Homemade Spaghetti and Meatballs

Preparing spaghetti and meatballs at home is easy and fun. Most recipes are simple to follow, and require very few steps. The following ideas center around the choice of ground beef to make the meatballs, and discusses how the meat is best combined with the noodles and sauce.

Meatballs

Ground beef is the preferred meat for preparing spaghetti recipes. The beef itself is available in different levels of fat content. Unlike good hamburgers, meatballs are best prepared with beef consisting of no more than 15% fat. The meat is combined with any or all of the following: chopped onion, onion flakes, garlic powder, chopped celery and seasonings, and can be rolled either large or small. The smaller sized meatballs can be browned in oil or butter, while larger ones are often poached in salted water. They can be prepared ahead of time and kept warm in the oven while making the sauce and noodles.

Adding Sauces To The Dish

Traditionally meatballs are served over spaghetti noodles with a tomato-based sauce. In the old-fashioned style, the spaghetti sauce is made separately, and the meatballs are doused or immersed in the sauce prior to serving. Most chefs prefer to mix a small amount of the sauce with the noodles before adding the meatballs to the dish. Because of the moderate-to-low fat content of the ground beef, the meatballs will keep their shape quite well and at the same time offer enough of the distinct "hamburger" taste that combines so well with tomato sauces. This pleasing mixture of tastes is strongest if the meat and the tomato sauce have not been in contact during the cooking process. This is why most recipes for spaghetti sauce recommend combining meat and tomatoes during the last stages of preparation, with little or no simmering time.

Ground Beef

Beef should always be cooked thoroughly to eliminate the chances of E. coli or other harmful bacteria being consumed. Most recipes, including those for preparing meatballs, suggest that excess fat be drained and discarded, as this would otherwise add unwanted calories and does not usually enhance the flavor. Like any other recipe calling for ground beef, meatballs should be eaten at once and leftovers need to be refrigerated immediately, before they cool to room temperature.

Crockpot Spaghetti Sauce

I love spaghetti with meat sauce. The best thing about the sauce is that the more it cooks the better it gets. I used to make spaghetti sauce only on the weekend because I would start it in the morning and then watch it simmer until early evening. Recently I came across a meat sauce formula that combines my popular ingredients but cooks in a crockpot.

Crockpot Spaghetti Sauce

Meat Casseroles

Ingredients

1/2  pound Italian sausage

1/2  pound ground beef

1 1/2 medium onions, chopped (1 1/4 cups)

1 cup sliced mushrooms

3 cloves garlic, finely chopped

1 can (14 1/2 ounces) diced tomatoes, undrained

1 can (14 ounces) tomato sauce

1 can (6 ounces) tomato paste

1 Tbsp. Dried basil leaves

1 1/2 Tsp. Dried oregano leaves

1 1/2 Tsp. sugar

1/2 Tsp. Salt

1/4 Tsp. pepper

1/4 Tsp. Crushed red pepper

Directions

In a large skillet, cook sausage, ground beef, onions, mushrooms, and garlic over medium heat for about 10 minutes or until meat is no longer pink. Stir occasionally. Drain.

Spoon sausage and beef blend into 5 quart crockpot. Add remaining ingredients and stir to mix.

Cover and cook on low heat setting for 8 to 9 hours.  

This formula make 12 1/2 cup servings.

Quick Tips

Coat crockpot with cooking spray for easier cleanup.

Use pre-cut onions and minced garlic.

Use pre-sliced mushrooms in a jar or icy mushrooms.

Spaghetti and meat sauce is a extra meal at my house. We like to pair it with a fresh orchad salad made with romaine lettuce and crunchy orchad vegetables (carrots, radishes, and celery) and garlic bread. Since this formula serves 12,  I ordinarily take some to work the next day and share it with my staff.

Chicken Spaghetti Recipes

These chicken spaghetti recipes are delicious. Just check these out and I'm sure you'll be amazingly surprised.

So here we go for some chicken spaghetti recipes:

Meat Casseroles

>>Spaghetti Chicken Casserole

12 ounces vermicelli spaghetti

1 1/2 sticks butter or margarine salt pepper

1 can tiny english peas drained

1 lg green pepper chopped

1 lg onion chopped

1 pound processed cheese

2 cans rotel tomato w/green chili

2 chicken fryers

Boil chicken in seasoned water and save broth. Remove chicken from bone. Cook spaghetti in broth. Grate cheese and add to spaghetti while hot. Cook pepper and onion in margarine and add to spaghetti mixture. Add rotel tomatoes and green chilies, peas and chicken. Mix well and pour into greased casserole dish. Bake at 350 degrees until blended through. This method freezes well.

Do you like chicken liver? Here's a method that goes with spaghetti.

3/4 lb hamburger

1 lg green pepper, chopped

1 lb chicken livers, cut up

1 lg can of tomatoes

1 tb melted butter

1 t salt

1 t ground basil

1 t chili powder

1/2 lb thin spaghetti

2 sm onions, chopped

2 tb vegetable oil

6 oz tomato paste

Simmer hamburger, onions, green pepper and oil until meat has lost red color. Sieve tomatoes and add with tomato paste and seasonings. Cover and simmer for 1 hour. Simmer livers and butter for 10 minutes and add to meat mixture. Cook spaghetti, drain and place in a 2 quart dish. Pour on meat sauce and toss lightly. Cover and bake 30 minutes at 350 degrees.

Spaghetti Pie method - Best Spaghetti Pie

Tired of regular spaghetti? Give this great-tasting spaghetti pie method a whirl.

1 pound spaghetti

Meat Casseroles

1 pound lean ground beef

1/4 teaspoon salt

1/4 teaspoon ground black pepper

Garlic powder to taste

1/2 cup chopped green bell pepper

1 (26 oz.) jar pasta sauce

3/4 cup sour cream

1/2 cup green onions, chopped

1/2 (8 oz.) holder cream cheese

1 1/2 cups cheddar cheese, shredded

Directions

In a large pot of lightly salted boiling water, cook pasta for 8 to 10 minutes; drain.

Preheat oven to 350 degrees.

In a skillet, brown ground beef over medium heat. Drain and crumble. Place crumbled beef back into skillet. Stir in salt, pepper, garlic powder, bell pepper and pasta sauce. Bring to a boil. Cut heat and simmer for 20 minutes.

In a small bowl, concentrate sour cream, green onions and cream cheese; set aside.

Coat a 9x13-inch baking dish with cooking spray and add the cooked spaghetti. Spread the cream cheese mixture over spaghetti, add the meat mixture and sprinkle with cheddar cheese.

Cover and bake for 25 minutes. Search and bake for 5 more minutes until cheese is bubbly.

This spaghetti pie method features three appetizing cheese flavors: Parmesan, ricotta and mozzarella.

6 ounces cooked and drained spaghetti

1 egg white

1/3 cup grated Parmesan cheese

1/2 pound lean ground beef

1 1/4 cups spaghetti sauce

1 egg yolk

3/4 cup ricotta cheese

1 teaspoon dried parsley

1 cup mozzarella cheese, shredded

1 (9-inch) pie shell

Directions

Preheat oven to 375 degrees.

In a medium size bowl, concentrate spaghetti, egg white and Parmesan cheese. Place mixture into a 9-inch pie shell.

In a skillet, cook beef over medium heat until brown. Add spaghetti sauce; stirring constantly. Cook for 5 more minutes. Set aside.

In a medium sized bowl, concentrate egg yolk, ricotta, parsley and 1/2 cup of mozzarella cheese. Spread cheese mixture over spaghetti mixture in the pie shell. Spread the meat sauce over cheese mixture and top with the remaining 1/2 cup of mozzarella.

Cover the pie with foil and bake for 35 minutes. Remove foil and bake someone else 10 minutes. Let sit a few minutes before serving.

Turkey is a great ground beef alternative, and it's phenomenal in this spaghetti pie recipe.

2 ounces uncooked spaghetti, broken in half

1 egg, lightly beaten

2 tablespoons grated Parmesan cheese

3 tablespoons sour cream

1/2 pound ground turkey

1/4 cup green pepper, chopped

2 tablespoons onion, chopped

1 teaspoon butter or margarine

1/3 cup tomato sauce

1/4 teaspoon garlic salt

1/4 teaspoon dried oregano

Salt and pepper to taste

1/3 cup mozzarella cheese, shredded

Directions

Cook spaghetti according to holder directions; drain.

In a bowl, concentrate the egg, Parmesan cheese and spaghetti. Press spaghetti mixture onto the lowest and up sides of greased shallow 2-cup baking dish or 7-inch pie plate. Spread sour cream on top of spaghetti.

Crumble turkey into a large skillet. Add pepper, onion and butter. Cook over medium heat until meat is brown; drain. Stir in the tomato sauce, garlic salt, oregano, salt and pepper.

Spoon turkey mixture into spaghetti crust. Sprinkle mozzarella cheese on top. Cover edges loosely with foil. Bake for 15 to 20 minutes, or until cheese is melted. Serve immediately.

Spaghetti Squash Recipes and Cooking Instructions

When cooked, a fork can easily poke through the skin, and the flesh will easily separate into long strands with a fork. The average 4 pound squash will give you about five cups of flesh. Use the "spaghetti" right away, or place in freezer bags in the freezer for use at another meal.
These best five ways to cook spaghetti squash are in the order of cooking time.If you have all day, set the crock pot on, or if you like that fresh baked smell to fill the house, bake it in the oven. If you just want to get it done and start eating as fast as you can, I would suggest the microwave. Try out all the different ways and see what you like best!
#1 - In the Crock Pot - Pick a squash that can fit in your crock pot whole. Pole holes through the shell with a fork, and place in the crock pot. Add a couple of cups of water, and cook on low for 8-9 hours or until fork pokes through skin easily.
#2 - In the Oven, Whole - Poke holes in the skin several times with a fork. Place the entire squash in the oven. Cook at 375F for about 1 hour, or until soft.
#3 - Boil in a Pot - Find a pot big enough to hold your squash. Fill with enough water to cover the whole squash and set to boil. When the water is boiling, add the squash and cook 20-30 minutes until fork pokes through skin easily.
#4 - In the Oven, Halved - Cut the squash in half lengthwise, and scoop out the seeds. Place open sides down onto a baking sheet and place in the oven. Cook at 375F for 20-30 minutes or until skin is easily poked with a fork.
#5 - Microwave in a Dish - Cut the squash in half lengthwise, and scoop out the seeds. Place squash in a microwaveable dish with the open side up. Add a few cups of water, and cover with saran wrap. Cook for 10-12 minutes. Let it sit for 5 minutes covered, then test to see if it is done, and cook longer if needed.
I found that slicing the squash in half and scooping out the seeds first, before it was cooked was easier then scooping out the seeds after, and trying to sort out the flesh from the seeds when cooked together.

Here are some good spaghetti squash recipes to use cooked squash.

Spaghetti Squash Recipe with Cheese
This is also a really quick dinner especially if squash is cooked ahead of time. If you like cheese, and squash this will quickly become a favorite dish!
1 large spaghetti squash cooked and prepared.
1/4 cup Parmesan Cheese
1/2 cup Mozzarella Cheese, grated
1 cup tomatoes, chopped
1/3 cup chopped fresh parsley
Mix all ingredients in microwave safe dish or oven safe dish. Microwave for 2-5 minutes, or heat in oven for 5-8 minutes until all ingredients are hot and cheese is melted.
Serve.

Spaghetti Squash Bake Recipe
It is so quick and easy to put together. Bake the squash ahead of time, then throw the ingredients together, and serve to the table only 10 minutes later. Makes a great lunch or dinner! Or use the leftovers for a snack!
1/4 cup chicken broth
1 cup sliced mushrooms
2 cups spinach
1/2 fresh tomato chopped
1 clove garlic minced
1 cup spaghetti squash cooked and prepared
1/4 teaspoon pepper
1/4 teaspoon basil
1/8 teaspoon red pepper flakes
1/4 cup grated cheese
Preheat oven to 350F.
In a bowl, mix together all the ingredients except cheese. Pour into a casserole dish. Sprinkle with cheese. Bake in the oven for 10 minutes or until heated through.
Serve. (Per Serving - 3.3 g carbohydrates) (serves 6)

Layered Spaghetti Squash Recipe
Preparing the squash then layering in individual bowls or a large family size glass bowl creates an interesting look and gets the taste buds going, before even lifting the fork to eat.
1 large spaghetti squash cooked and prepared
1 cup ricotta cheese
3/4 pound ground meat (your choice)
3/4 cups mozzarella cheese
1 1/2 cups spaghetti sauce
1/4 cup parmesan cheese
Cook squash. Cook meat. Heat ricotta cheese in microwave. Heat up spaghetti sauce.
Layer in a large bowl, or in individual bowls, squash, ricotta cheese, meat, mozzarella cheese, spaghetti sauce, then parmesan cheese.
Serve. (Per Serving 14 g carbohydrates, 6.6 g fiber) (serves 6)

Basic Spaghetti Squash Recipe
This is a good starting point. It is a place to get ideas, and think of new things to add to your squash. All you need is:
Flesh from 1 large spaghetti squash, (about 5 cups)
Miscellaneous ingredients of your choice. Ideas are below.
After cooking and preparing the squash start pulling out all the ingredients you like or feel like adding today, and mix it all together, and serve warm.
This can be any amount to your taste any of the following:
Garlic, salt, pepper and other herbs and spices that you like, fennel, dill, curry, red pepper flakes
Meat choices are endless, ground beef, ground turkey, diced chicken, pork strips
For cheeses there is Parmesan, Feta, Cheddar, mozzarella, blue
Vegetable choices are also endless, zucchini, beans, tomatoes, spinach, Swiss chard, broccoli, peppers
If you are adding tomato sauce, put it on at the end as a garnish. This will prevent the squash from becoming mushy.

Rotini Bake, Spaghetti Bake, Casseroles

This is a recipe for Rotini Bake. It is adapted from a traditional Spaghetti Bake recipe. This is the quick version as it calls for the jar of spaghetti sauce. It tastes even better and more personalized with homemade sauce. This is one of my favorite recipes.

2 lb ground beef

Meat Casseroles

2 26 oz jar of spaghetti sauce

1 8 oz package mozzarella cheese

1 8 oz package cheddar cheese

1 16 oz box of rotini noodles

1 medium onion chopped or 1 tablespoon onion powder

1 Tablespoon garlic powder

Non Stick Spray

Preheat oven to 350 Degrees

Technique

Step 1: Put a generous amount of water into a pan. Bring to a rolling boil. Boil noodles for 5 minutes. (Noodles will not be cooked all of the way). Drain noodles, set aside.

Step 2: Brown ground beef with chopped onion (or onion powder) and garlic powder. Drain well. Mix with rotini noodles. Add 2 jars of spaghetti sauce. Mix well.

Step 3: Spray a baking pan with non-stick spray. Add half of the spaghetti sauce, ground beef and noodle mixture to the bottom of a baking pan. Sprinkle half of the mozzarella cheese and cheddar cheese over the mixture. Add the other half of the spaghetti sauce, ground beef and noodle mixture. Sprinkle the remaining cheese over the top.

Step 4: Cover pan with Foil. Place in oven and bake for 30-45 minutes or until cheese is bubbly. Remove foil and bake another 15-20 minutes (or until golden brown)

You can also substitute the ground beef with ground turkey to make this a healthier option. This dish is best served with garlic bread and a side salad.

Ground Beef Spaghetti Casserole That's Diabetic Friendly

Whether you are a beginning cook or an experienced one, this is a recipe you will be proud to serve.  It is simple, easy and delicious.  This dish is easy to assemble and only needs a half hour to bake.  In this one dish you have grains, vegetables, meat, and dairy products.  Add a tossed salad or steamed fresh broccoli, some crusty bread, and you have an easy, healthy meal for your family to enjoy.  If you follow my blogs, you know I am big on family meal time.  I believe we need to spend more time in the kitchen and less in the fast food drive-through lanes.  Your family will eat better when you cook at home.  It doesn't have to be elaborate, just satisfying.  If your children are old enough, let them help by setting the table, putting the salad together, filling the water glasses, etc.  They can also help after the meal by joining in clearing the table, loading the dishwasher, etc.  It is a great time for parents and children to talk about their day and spend valuable time together.  This casserole is a great block to building a fantastic family meal!

Spaghetti Casserole

Ingredients:

1-large Egg

Meat Casseroles

½-cup Milk

8-ounces Spaghetti, uncooked

1-teaspoon Salt

½-teaspoon Black Pepper

½-teaspoon Garlic powder

½-pound Ground beef

½-pound Ground sausage

1-medium Onion, finely chopped

½-cup Chopped green chilies

½-cup Black olives, pitted and sliced

24-ounces Spaghetti sauce

2-cups (8 ounces) Mozzarella cheese, shredded

1-cup (4 ounces) Parmesan cheese, fresh grated

Instructions:

Cook spaghetti according to instructions on package; drain; rinse; drain again and set aside. In a medium bowl beat egg, milk, salt, pepper and garlic powder; add cooked spaghetti; toss to coat. Place coated spaghetti in a 9 x 13 x 2-inch baking dish.

In a large skillet, cook the ground sausage, ground beef, finely chopped onion, chopped green chilies and sliced and pitted black olives over medium heat until meat is no longer pink and drain. Add spaghetti sauce and mix well; spoon over the spaghetti mixture.

Bake uncovered at 350° for twenty minutes. Sprinkle with shredded mozzarella cheese. Bake 10 minutes longer or until the cheese is melted. Let stand for five to ten top with grated Parmesan cheese and serve warm with some nice toasty garlic bread.

Makes 6 to 8 servings

Note: Make this with different spaghetti sauces and give it a whole new taste. Change out the sliced black olives with sliced mushrooms or even green peas. Have fun and make different substitutions.

Meat Casseroles

GROUND BEEF SPAGHETTI CASSEROLE

12 oz whole-wheat spaghetti, cooked according to package directions, drained
1 small can black olives, drained and chopped
1 small jar of sliced mushrooms, drained and chopped
1 (28 oz) can whole tomatoes, drained and chopped
1 medium onion, chopped
1 tbsp olive oil
2 lbs lean ground beef
2 tsp oregano
1 tsp basil
2 cups shredded mozzarella cheese
1 can fat-free cream of mushroom soup
1/4 cup water

Saute onion in butter. Remove from pan and cook ground beef until browned. Drain and rinse with hot water. Return to skillet and add onion, olives, mushrooms, tomatoes and spices. Spray a large casserole dish with non-stick cooking spray. Layer into casserole as follows: 1/2 the spaghetti, 1/2 the meat mixture, 1 cup mozzarella; repeat with the remaining halves. Mix soup and water together until smooth; pour over casserole. Sprinkle top with Parmesan cheese if desired. Bake at 350 degrees about 1/2 hour until heated through and cheese melts.
