from a Hunt's Tomato Sauce advertisement when I was a child.

1/2 cup chopped onions
1 1/2 Tablesp. Wesson, pure vegetable oil
1/2 lb cooked and cubed ham
1 lb 14-oz can Pork and Beans
1 8-oz can Hunt' Tomato Sauce
1 Tablesp. Worcestershire sauce
1 teasp. Prepared mustard
2 Tablesp. Brown sugar

Saute onions and meat in Wesson oil until onions are golden. Mix in remaining ingredients. Pour into a baking dish and bake at 350 degrees, uncovered, for 30 to 45 minutes. Serves 4.

Seven Layer Casserole
1 cup rice, uncooked
1 cup corn, whole kernel
2 small cans tomato sauce
3/4 cup water (or liquid from the canned corn)
1/2 cup chopped onion
1/2 cup chopped green pepper*
1 lb ground beef
salt and pepper to your liking
4 strips bacon

Place the rice then the corn in layers in a greased 2-quart casserole dish. Pour one can of the tomato sauce over the corn with 1/2 cup of the water. Layer the onion then the green pepper, uncooked beef and seasonings. Add the second can of tomato sauce with the remaining 1/4 cup of water. Cut the bacon strips in half and lay over the top. Cover the casserole dish and place in the oven. Bake at 350 degrees for one hour. Uncover and bake 30 minutes more.

*This is a bell pepper.

For most of us, that is "comfort" enough. Colorful Chicken Rice Casserole is a type of Tex-Mex food which means a great blending of flavors. Chicken and Ham Casserole also makes use of rice and blends the flavors of two meats. Both will no doubt be big hits with your family.

Meat Casseroles

Colorful Chicken Rice Casserole

1 can (10 3/4 oz) condensed cream of mushroom soup, undiluted
1 cup sour cream
1/2 cup small-curd cottage cheese
1 pkg (3 oz) low-fat cream cheese, cubed
3 cups cubed cooked chicken
3 cups cooked brown rice
1 1/2 cups (6 oz) shredded Monterey Jack cheese
1 can (4 oz) chopped green chilies
1 can (2 1/4 oz) sliced ripe olives, drained
1/8 tsp garlic powder
1/2 to 3/4 cup crushed corn chips
2 cups shredded lettuce
2 medium tomatoes, chopped

In a blender or food processor, join the soup, sour cream, cottage cheese, and cream cheese; cover and process until smooth. Transfer to a large mixing bowl. Stir in the chicken, rice, cheese, chilies, olives, and garlic salt. Spray a 2-quart baking dish with nonstick cooking spray. Transfer composition into prepared dish. Bake, uncovered, for 25 to 30 minutes, or until bubbly, at 350 degrees. Take off from oven and just before serving, sprinkle top with corn chips, lettuce and tomatoes in that order.

Yield 6 to 8 servings.

Chicken And Ham Casserole

1 pkg (6 oz) long grain and wild rice mix
2 cups cubed cooked chicken
1 cup cubed fully cooked ham
1 can (10 3/4 oz) low-sodium cream of chicken soup, undiluted
1 can (12 oz) evaporated skim milk
1 cup shredded Colby or Cheddar cheese
1/8 tsp pepper
1/4 cup grated Parmesan cheese

Cook rice mix agreeing to box directions. Transfer to a greased 2-quart baking dish. Top with chicken and ham. In a bowl, join the soup, milk, cheese, and pepper; pour over chicken mixture. Sprinkle with the Parmesan. Bake, uncovered, at 350 degrees for 25 to 30 minutes or until bubbly.

Serves 6

Easy Crockpot Beef Recipes

Good crockpot beef recipes can help dress up a cheaper cut of meat. Slow cookers are not only convenient, but the slow cooking also helps tenderize the meat and really infuse it with flavor. Try these easy crockpot recipes for beef that both taste great and are quick to whip up.

Beef and Creamy Mushroom Crockpot Recipe

Ingredients You Will Need:

1 pound beef sirloin tips, trimmed and cubed

½ cup diced button mushrooms

1 cup green peas

1 can condensed cream of mushroom soup

¼ cup apple juice

¼ cup beef broth

½ teaspoon ground black pepper

½ teaspoon Italian seasoning

¼ teaspoon salt

Place beef, mushrooms and peas in a medium crockpot that is at least 2 quarts in size. In a small bowl, stir together soup, juice, broth, pepper, Italian seasoning and salt. Pour mixture into crockpot. Mix well. Cover crockpot with lid, and turn heat to low. Cook for 11 hours. Remove lid, stir well and serve.

Beef Stew Crockpot Recipe

Ingredients You Will Need:

2 tablespoons extra virgin olive oil

1 pound beef stew meat, cubed

1 cup diced red onion

1 cup chopped carrots

½ cup diced celery

1 10-ounce can condensed tomato soup

3 cups beef broth

2 tablespoons Worcestershire sauce

1 tablespoon minced garlic

½ teaspoon ground black pepper

½ teaspoon cornstarch

Place oil in a large skillet, and turn heat to medium. When oil is hot, add cubed beef to skillet. Brown beef for 3 minutes. Add onions to skillet, and cook beef and onions for 3 minutes. Make sure beef is cooked. Drain half of the fat out of the pan, and discard. Pour browned beef, onions and remaining drippings in a large crockpot, at least 3 quarts size.

Add carrots and celery to the crockpot. In a medium bowl, stir together the soup, broth, Worcestershire sauce, garlic, pepper and cornstarch. Pour mixture into crockpot. Mix well. Cover crockpot with lid, and turn heat to low. Cook for 10 to 12 hours. Remove lid, stir well and serve.

Crockpot Beef Curry Recipe

Ingredients You Will Need:

2 cups cauliflower florets

½ cup uncooked white rice

½ cup raisins

2 tablespoons all-purpose flour

1 tablespoon yellow curry powder

1 teaspoon minced garlic

¼ teaspoon ground black pepper

¼ teaspoon salt

1 pound beef stewing steak, cubed

1 cup beef broth

¼ cup water

Place cauliflower, rice and raisins in a medium crockpot, at least 2 quarts in size. Combine flour, curry, garlic, pepper and salt together in a large plastic bag. Place cubed meat in bag. Shake bag, and cover meat with mixture. Pour beef and remaining mixture into crockpot. Pour beef broth and water into crockpot. Mix well. Cover crockpot with lid, and turn heat to low. Cook for 10 hours. Remove lid, stir and serve.

Basic Slow Cooker Tips and Delectable Roast Beef Recipes

Slow cookers or crock pots are countertop electrical cooking appliances that speak a low climatic characteristic for several hours. This enables cooking stew or pot roast without the need to check on it from time to time.

Amateur cooks will find it very easy to handle and maintain. All you need to do is to fill it up, and then turn it on. After several hours, evening meal can be served. However, when using the slow cooker, there are some things you need to consider. It is best to get one that has a movable liner, manufacture it very easy to clean. If you already have one with a non-removable liner, you can just use a cooking bag; then, use cooking spray on the inner liner.

Stir in the composition to thicken and serve.

Roast Beef with Gravy

Ingredients are olive oil, 3 to 3 ½ pounds Boneless Rump Roast, 8 garlic slivers, salt and pepper. You will also need a meat thermometer. For the gravy, you will need some beef stock or red wine and corn starch.

Procedure:

One hour prior to cooking take off the roast from the refrigerator at put it in room temperature.

Using a sharp knife, you need to cut about eight small incisions colse to your roast. You will place one sliver of garlic on each incision. Place one tablespoon of olive oil colse to your roast and then sprinkle it with salt and pepper. Put your roast on the oven rack with the fatty side up and a drip pan over a rack under the roasting rack. This way, you will not be required to turn the roast.

Brown your roast at 375oF for 30 minutes. Then, put it on 225oF. It would still 2 to 3 hours to cook but if it starts to drip and is already brown externally, use your meat thermometer to check its temperature. After this, pull your roast from the oven once the climatic characteristic reaches 135 to 140oF. Place it on an aluminum foil for about 15 minutes and carve to serve.

For the gravy:

Take out the dripping pan from the oven. Place it on the stove top while it is on medium heat. Collect the drippings, add water, beef stock or red wine. This will loosen the drippings off the pan. Then, dissolve one tablespon of cornstarch with water and add this on the drip pan. Stir it speedily as the gravy thickens. You can also add some butter, salt and pepper. Aside from this, you can also add some fresh thyme.

Creamy Sausage and Potato Stew

This recipe, which serves four to six people, does not contain a lot of different ingredients but the flavors are great. Using condensed creamy soups gives the dish a creamy flavor and the vegetables add nutritional value to the meal.

What You Need:

10 3/4 oz can condensed cream of celery soup
10 3/4 oz can condensed cheddar cheese soup
1 lb cooked smoked sausage, in 1/2 inch rounds
2 1/2 lbs potatoes, in 1/4 inch slices
1 cup frozen carrots and peas
1 cup chopped onion

How To Make It:

Layer a third of the potatoes in a four quart crockpot, then a third of the meat, a third of the onion and on top of that put a third of the cheese soup. Repeat the same layers twice more.

Pour in the celery soup and then cover the slow cooker and cook for eight to ten hours on low or four to five hours on high. Thaw the vegetables under warm running water twenty minutes before the dish is done, then add them to the slow cooker and keep cooking the recipe for fifteen more minutes.

Herby Italian Sausages

You can serve this recipe as a sauce for buns or pasta or top it with cheese and broil. This recipe has a beautiful Italian flavor and makes enough to serve four people. You can serve a tasty green salad on the side if you like.

What You Need:

5 Italian sausages
1 chopped green bell pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
2 tablespoons tomato paste
2 halved, sliced onions
5 diced tomatoes
Salt, black pepper and cayenne pepper, to taste
Sliced mozzarella (optional)

How To Make It:

Simmer the sausages in water for twenty minutes in a pan, then drain them and put them in the crockpot. Easy Casserole Recipes - Ground Beef Casseroles

There are countless recipes you can come up with using ground beef in your casserole dishes. If you have it in your home, odds are you can put together a delicious meal with ingredients already in your pantry. It's also a great way to combine all four food groups into one dish. Here are a couple quick and easy ground beef casserole recipes that your whole family can enjoy.

Ground Beef Casserole

What you need:

2 lbs lean ground beef
1 medium onion, chopped
1 garlic clove, chopped
8 oz macaroni noodles, cooked and drained
2 (8 oz) cans tomato sauce
8 oz sour cream
8 oz pkg cream cheese, softened
3/4 c cheddar cheese, shredded
1 t salt
1/4 t black pepper

What you do:

In a large skillet, add beef, garlic, salt and pepper and cook until meat is browned. Drain grease from pan, add tomato sauce and onion and mix well. Simmer uncovered for 10 minutes, stirring occasionally. Remove from heat.

Preheat oven to 350 degrees. Layer noodles on the bottom of a large baking pan or casserole dish. In a medium bowl, combine cream cheese and sour cream. Cover noodles with cheese mixture. Pour meat mixture on top of cheese and noodles. Sprinkle shredded cheddar cheese on top. Bake, uncovered, for 40-45 minutes.

Southwest Pasta Bake

What you need:

8 oz corkscrew pasta, cooked and drained
1 lb lean ground beef, browned and drained
3/4 c prepared medium picante sauce or salsa
1 c sharp cheddar cheese, shredded
1 egg
1/4 t ground cumin
1/4 t black pepper
16 oz cottage cheese
10 oz package frozen corn, thawed and drained

What you do:

In a large bowl, combine beef, salsa and corn. In a small bowl, combine egg, cottage cheese, pepper and cumin. Place half of beef mixture in bottom of 11/2 to 2 quart casserole dish. Add pasta on top of beef. Add cottage cheese mixture on top of pasta. Top off with remaining beef mixture. Add cheese to top of casserole. In a 350 degree preheated oven, bake casserole for 30 to 40 minutes, or until heated through.

Ingredients include 2 large-sized onions; 2 lbs. skinless, boneless chicken breasts cut into 1 inch cubes; 2 large-sized carrots that are cut into 1 in. slices or 1 cup of baby carrots; 3 ½ cups of chicken broth, 3 medium-sized potatoes that are cut into 1 in. cubes and 1 tsp. celery seeds. Other ingredients are ½ tsp. seasoned pepper mix or black pepper, 1 tsp. dried thyme, salt, 1 cup thawed frozen corn, 8 oz. sliced mushrooms and 1 cup thawed frozen peas.

Procedure:

Mix all the ingredients in your slow cooker, excluding the peas. Stir it well.Cover it and cook it on low for 8 up to 8 hours. Cook it until the chicken is well done and the vegetables become tender. You can stir-in the peas during the final 30 minutes.

Mexican-Style Chicken Stew

Ingredients are 4 up to 5 medium-sized peeled potatoes that should be cut into very small cubes; 2 pounds boneless skinless chicken breasts that needs to be cut into 1 in. pieces; 1 16 ounce jar of mild salsa, 1 envelope taco seasoning mix, 1 can of diced green chili peppers and 1 can tomato sauce.

Procedure:

Mix all the ingredients in your slow cooker. Cover your slow cooker and set it on Low for about 7 up to 9 hours. You can serve this with warm flour tortillas.

Crockpot Corned Beef and Cabbage Recipe

Ingredients are 3 medium-sized thinly sliced carrots, 6 up to 8 medium-sized peeled tomatoes that should be cut into ½ in. slices, 2 thinly sliced ribs celery, 1 2-pound cabbage, 1 -pound corned beef brisket, 1 ½ cups water and ½ tsp. black pepper.

Procedure:

Procedure:

Using a 5- up to 6-quart crock pot or slow cooker, mix all the ingredients, excluding the cabbage. Cover the crock pot, cook on Low for 4 hours and cook on High for another 2 hours. Lightly sprinkle with salt and pepper. Cook again on Low for 7 up to 9 hours and on High for 4 up to 5 hours.

The Easiest Venison Pot Roast Recipes

I have the most wonderful childhood memories of my grandmother cooking roast. The smell that wafted through the house was synonymous with comfort and love. Every time I make a venison pot roast, I think of my grandmother and Sunday dinner at her house.

The most amazing thing is that as a child, I thought making pot roast was difficult. Something that smelled that good had to be hard, right? Wrong. Pot roast is a cinch. It's perfect for company, and the leftovers are terrific. Here are the two easiest recipes I've found.

Venison Salt Pot Roast. Mix a 3 to 5 pound bag of coarse salt with some water so you can mould it. Put a 4 to 6 pound venison roast in a roast dish and cover with the salt. Cook at 200 degrees until the internal temperature is where you like it (it's best served on the rare side). It will cook in about 90 minutes to 2 hours. The salt will form a hard curst around the meat. Chisel it away for the most tender roast you've ever had.

Venison Slow Cooker Pot Roast. Place a venison roast in a slow cooker. Surround meat with peeled potatoes, carrots, or other root vegetables. Cover with chicken broth (or venison stock, if you've made it). Cook on low for 4 hours. This is a great recipe for a gamey roast, or some other less-than-choice meat. This recipe is also great if you happen to over cook it. The chicken broth will help keep the meat moist. In fact, my husband likes to cook it to the point that the meat just falls apart with a fork.

For either roast, you can add a little flavor by cutting slits in the meat and inserting whole garlic cloves. Add as many cloves as you like. It's delicious.

Basic Slow Cooker Tips and Delectable Roast Beef Recipes

Slow cookers or crock pots are countertop electrical cooking appliances that maintain a low temperature for several hours. This enables cooking stew or pot roast without the need to check on it from time to time.

Amateur cooks will find it very easy to handle and maintain. All you need to do is to fill it up, and then turn it on. After several hours, dinner can be served. However, when using the slow cooker, there are some things you need to consider. It is best to get one that has a removable liner, making it very easy to clean. If you already have one with a non-removable liner, you can just use a cooking bag; then, use cooking spray on the inner liner.

Make sure you only fill your slow cooker ½ up to 2/3 full. The food will not be cooked properly if filled to the brim. However, if the liquid and food level is a bit lower, it will cook quickly.

You will find that the food along the bottom part of the slow cooker are moister and become cooked faster. This is because they are continuously immersed inside the simmering liquid. Since fats have a tendency to melt and cook easily when heated for a long time, resulting to an unpleasant texture, it is best to trim the excess fat formed and remove the skin from poultry.

During the last 30 minutes of cooking time, you can remove the lid and cook it on high to thicken the juices and add more flavors. It is best to cook on High during the 1st hour of cooking so that the temperature would easily reach 140 degrees, ensuring food safety. When you are almost done with your cooking, you can turn the dial to Low.

Do not place frozen foods inside your slow cooker. It should be defrosted first before cooking it. This way the temperature would easily reach 140 degrees. It also protects the appliance from being damaged.

Use cheaper cuts of meat because this requires about 8 hours of low cooking. Aside from being able to save money, they have less fat, moist and they result to more tender meats.

Ground meat should be cooked inside a skillet prior to cooking it in the slow cooker. If you will be cooking seafood in a slow cooker, this should be added in the last hour of cooking; otherwise, it will become overcooked and it will showcase a rubbery texture. Take note, 1 hour on high setting is actually equal to 2 hours on low setting.

Only use small amounts of Tabasco sauce and cayenne pepper because they become bitter when they are cooked for a long time. It is best to add them during the end of your cooking time.

Make sure you only add tender vegetables such as mushrooms, tomatoes and zucchini on the last 45 mins. of cooking time. This way, you will not overcook them.

Dairy products, on the other hand, must be added only during the last 30 minutes of cooking time.

Prior to storage, take out cooked food from the slow cooker or liner. Since the slow cooker's liner is composed of thick material, cooked food will not be able to cool down quickly so as to prevent the growth of bacteria.

Only stir in spices during the last hour of cooking time. If you cook this for a long time, it will lose its flavor.

Carefully follow the layering instructions. Since vegetables are not cooked as easily as meat, you need to place them in the bottom of your slow cooker.

If you are using low temperature, do not lift the lid when you stir. This is because the heat will escape and extend the cooking time to 30 minutes more. You can check the cooking progress by spinning the cover so that the condensation would fall off, giving you a chance to look inside your slow cooker.

Roast Beef a la Mushroom Soup

Ingredients are 1 can of Cream of Mushroom Soup, small to medium shoulder or chuck of beef roast, 1 can of French Onion Soup, a dash of pepper and ½ can of water (for cleaning the soup can).

Procedure:

Place the first 3 ingredients inside your slow cooker. Mix the ingredients until thoroughly blended. Sprinkle a dash of pepper. Put the settings on Low and allow cooking for the entire night. The next day, remove the meat and prepare your gravy. If your gravy seems too thin, add about 1 to 2 tsp. of cornstarch with ¼ cups of cold water. Set the cooker on high. Stir in the mixture to thicken and serve.

Roast Beef with Gravy

Ingredients are olive oil, 3 to 3 ½ pounds Boneless Rump Roast, 8 garlic slivers, salt and pepper. You will also need a meat thermometer. For the gravy, you will need some beef stock or red wine and corn starch.

Procedure:

One hour prior to cooking remove the roast from the refrigerator at put it in room temperature.

Using a sharp knife, you need to cut about eight small incisions around your roast. You will place one sliver of garlic on each incision. Place one tablespoon of olive oil around your roast and then sprinkle it with salt and pepper. Put your roast on the oven rack with the fatty side up and a drip pan over a rack under the roasting rack. This way, you will not be required to turn the roast.

Brown your roast at 375oF for 30 minutes. Then, put it on 225oF. It would still 2 to 3 hours to cook but if it starts to drip and is already brown externally, use your meat thermometer to check its temperature. After this, pull your roast from the oven once the temperature reaches 135 to 140oF. Place it on an aluminum foil for about 15 minutes and carve to serve.

For the gravy:

Take out the dripping pan from the oven. Place it on the stove top while it is on medium heat. Collect the drippings, add water, beef stock or red wine. This will loosen the drippings off the pan. Then, dissolve one tablespon of cornstarch with water and add this on the drip pan. Stir it quickly as the gravy thickens. You can also add some butter, salt and pepper. Filipino Recipes - Rellenong Manok - Pinoy Food

Rellenong manok or chicken relleno is a fantastic choice of dish to serve on Christmas Eve. It's inexpensive, impressive and very tasty. It truly is inexpensive if you prepare it yourself at home. It involves very simple ingredients which can be easily found in the market or groceries.

Ingredients

Salt - 1 tsp
Pepper - ½ tsp, freshly ground
Bread - 3 pieces, day-old, cut in small pieces, soaked in milk (2tbsp)
Egg - 1 piece, beaten
Eggs - 3 pieces, hard-boiled, shelled
Pickle relish - 2-3 tbsp, sweet
Chorizo de bilbao - 1 piece, chopped finely
Onion leaves - ½ cup, chopped finely
Onion - 1 piece, chopped finely
Chicken meat - ½ kilo, ground (pork meat can also be used as substitute)
Whole chicken - 1 piece, large (at least weighing 2 kilos), deboned

Cooking Procedure:

Season whole chicken outside and inside with pepper and salt. Leave it to sit in the refrigerator for some time.
For the stuffing, simply mix the bread, onion, beaten egg, chorizo de bilbao, ground pork or chicken, pickle relish and onion leaves. Season with salt and pepper.
Take the whole chicken from the refrigerator. Lay flat on a large plate with its breast part up. Fold the skin in the neck and tuck it under. Scoop half of the stuffing to the chicken's cavity. Arrange the boiled eggs in a row in the cavity's middle part. Scoop the rest of the stuff in. Pull the tail end's skin. Expose as little stuffing as you can.
Pre-heat oven in a 170 degrees C temperature. Carefully place the chicken to the roasting rack. Roast for about 1 hour 20 minutes.
Take your rellenong manok from the oven. Allow it to cool for about 15 minutes.
Slice, serve and enjoy!

Cooking the roast couldn't be simpler. Once all is in the pot, turn it to low and cook for 8-10 hours. You may need to check to make sure the roast is done, and you can also cook it on high if you want it to get done faster.

To serve, put in order some rice and serve the hot, fresh roast with some raw or slightly cooked carrots, mushrooms, and scallions for garnish. If you've got some fresh cilantro on hand, that also makes a great increasing to this allocation cooking recipe.

1 - 2-3 lb. whole chicken

In a small bowl combine the onion, garlic, soy sauce and vinegar and mix all together. Place chicken in slow cooker and pour mixture over chicken. Cook on low for 8 to 10 hours.

Spicy Slow Cooked Chicken

1 (3 to 3-1/2 lb.) whole chicken
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon pepper
1 teaspoon olive oil
1 large onion, sliced
1 medium garlic bulb

Rinse chicken; pat dry inside and out with paper towels. In a small bowl, mix salt, paprika, pepper, and oil; mix to form paste. Spread evenly over chicken. Place onion in your slow cooker. Place chicken, breast side up, over onion. Separate garlic into cloves, but don't peel cloves. Arrange garlic cloves around chicken. Cover slow cooker and cook on low 8 to 10 hours.

Chicken Spaghetti Recipes

Meat Casseroles

12 ounces vermicelli spaghetti

1 1/2 sticks butter or margarine salt pepper

1 can tiny english peas drained

1 lg green pepper chopped

1 lg onion chopped

1 pound processed cheese

2 cans rotel tomato w/green chili

2 chicken fryers

Boil chicken in seasoned water and save broth. Remove chicken from bone. Cook spaghetti in broth. Grate cheese and add to spaghetti while hot. Cook pepper and onion in margarine and add to spaghetti mixture. Add rotel tomatoes and green chilies, peas and chicken. Mix well and pour into greased casserole dish. Bake at 350 degrees until blended through. This method freezes well.

3/4 lb hamburger

1 lg green pepper, chopped

1 lb chicken livers, cut up

1 lg can of tomatoes

1 tb melted butter

1 t salt

2 tb vegetable oil

6 oz tomato paste

Simmer hamburger, onions, green pepper and oil until meat has lost red color. Sieve tomatoes and add with tomato paste and seasonings. Cover and simmer for 1 hour. Simmer livers and butter for 10 minutes and add to meat mixture. Cook spaghetti, drain and place in a 2 quart dish. Pour on meat sauce and toss lightly. Cover and bake 30 minutes at 350 degrees.

Seared Sea Scallops in Mandarin Sauce

Ingredients:

½ lb U/10 Sea Scallops

1 tbsp Olive Oil

2 ½ oz Mandarin Oranges

1 tbsp Chopped Onions

2 tbsp Green Onions

1 oz Mandarin Juice

4 tbsp Sweet Vermouth

1 tbsp Cold Butter

Pinch Salt & Pepper

Pinch Parsley

Wedge Lemon

Heat up olive oil in medium sauté pan at a medium flame. Sear scallops on both sides until lightly browned. Add your chopped onions, garlic & mandarin oranges and stir while cooking for 1 ½ minutes. Then add sweet vermouth and reduce to a low flame. Add mandarin juice, green onions, and wedge of lemon and let stand for 1 minute. Add cold butter and stir for 2 minutes. Add a touch of Salt, Pepper and Parsley to taste. Serve and Enjoy!

Pineapple Seared Sea Scallops

Ingredients:

½ lb U/10 Sea Scallops

1 tbsp Olive Oil

2 ½ oz Diced Pineapple

1 tbsp Chopped Onions

2 tbsp Green Onions

1 oz Water

4 tbsp Sweet Vermouth

1 tbsp Cold Butter

Pinch Salt & Pepper

Pinch Parsley

Wedge Lemon

Heat up olive oil in medium sauté pan at medium flame. Sear scallops on both sides until lightly browned. Add your chopped onions, garlic, & diced pineapples and stir while cooking for 1 ½ minutes. Then add sweet vermouth and reduce to a low flame. Add water, green onions, and a wedge of lemon and let stand for 1 minute. Add cold butter and stir for 2 minutes. Add a touch of salt, pepper, and parsley to taste. Serve and Enjoy!

Two Diabetic Friendly Comfort Food Recipes - Economical and Tasty Chicken Casseroles

If you are looking for a little "comfort food", a new recipe for your dinner table, or an economical meal, here are a couple of recipes for you! These casserole recipes will remind you of those delicious hot meals from grandma's or mom's oven.

For most of us, that is "comfort" enough. Colorful Chicken Rice Casserole is a type of Tex-Mex food which means a great blending of flavors. Chicken and Ham Casserole also makes use of rice and blends the flavors of two meats. Both will no doubt be big hits with your family.

COLORFUL CHICKEN RICE CASSEROLE

1 can (10 3/4 oz) condensed cream of mushroom soup, undiluted
1 cup sour cream
1/2 cup small-curd cottage cheese
1 pkg (3 oz) low-fat cream cheese, cubed
3 cups cubed cooked chicken
3 cups cooked brown rice
1 1/2 cups (6 oz) shredded Monterey Jack cheese
1 can (4 oz) chopped green chilies
1 can (2 1/4 oz) sliced ripe olives, drained
1/8 tsp garlic powder
1/2 to 3/4 cup crushed corn chips
2 cups shredded lettuce
2 medium tomatoes, chopped

In a blender or food processor, combine the soup, sour cream, cottage cheese, and cream cheese; cover and process until smooth. Transfer to a large mixing bowl. Stir in the chicken, rice, cheese, chilies, olives, and garlic salt. Spray a 2-quart baking dish with nonstick cooking spray. Transfer mixture into prepared dish. Bake, uncovered, for 25 to 30 minutes, or until bubbly, at 350 degrees. Remove from oven and just before serving, sprinkle top with corn chips, lettuce and tomatoes in that order.

Yield 6 to 8 servings.

Note: I adapted the above recipe from one I found in an old Taste of Home's Quick Cooking magazine.

CHICKEN AND HAM CASSEROLE

1 pkg (6 oz) long grain and wild rice mix
2 cups cubed cooked chicken
1 cup cubed fully cooked ham
1 can (10 3/4 oz) low-sodium cream of chicken soup, undiluted
1 can (12 oz) evaporated skim milk
1 cup shredded Colby or Cheddar cheese
1/8 tsp pepper
1/4 cup grated Parmesan cheese

Cook rice mix according to package directions. Transfer to a greased 2-quart baking dish. Top with chicken and ham. In a bowl, combine the soup, milk, cheese, and pepper; pour over chicken mixture. Sprinkle with the Parmesan. Bake, uncovered, at 350 degrees for 25 to 30 minutes or until bubbly.

Serves 6
