Two Diabetic amiable relax Food Recipes - thrifty and Tasty Chicken Casseroles

If you are looking for a miniature "comfort food", a new method for your evening meal table, or an economical meal, here are a join of recipes for you! These casserole recipes will remind you of those tasty hot meals from grandma's or mom's oven.

For most of us, that is "comfort" enough. Colorful Chicken Rice Casserole is a type of Tex-Mex food which means a great blending of flavors. Chicken and Ham Casserole also makes use of rice and blends the flavors of two meats. Both will no doubt be big hits with your family.

Meat Casseroles

Colorful Chicken Rice Casserole

1 can (10 3/4 oz) condensed cream of mushroom soup, undiluted
1 cup sour cream
1/2 cup small-curd cottage cheese
1 pkg (3 oz) low-fat cream cheese, cubed
3 cups cubed cooked chicken
3 cups cooked brown rice
1 1/2 cups (6 oz) shredded Monterey Jack cheese
1 can (4 oz) chopped green chilies
1 can (2 1/4 oz) sliced ripe olives, drained
1/8 tsp garlic powder
1/2 to 3/4 cup crushed corn chips
2 cups shredded lettuce
2 medium tomatoes, chopped

In a blender or food processor, join the soup, sour cream, cottage cheese, and cream cheese; cover and process until smooth. Transfer to a large mixing bowl. Stir in the chicken, rice, cheese, chilies, olives, and garlic salt. Spray a 2-quart baking dish with nonstick cooking spray. Transfer composition into prepared dish. Bake, uncovered, for 25 to 30 minutes, or until bubbly, at 350 degrees. Take off from oven and just before serving, sprinkle top with corn chips, lettuce and tomatoes in that order.

Yield 6 to 8 servings.

Chicken And Ham Casserole

1 pkg (6 oz) long grain and wild rice mix
2 cups cubed cooked chicken
1 cup cubed fully cooked ham
1 can (10 3/4 oz) low-sodium cream of chicken soup, undiluted
1 can (12 oz) evaporated skim milk
1 cup shredded Colby or Cheddar cheese
1/8 tsp pepper
1/4 cup grated Parmesan cheese

Cook rice mix agreeing to box directions. Transfer to a greased 2-quart baking dish. Top with chicken and ham. In a bowl, join the soup, milk, cheese, and pepper; pour over chicken mixture. Sprinkle with the Parmesan. Bake, uncovered, at 350 degrees for 25 to 30 minutes or until bubbly.

Serves 6

Two Diabetic Friendly Comfort Food Recipes - Economical and Tasty Chicken Casseroles

If you are looking for a little "comfort food", a new recipe for your dinner table, or an economical meal, here are a couple of recipes for you! These casserole recipes will remind you of those delicious hot meals from grandma's or mom's oven.

COLORFUL CHICKEN RICE CASSEROLE

Diabetic Friendly Apple Recipes: Applesauce, Apple Onion Saute, Sweet Potato Apple Bake

Apples are synonymous with fall, so soon the farmer's markets, roadside stands, orchards, and grocery stores will be bursting out with apples.  Being diabetic does not mean passing those apples by.  Here are some great Apple recipes that are suitable for diabetics but tasty for anyone.  Homemade Apple Butter is great to spread on toast, serve with pork, etc.   For this recipe the diabetics should opt for the cinnamon rather than cinnamon candies.  The apples and onions and the Sweet Potato Apple Bake are great side dishes served with meats.

HOMEMADE APPLE BUTTER
9 cups apples
1 cup cider vinegar
6 cup Splenda or Splenda Blend
red hot candies or cinnamon to taste

Enjoy a meal of Italian Pork Chops finished off with a tasty Diabetic Friendly Butterscotch Pudding

These Italian Pork Chops get their name from the Italian-style tomatoes, mozzarella cheese, garlic, oregano, etc.  They are simple and easy to make and they are a healthy entree to serve your family and friends.  This one dish offers meat, dairy, and an assortment of vegetables.  Serve with some brown rice and add this Butterscotch Pudding for dessert.  This is a meal even the diabetics can enjoy!

Ground Beef Spaghetti Casserole That's Diabetic Friendly

Whether you are a beginning cook or an experienced one, this is a recipe you will be proud to serve.  It is simple, easy and delicious.  This dish is easy to assemble and only needs a half hour to bake.  In this one dish you have grains, vegetables, meat, and dairy products.  Add a tossed salad or steamed fresh broccoli, some crusty bread, and you have an easy, healthy meal for your family to enjoy.  If you follow my blogs, you know I am big on family meal time.  I believe we need to spend more time in the kitchen and less in the fast food drive-through lanes.  Your family will eat better when you cook at home.  It doesn't have to be elaborate, just satisfying.  If your children are old enough, let them help by setting the table, putting the salad together, filling the water glasses, etc.  They can also help after the meal by joining in clearing the table, loading the dishwasher, etc.  It is a great time for parents and children to talk about their day and spend valuable time together.  This casserole is a great block to building a fantastic family meal!

Recipes For Meat Loaf and a Tomato-Corn Casserole and They Are Diabetic Friendly

These recipes can bake in your oven at the same time allowing you to prepare your meal almost totally in the oven while you go on about your business. No need to stand over the stove to prepare this meal of Dot's Meat Loaf and Tomato-Corn Casserole. Since the casserole is chock full of vegetables, you only need to serve with your favorite green salad for a complete meal. Both recipes are also okay for diabetics. The meal loaf has no high-carb filler as most do which makes it especially good for diabetics.

DOT'S MEAT LOAF

Meat Casseroles

2 lb ground sirloin

4 eggs

2 medium onions, chopped

2 cups tomato juice

2 tsp salt

1 tsp black pepper

Preheat oven to 350 degrees.

Put the eggs in a large mixing bowl and beat well. Add the ground sirloin, onions, salt, pepper, and tomato juice. Using your hands, mix together well. Form into a loaf in a baking pan and bake at 350 degrees for 1 1/2 hours or until browned and cooked through.

CORN AND TOMATO CASSEROLE

1 medium green bell pepper, seeded and diced

1 garlic clove, crushed

2 tsp butter, melted

1 tbsp flour

2/3 cup low-fat milk

1/2 tsp salt

couple dashes of black pepper

1/8 tsp dried basil

1/8 tsp dried oregano

1 can (appox. 16-oz ) whole tomatoes, drained

1 pkg (10-oz) frozen peas and pearl onions, slightly thawed

1 can (12-oz) whole kernel corn, drained

Preheat oven to 350 degrees.

In a large saucepan, saute the bell pepper and garlic in the butter until pepper is tender. Add the flour, stirring until smooth. Cook for 1 minute, stirring constantly. Gradually stir in the milk; add salt, pepper, basil and oregano. Cook the mixture over medium heat, stirring constantly, until the mixture is thickened and bubbly. Stir in the tomatoes, peas and onions, and the corn. Remove from the heat.

Spray a 2-quart casserole dish with nonstick cooking spray. Spoon the heated mixture into the dish and bake at 350 degrees for 50 minutes.

Ground Beef Spaghetti Casserole That's Diabetic Friendly

Meat Casseroles

GROUND BEEF SPAGHETTI CASSEROLE

12 oz whole-wheat spaghetti, cooked according to package directions, drained
1 small can black olives, drained and chopped
1 small jar of sliced mushrooms, drained and chopped
1 (28 oz) can whole tomatoes, drained and chopped
1 medium onion, chopped
1 tbsp olive oil
2 lbs lean ground beef
2 tsp oregano
1 tsp basil
2 cups shredded mozzarella cheese
1 can fat-free cream of mushroom soup
1/4 cup water

Saute onion in butter. Remove from pan and cook ground beef until browned. Drain and rinse with hot water. Return to skillet and add onion, olives, mushrooms, tomatoes and spices. Spray a large casserole dish with non-stick cooking spray. Layer into casserole as follows: 1/2 the spaghetti, 1/2 the meat mixture, 1 cup mozzarella; repeat with the remaining halves. Mix soup and water together until smooth; pour over casserole. Sprinkle top with Parmesan cheese if desired. Bake at 350 degrees about 1/2 hour until heated through and cheese melts.
