Beef Stew comfort Food - An Old Fashioned prudent method to Warm You Up on a Cold Day

When cool weather starts to drift in at our Alabama home, I go through my method books and start pulling out all my favorite soup and stew recipes. These hearty ease foods stir up deep rooted memories from my childhood. This is a beef stew method from my mother's variety that I've used for many years.

A simmering stew fills our house with a warm, comforting aroma, and every person knows that anyone is stewing in the pot is going to fill their bowl and their stomach soon with something good.

Meat Casseroles

My mum had to stretch a food dollar a long way to feed seven. That was hard in the 60's when most women stayed at home and families survived on one income. This stew is frugal and commonly feeds my house two or three meals.

This method is simple, yet delicious. You can all the time add other things to it if you like, but I propose trying it just once exactly the way it is. The ingredients are inexpensive, and it is yummy served up with soft white bread slices and a glass of cold iced tea.

Here are the ingredients you will need:

* 1-1/2 pounds of beef tips (stew meat can be used, but beef tips are excellent; if you use stew meat, trim fat and gristle before cooking)
* flour, black pepper, Lawry's seasoning salt
* 2-1/2 Tbsp vegetable oil
* Rehydrated onion flakes (placed dried flakes in small estimate of water for about 5 minutes)
* 1 clove garlic or 1/2 teaspoon garlic powder
* 4-1/2 cups very hot or boiling water (I microwave it)
* 1 Tbsp salt
* 1 Tbsp lemon juice
* 1 tsp sugar
* 1 tsp Worcestershire sauce
* 1 tsp pepper
* 2 bay leaves (remove before eating stew)
* 1/2 tsp paprika
* dash of allspice (cloves will work as well; we prefer allspice)
* 5-6 carrots
* 1 pound small white onions (optional)
* 4-5 medium white potatoes (peeled and diced)
* 1/2 cup cold water
* 1/4 cup flour

Here are the steps you will take:

1. Place flour in a bowl or container. Season with Lawry's and black pepper.
2. Place meat chunks in flour and roll colse to until dusted evenly.
3. Place 1/2 of the oil in a non-stick kettle or stew pot.
4. Heat on low to medium.
5. Place meat chunks into pot. Do not crowd.
6. Brown on all sides. Take off to plate.
7. Add rest of oil, brown remaining chunks.
8. Return all meat chunks to the pot.
9. Add rehydrated onion flakes, garlic or garlic powder, boiling water, salt, lemon juice, pepper, paprika, Worcestershire sauce, bay leaves, and allspice.
10. Using a wooden spoon, stir thoroughly, using the spoon to "loosen" any browned bits from the pan bottom.
11. Cover the pot. Do not leave lid ajar. Simmer for two hours. Stir occasionally.
12. After two hours, peel and dice potatoes. Add to stew.
13. Peel and dice carrots. Add to stew.
14. Add small white onions if you are using them.
15. Cook for 30 minutes or until vegetables are tender.
16. Discard bay leaves and garlic clove (if you did not use garlic powder).
17. Mix 1/2 cup cold water with 1/4 cup flour. Blend it thoroughly.
18. Add to stew, and boil gently for a 2-3 minutes.
19. Take off stew from heat. Allow to sit covered until ready to eat.

Again, I serve this with cold sweetened ice tea and soft white loaf bread. The bread is yummy dipped in the gravy. I also like a few dollops of Louisiana Hot Sauce on my stew to add a slight spice. Leftovers are delicious. If stew thickens more than you like, you can thin it with some tomato juice or a slight bit of water.

Two Diabetic Friendly Comfort Food Recipes - Economical and Tasty Chicken Casseroles

If you are looking for a little "comfort food", a new recipe for your dinner table, or an economical meal, here are a couple of recipes for you! These casserole recipes will remind you of those delicious hot meals from grandma's or mom's oven.

For most of us, that is "comfort" enough. Colorful Chicken Rice Casserole is a type of Tex-Mex food which means a great blending of flavors. Chicken and Ham Casserole also makes use of rice and blends the flavors of two meats. Both will no doubt be big hits with your family.

COLORFUL CHICKEN RICE CASSEROLE

1 can (10 3/4 oz) condensed cream of mushroom soup, undiluted
1 cup sour cream
1/2 cup small-curd cottage cheese
1 pkg (3 oz) low-fat cream cheese, cubed
3 cups cubed cooked chicken
3 cups cooked brown rice
1 1/2 cups (6 oz) shredded Monterey Jack cheese
1 can (4 oz) chopped green chilies
1 can (2 1/4 oz) sliced ripe olives, drained
1/8 tsp garlic powder
1/2 to 3/4 cup crushed corn chips
2 cups shredded lettuce
2 medium tomatoes, chopped

In a blender or food processor, combine the soup, sour cream, cottage cheese, and cream cheese; cover and process until smooth. Transfer to a large mixing bowl. Stir in the chicken, rice, cheese, chilies, olives, and garlic salt. Spray a 2-quart baking dish with nonstick cooking spray. Transfer mixture into prepared dish. Bake, uncovered, for 25 to 30 minutes, or until bubbly, at 350 degrees. Remove from oven and just before serving, sprinkle top with corn chips, lettuce and tomatoes in that order.

Yield 6 to 8 servings.

2 cups cubed cooked chicken
1 cup cubed fully cooked ham
1 can (10 3/4 oz) low-sodium cream of chicken soup, undiluted
1 can (12 oz) evaporated skim milk
1 cup shredded Colby or Cheddar cheese
1/8 tsp pepper
1/4 cup grated Parmesan cheese

Cook rice mix according to package directions. Transfer to a greased 2-quart baking dish. Top with chicken and ham. In a bowl, combine the soup, milk, cheese, and pepper; pour over chicken mixture. Sprinkle with the Parmesan. Bake, uncovered, at 350 degrees for 25 to 30 minutes or until bubbly.

Serves 6

Casseroles Are Perfect When You Need Some Comfort Food

If you are like most people, you probably turn to comfort food whenever you're cold, tired, feeling stressed, or just had a bad day. Good old home cooking can usually lift your spirits up, especially casseroles and other similar dishes. In the past, a casserole would simply be a dish that consisted of whatever food is available, which might include pieces of meat, random vegetables, and usually potatoes. Casseroles are among the easiest things to cook in the kitchen. You arrange layers of ingredients into a baking dish, season to taste, and bake slowly in a moderate oven.

Casseroles are popular all over the world and can be found in many major cuisines cooked one way or another. What usually comes to mind when the word casserole is mentioned is tuna, or some of the more famous holiday offerings that have green beans or sweet potatoes in them. But apart from these, there are still many other international recipes worth taking a look at if you consider yourself to be a casserole enthusiast. As a dish, casserole offers a healthy mix of carbohydrates and protein by combining vegetables and meat with rice, pasta, or noodles. Casseroles - The Perfect Comfort Food!

What is it about comfort food?

We all need a bit of comfort food when we're cold, tired, stressed, down in the dumps and good old home cooking fits the bill every time. In times gone by, a casserole would consist of any food that was available, cuts of meat, whatever vegetables were in season and in colder countries potatoes were always included in the cooking pot because, as they take longer to digest they keep the body warmer for longer.

Meat Casseroles

There is NOTHING easier to cook than a casserole, basically, you just throw everything into the cooking pot and season!

The word "casserole" actually originates from the French term for the deep, oven-ready dish it is cooked in. Although this type of meal is now popular throughout the world, it was not publicized until the 18th century, when the term was printed in an English cookbook.

Casserole recipes come in many different forms and you have many choices available to you and these days many casserole recipes have low fat ingredients as a matter of course. One of the most popular casserole recipes are green bean casseroles. The green bean casserole is a kind of vegetable dish that offers a lot of flavor and is perfect either as a side dish or a full vegetarian casserole option. The tuna casserole is a modern classic that never goes out of style. This inexpensive dish typically consists of a cream base, with tuna, of course. Some people like to add rice to their meal while others prefer the traditional pasta version.

Either way, these casserole recipes are winners each and every time. The traditional meat-and-potatoes person might prefer something meatier. Shepherd's pie is among the most popular casserole recipes and you might be surprised to discover that this dish was traditionally made with lamb and not with beef as is most common today.

There are few meals that have stood the test of time. Casserole recipes are always popular at a family get-together. As well as being perfect for large gatherings or special occasions they are so easy to make that they are also suitable for every day meals, especially traditional comfort food casseroles such as a Tater Tot Casserole.

Once prepared, casseroles are easy to transport or store and most recipes can be frozen for up to two months without losing their flavor or nutritional value. To prepare for future meals, another good idea is to freeze the casserole prior to baking it and then all you have to do is to defrost it and pop it in the oven when you are ready.

I always make really large cooked casseroles because they are so easy to reheat by simply returning them to an oven on a low temperature.

Our particular family favourite is a Mexican enchilada casserole that is guaranteed to put the 'Fiesta Feel' into your cooking!

Southern Living Comfort Food - A Delicious Trip Down Memory Lane

What is the first thing that comes to mind when someone asks  you what you favorite comfort food is?  Mine is baked macaroni and cheese that is just a little bit crunchy.

I love to eat, so when the book Southern Living Comfort Food  came across my desk I just had to check it out.  After skimming the index I read the foreward which is almost as good as the recipes! 

Most of the 150 comfort food recipes are accompanied by full page color photographs.  Illustrations or photographs are particularly helpful to cooks like me who are curious about the final presentation.

The book covers:  comfort food classics, breakfast anytime, fresh from the garden, casseroles & beyond, soups & stews, desserts, and holidays & special occasions.

Mashed Potato Casserole - French Style Comfort Food

In France, this mashed potato casserole gets the fancy name of Hachis Parmentier. It's a quick and easy dinner to prepare, yet still very typically French. And since it's French, it comes with a wonderful story that you can entertain your family with at the dinner table.

Introducing Monsieur Parmentier

Antoine Parmentier was a Frenchman that lived during the 18th and early 19th century. A pharmacist by training, he spent many years serving in the Seven Year War, and was imprisoned in Germany. It was during this incarceration that he discovered the nutritional virtues of the potato. (The tuber had previously been brought to Europe from South America, but had spent several hundred years languishing in the vegetable garden, disdained by the people and even prohibited by the government.) When he returned from the war, it was to a nation that was starving.

It was Parmentier who saw in the humble potato the solution to France's hunger problems. Through a long and genius marketing campaign, Parmentier single handedly changed the French peoples' ideas about the potato, turning it into a significant food source for the starving population. Parmentier courted the French king, Louis XVI, in his efforts and even got the wife of the king, Marie Antoinette, to wear potato flowers in her hair. Parmentier was a brilliant scientist who spent his life working to improve the food quality of his nation and it is most appropriate that his name is synonymous with potatoes in French cooking.

Onto the Mashed Potato Casserole Recipe

For this recipe I recommend you use instant mashed potatoes, because that's what makes mashed potato casserole so quick and easy to prepare. Do use a high quality instant mashed potato however -- all it should have in it is potatoes. Read your labels.

The recipe here is for a fairly typical French version of Hachis Parmentier, but feel free to change the vegetables, seasoning, and even the meat in this recipe. Hachis Parmentier is extremely versatile.

Mashed Potato Casserole


2 onions, chopped 3 garlic cloves, minced or pressed 1 tablespoon butter 2 tablespoons olive oil 3 tomatoes, chopped 1 1/2 pounds lean ground beef 1 tablespoon Herbs de Provence or other herbs salt and pepper (to your taste) 1 egg yolk 2 tablespoons Parmesan cheese 4 - 5 cups mashed potatoes (instant is fine) 3/4 cup grated cheese (gruyère, emmental, or swiss)

In a large frying pan, cook the onions and garlic in the butter and olive oil on medium heat for about 5 minutes. Stir in the tomatoes, ground beef, herbs, salt and pepper. Cook until the meat is browned thoroughly. Turn off heat and add egg yolk and Parmesan cheese, stirring to mix completely.

Spread the meat in the bottom of an lightly oiled oven proof dish (a 13 X 9 inch Pyrex dish would be perfect for the amount given in this recipe). Spread the potatoes on top of this and finish by sprinkling grated cheese on top.

Brown in 400° F oven for 15 to 20 minutes.

Makes 8 servings.
