1.5 lbs chicken breast (skinless), diced 2 medium size potatoes, diced 2 medium size carrots, diced 1 medium size turnip, diced 1 each green and red bell pepper, chopped 1 large onion, chopped 4 cloves garlic, crushed รข…› cup tomato paste 1 tbsp parsley, chopped 1 tbsp paprika 1 bay leaf 1 liter chicken stock 4 tbsp olive oil salt and pepper to taste

Procedure:

In a mixing bowl or dish, mix all together the chicken, paprika, salt and pepper. Heat olive oil in a casserole or a large sauce pan and place the seasoned chicken. Cook for 5-10 minutes until chicken turned brown. Remove chicken and set aside. Saute onion and garlic on the same casserole until the onions are translucent. Add the chopped green pepper and parsley then the tomato paste. Mix well and cook for 3 to 4 minutes more.

Return the chicken to the casserole. Gently add the chicken stock. Add all the vegetables and stir them all together and cook over a low heat for about 20 minutes or until chicken and vegetables are done. Ornament with parsley and serve immediately with plain rice.

Makes 5 - 6 servings

Every 100 grams of chicken breast is equivalent to 116 kcal. This casserole formula have 700 grams chicken breast and therefore has 812 kcal. Taking into account the added vegetables, it is still in conformity with a low calorie diet which is supposed to be 1500 -1800 fat per day depending on a person's needs and doctor's advice.

Chicken breasts can be chopped up or cooked whole. They can also be pounded thinly or sliced thinly, for dishes like chicken piccata or various stuffed, grilled chicken recipes. There is no need to both slice and pound the chicken, since you can pound it as thinly as you need it.

Here is my favourite recipe for a tasty chicken casserole made with noodles and vegetables. It is a meal in one dish.

Meat Casseroles

Ingredients

6 ounces of uncooked noodles

1 cup milk

1/3 cup of butter

1 teaspoon salt

1 cup sliced celery

6 tablespoon flour

2 cups diced chicken

6 ounces mushroom pieces

2 cups chicken broth

1 ounce jar pimento

1/3 teaspoon pepper

1 cup shredded cheese

1 grated carrot

1 cup chopped onion

1 teaspoon mixed herb seasoning

Cooking instructions

1. Cook the noodles until tender, drain and set it aside.

2. Cook chicken and cut it into small pieces (diced).

2. Put a big saucepan on a low heat and melt the butter in it.

3. Pour the grated carrot, sliced mushrooms and chopped onions into the saucepan. Cook this composition until tender.

4. Add the flour to the article of the saucepan and stir until smooth.

5. Add the pimento, salt, mixed herb and pepper.

6. Slowly add the chicken broth and the milk and stir until the sauce becomes thick.

7. Pour all the article of the saucepan into an oven proof casserole dish. Add the chicken and the

noodles to it and sprinkle cheese over the top.

8. Bake the chicken noodle casserole in a pre-heated 350 oven for 25 to 30 minutes.

9. Ensure that it is thoroughly cooked and the cheese is melted.

Jerk is one of the most popular styles of Jamaican cooking. It is used for cooking meat, traditionally pork or goat, but nowadays chicken and fish as well. All jerk dishes are spicy, even fiery, but they can be very tasty and are appreciated by many spice lovers.

The main underground behind the flavor of jerk is in the preparing of the meat. This is done by marinading the meat in a combination of spices known as "Jamaican jerk spice". Ideally, you should marinade the meat over night in the 'fridge and then cook the following day. Rather than just letting the marinade soak into the meat, I would suggest making some light cuts in the surface of the meat, and rubbing the marinade into these as well as the meat generally.

Of course, barbecuing meat is not all the time possible, for example while the Winter or if you live in a city - in that case, you can instead roast the meat in a normal kitchen oven, and still get good results.

1 pkg (3 oz) low-fat cream cheese, cubed
3 cups cubed cooked chicken
3 cups cooked brown rice
1 1/2 cups (6 oz) shredded Monterey Jack cheese
1 can (4 oz) chopped green chilies
1 can (2 1/4 oz) sliced ripe olives, drained
1/8 tsp garlic powder
1/2 to 3/4 cup crushed corn chips
2 cups shredded lettuce
2 medium tomatoes, chopped

In a blender or food processor, join the soup, sour cream, cottage cheese, and cream cheese; cover and process until smooth. Transfer to a large mixing bowl. Stir in the chicken, rice, cheese, chilies, olives, and garlic salt. Spray a 2-quart baking dish with nonstick cooking spray. Transfer composition into prepared dish. Bake, uncovered, for 25 to 30 minutes, or until bubbly, at 350 degrees. Take off from oven and just before serving, sprinkle top with corn chips, lettuce and tomatoes in that order.

Yield 6 to 8 servings.

Chicken And Ham Casserole

1 pkg (6 oz) long grain and wild rice mix
2 cups cubed cooked chicken
1 cup cubed fully cooked ham
1 can (10 3/4 oz) low-sodium cream of chicken soup, undiluted
1 can (12 oz) evaporated skim milk
1 cup shredded Colby or Cheddar cheese
1/8 tsp pepper
1/4 cup grated Parmesan cheese

Cook rice mix agreeing to box directions. Transfer to a greased 2-quart baking dish. Top with chicken and ham. In a bowl, join the soup, milk, cheese, and pepper; pour over chicken mixture. Sprinkle with the Parmesan. Bake, uncovered, at 350 degrees for 25 to 30 minutes or until bubbly.

Serves 6

Chicken Stew and Corned Beef Slow Cooker Recipes

Slow cookers are time efficient appliances and very easy to use. You do not need to check on your cooking from time to time. You can cook the food for hours and it still tastes great. Here are chicken and corned beef recipes you can make using your slow cooker or crock pot.

Chicken Stew

Ingredients include 2 large-sized onions; 2 lbs. skinless, boneless chicken breasts cut into 1 inch cubes; 2 large-sized carrots that are cut into 1 in. slices or 1 cup of baby carrots; 3 ½ cups of chicken broth, 3 medium-sized potatoes that are cut into 1 in. cubes and 1 tsp. celery seeds. Other ingredients are ½ tsp. seasoned pepper mix or black pepper, 1 tsp. dried thyme, salt, 1 cup thawed frozen corn, 8 oz. sliced mushrooms and 1 cup thawed frozen peas.

Procedure:

Mix all the ingredients in your slow cooker, excluding the peas. Stir it well.Cover it and cook it on low for 8 up to 8 hours. Cook it until the chicken is well done and the vegetables become tender. You can stir-in the peas during the final 30 minutes.

Mexican-Style Chicken Stew

Ingredients are 4 up to 5 medium-sized peeled potatoes that should be cut into very small cubes; 2 pounds boneless skinless chicken breasts that needs to be cut into 1 in. pieces; 1 16 ounce jar of mild salsa, 1 envelope taco seasoning mix, 1 can of diced green chili peppers and 1 can tomato sauce.

Procedure:

Mix all the ingredients in your slow cooker. Cover your slow cooker and set it on Low for about 7 up to 9 hours. You can serve this with warm flour tortillas.

Crockpot Corned Beef and Cabbage Recipe

Ingredients are 3 medium-sized thinly sliced carrots, 6 up to 8 medium-sized peeled tomatoes that should be cut into ½ in. slices, 2 thinly sliced ribs celery, 1 2-pound cabbage, 1 -pound corned beef brisket, 1 ½ cups water and ½ tsp. black pepper.

Procedure:

Procedure:

Using a 5- up to 6-quart crock pot or slow cooker, mix all the ingredients, excluding the cabbage. Cover the crock pot, cook on Low for 4 hours and cook on High for another 2 hours. Lightly sprinkle with salt and pepper. Cook again on Low for 7 up to 9 hours and on High for 4 up to 5 hours.

2 Easy Whole Chicken Crock Pot Recipes

Cooking with a crock pot saves not only time but makes the best and juiciest chicken you can find. Most families love chicken, so choosing whole chicken crock pot recipes is a no-brainer, and they're easy to find online too.

Many times, baking a whole chicken runs the risk of over cooking and dry meat. No one likes that, so why risk it? Slow cook your meals year round and don't sacrifice taste or convenience.

Finding slow cooker recipes is great, but did you know that you can cook a whole chicken without a recipe? Sure can. All you do is put the bird in your slow cooker with about a cup or so of water, your favorite seasonings and veggies and let it cook for eight hours. Easy Crock Pot Chicken

1 small onion, sliced
4 cloves of garlic, minced
3/4 cup soy sauce
1/2 cup vinegar
1 - 2-3 lb. whole chicken

In a small bowl combine the onion, garlic, soy sauce and vinegar and mix all together. Place chicken in slow cooker and pour mixture over chicken. Cook on low for 8 to 10 hours.

Spicy Slow Cooked Chicken

1 (3 to 3-1/2 lb.) whole chicken
1 teaspoon salt
1 teaspoon paprika
1/2 teaspoon pepper
1 teaspoon olive oil
1 large onion, sliced
1 medium garlic bulb

Rinse chicken; pat dry inside and out with paper towels. In a small bowl, mix salt, paprika, pepper, and oil; mix to form paste. Spread evenly over chicken. Place onion in your slow cooker. Place chicken, breast side up, over onion. Separate garlic into cloves, but don't peel cloves. Arrange garlic cloves around chicken. Cover slow cooker and cook on low 8 to 10 hours.

Chicken Spaghetti Recipes

Meat Casseroles

12 ounces vermicelli spaghetti

1 1/2 sticks butter or margarine salt pepper

1 can tiny english peas drained

1 lg green pepper chopped

1 lg onion chopped

1 pound processed cheese

2 cans rotel tomato w/green chili

2 chicken fryers

Boil chicken in seasoned water and save broth. Remove chicken from bone. Cook spaghetti in broth. Grate cheese and add to spaghetti while hot. Cook pepper and onion in margarine and add to spaghetti mixture. Add rotel tomatoes and green chilies, peas and chicken. Mix well and pour into greased casserole dish. Bake at 350 degrees until blended through. This method freezes well.

3/4 lb hamburger

1 lg green pepper, chopped

1 lb chicken livers, cut up

1 lg can of tomatoes

1 tb melted butter

1 t salt

2 tb vegetable oil

6 oz tomato paste

Simmer hamburger, onions, green pepper and oil until meat has lost red color. Sieve tomatoes and add with tomato paste and seasonings. Cover and simmer for 1 hour. Simmer livers and butter for 10 minutes and add to meat mixture. Cook spaghetti, drain and place in a 2 quart dish. Pour on meat sauce and toss lightly. Cover and bake 30 minutes at 350 degrees.

Two Diabetic Friendly Comfort Food Recipes - Economical and Tasty Chicken Casseroles

If you are looking for a little "comfort food", a new recipe for your dinner table, or an economical meal, here are a couple of recipes for you! These casserole recipes will remind you of those delicious hot meals from grandma's or mom's oven.

For most of us, that is "comfort" enough. Colorful Chicken Rice Casserole is a type of Tex-Mex food which means a great blending of flavors. Chicken and Ham Casserole also makes use of rice and blends the flavors of two meats. Both will no doubt be big hits with your family.

COLORFUL CHICKEN RICE CASSEROLE

1 can (10 3/4 oz) condensed cream of mushroom soup, undiluted
1 cup sour cream
1/2 cup small-curd cottage cheese
1 pkg (3 oz) low-fat cream cheese, cubed
3 cups cubed cooked chicken
3 cups cooked brown rice
1 1/2 cups (6 oz) shredded Monterey Jack cheese
1 can (4 oz) chopped green chilies
1 can (2 1/4 oz) sliced ripe olives, drained
1/8 tsp garlic powder
1/2 to 3/4 cup crushed corn chips
2 cups shredded lettuce
2 medium tomatoes, chopped

In a blender or food processor, combine the soup, sour cream, cottage cheese, and cream cheese; cover and process until smooth. Transfer to a large mixing bowl. Stir in the chicken, rice, cheese, chilies, olives, and garlic salt. Spray a 2-quart baking dish with nonstick cooking spray. Transfer mixture into prepared dish. Bake, uncovered, for 25 to 30 minutes, or until bubbly, at 350 degrees. Remove from oven and just before serving, sprinkle top with corn chips, lettuce and tomatoes in that order.

Yield 6 to 8 servings.

CHICKEN AND HAM CASSEROLE

1 pkg (6 oz) long grain and wild rice mix
2 cups cubed cooked chicken
1 cup cubed fully cooked ham
1 can (10 3/4 oz) low-sodium cream of chicken soup, undiluted
1 can (12 oz) evaporated skim milk
1 cup shredded Colby or Cheddar cheese
1/8 tsp pepper
1/4 cup grated Parmesan cheese

Cook rice mix according to package directions. Transfer to a greased 2-quart baking dish. Top with chicken and ham. In a bowl, combine the soup, milk, cheese, and pepper; pour over chicken mixture. Sprinkle with the Parmesan. Bake, uncovered, at 350 degrees for 25 to 30 minutes or until bubbly.

Serves 6

Grilling and Smoking Chicken

Chicken is one of my beloved meats to cook. It is low in fat, high in protein, and if
cooked correctly, it will definitely be a crowd pleaser. There are many dissimilar
recipes for grilling and smoking chicken, and I have included my two beloved
recipes below. I am known as The Smoker King, and I am the author and
Webmaster of "Outdoor Cooking: Barbeque, Sauces, Mops, Rubs," so you can bet
that my beloved way to cook chicken is outdoors, on a grill or smoker.

The first recipe is one that I use when I cook chicken fajitas. The marinade gives a
tequila-lime twist to the chicken, which is great for Mexican-type dishes. The
second recipe is my take on the preponderant beer can chicken recipe. straight through my
experience, I have found that placing the chicken on a beer can throne while it is
smoking produces a juicy, tender bird. Smoking chicken is one of my beloved ways
to cook chicken, and after you have tried this recipe, I believe that you will categorically like
smoking chicken too.

Meat Casseroles

Grilled Tequila Lime Chicken

Ingredients:

4-Chicken Breasts

2-Cups of Margarita Mix (I prefer Mr. And Mrs. T's)

1/2-Cup Vinegar

1/2 Cup Olive Oil

1-Tbsp Onion Powder

1-Tbsp Garlic Powder

1-Tbsp Cajun Seasoning

Lemon Pepper

Option for a kicked up version: Add one shot of Tequila

Recipe:

1. Trim chicken breasts to remove fat

2. Using the flat side of a meat tenderizer, pound the each chicken breast until they
are about 3/8 to 1/2 inch thick.

3. Mix all ingredients into a bowl just big enough to hold the chicken breasts while
they are fully covered in the marinade.

4. Add chicken breasts, and refrigerate for 1/2 to 1 hour. The longer they stay in
the marinade, the more Tequila lime taste they will have.

5. Season both sides of the chicken with Lemon Pepper before grilling.

6. Grill over medium heat for about 3-5 minutes per side. Times may vary
depending on heat, just make sure that the meat is white throughout the breast,
and the juices run clear.

This is a great recipe for chicken fajitas.

Here is my recipe for Cajun smoked, beer-can chicken.

Injection Ingredients:

1. A 3 or 4 pound chicken

2. 1/2 cup melted butter (room temperature)

3. 2 tablespoons of Tony Chachere's seasoning (more for a spicier chicken)

4. 1-teaspoon garlic powder

5. 1/2 cup vinegar

Rub Ingredients:

1. Olive oil

2. Tony Chachere's seasoning.

Mop Ingredients:

1. Apple Cider

2. A Spray Bottle

Other:

1. A beer of your option (1/2 full)

2. 3 cloves of garlic

3. About 3 tablespoons of chopped garlic

Directions:

1. Whisk all injection ingredients together.

2. Using a kitchen syringe, inject the liquid into various spots on the chicken. Try to
be even as possible, injecting about 1/2 of the compound into the breasts, and the
other 1/2 throughout the rest of the chicken.

3. Rub the chicken down with olive oil, and apply an even layer of Tony's to the bird.

4. Drink half of the beer, widen the opening at the top of the can, then put the garlic
and onion in the can.

5. Place the bird on the can. It should sit up by itself.

6. Preheat your smoker to about 250 F degrees. I use hickory for chicken, charcoal
works well too.

7. Put the chicken on the smoker and spray the chicken with the apple cider about
every 30 minutes.

8. Smoke the chicken for 3-4 hours, or until the internal temperature of the thickest
meat reaches 180 F Degrees.

How to Make the excellent Jamaican Jerk Sauce For Chicken

It is believed that they Maroons created Jerk Chicken when they brought cooking techniques form Africa to Jamaica. The techniques were then added to by the Jamaican ingredients and jerk seasoning that the Arawak used. They would smoke the meat for a long period of time for two reasons. One, to keep away the insects that infest Jamaica. Two, to preserve the meat for a much longer time after the cooking process was complete. This smoking also gave the meat it marvelous smoky flavor.

There are two major theories on the origin or the word "Jerk". First, that is was derived from the Spanish word "Charqui", that the Spanish use to denote dried meat. Then over a long period of time this word evolved to "Jerky" and the "Jerk". The second principles consists of the name arrival from the act of jerking or poking holes into the meat and stuffing them with spice before the cooking process. Today the word "Jerk" is used as a verb to tell a method of cooking and as a noun to tell the jerk seasonings used in jerk food.

Meat Casseroles

To make the perfect Jamaican Jerk Sauce for Chicken to feed four population you will need the following:

One 3 1/2 lb chicken (3lb of chicken breasts may be used if preferred)
1 scotch bonnet pepper (jalapenos may be used if scotch bonnet peppers are unavailable)
2 Tbsp. Thyme
2 Tbsp. Ground allspice
8 Cloves garlic, finely chopped
3 Medium onions, finely chopped
2 Tbsp. Sugar
2 Tbsp. Salt
2 Tsp. Ground black pepper
1 to 2 Tsp of the following (to taste)
-ground cinnamon
-nutmeg
-ginger
1/2 cup olive oil
1/2 cup soy sauce
Juice of one lime
1 cup orange juice
1 cup white vinegar

To Prepare:

1. First chop the garlic, onions and peppers. They need not be chopped to finely because they will later be liquified with a blender.
2. Take all ingredients except the chicken and place them into a blender until all is liquified
3. Cut chicken into fourths
4. Rub the chicken with the sauce making sure to set some aside for basting and dipping
5. Soak chicken in the sauce overnight to marinade the chicken

To Cook:

1. Backing on over on 425 for 30 minutes, then turn the meat over, give it a good basting, and let bake for an added thirty minutes
2. You can also grill the chicken slowly, making sure to rotating and basting it on a consistent basis. For best results use pimento wood or charcoal bricks.

To Serve:

1. Cut each quarter of chicken in to five to six smaller pieces
2. Serve with Jamaican rice, salad and hardo bread with the remaining jerk sauce as a dip.

When prepared correctly, these can be just as palatable as much more expensive cuts. Here are some suggestions for making the most out of chicken wings and other supermarket bargains.

Chicken wings are the least costly form of white meat available and are naturally moist and succulent. Sauces or marinades such as barbecue, sweet and sour, hoi sin, honey-mustard, teriyaki or satay can introduce wings to a world of flavors. Dust wing sections with flour or corn starch then coat with the sauce of your choice. Arrange on an oiled baking tray and cook for 30 minutes in a 375 degree oven.

Let the hock simmer in water overnight in a slow cooker, then take it out and allow it to cool. Separate the meat from the rind and bone and add to soup or stew.

A pot roast made from rolled beef brisket is a delicious low-priced alternative to roast beef made from expensive cuts. The leftovers are great for sandwiches. Add beef stock to a casserole dish along with a bottle of dark beer or a glass of red wine. Throw in roughly chopped garlic, shallots and carrots. Place the brisket in the casserole, cover and cook at 350 F for about two hours or until tender.
