Meat Pie recipe - Easy Turkey Pot Pie recipe

Here's a great way to use up that leftover turkey.

2 (9-inch) unbaked pie shells

Meat Casseroles

1 (10.75 oz.) can condensed golden mushroom soup

1 cup turkey, cooked and chopped

1 (10 oz.) can mixed vegetables, drained

1/3 cup milk

Directions

Preheat oven to 400 degrees. Place one pie crust in an ungreased pie dish.

In a medium bowl, mix the mushroom soup and milk. Stir in the turkey and mixed vegetables. Pour the mixture into the pie crust in the dish. Top with the other pie crust; seal the crust edges by crimping with a wet fork.

Bake for 45 minutes, or until the crust is golden brown.

This is a hearty meat pie formula featuring ground pork, ground beef, mashed potatoes and spices.

2 (9-inch) unbaked pie shells

2 pounds lean ground pork

1 pound lean ground beef

1 1/2 cups mashed potatoes

Salt and pepper to taste

1 teaspoon ground nutmeg

1 egg white

Directions

Preheat oven to 375 degrees.

In a skillet, brown the ground beef and pork over medium high heat; cook until wholly brown. Drain on paper towels.

In a bowl, mix together the cooked meat, potatoes, salt, pepper and nutmeg.

Spoon the mixture into one of the pie shells. Cover with the second pie shell. Brush the top crust with egg white. Wrap aluminum foil around the edges to keep them from getting burnt.

Bake for 45 minutes. Take off the foil for the final 15 minutes of baking to brown edges.

A nice alternative to other meat pies, this fish pie formula features salmon, rice, mushroom soup and cheddar cheese.

2 (9-inch) unbaked pie crusts

2/3 cup white rice

1 1/3 cups water

2 onions, thinly sliced

1 tablespoon butter

1 (10.75 oz.) can condensed cream of mushroom soup

2 (6 oz.) cans red or pink salmon, drained and mashed

2/3 cup cheddar cheese, shredded

Directions

Preheat oven to 450 degrees.

In a medium saucepan, cook the rice in the water.

Line a pie plate with the pastry and set aside.

In a large saucepan, sauté the onions and mushrooms in the butter over medium heat.

In a bowl, join the cooked rice with the mushroom soup and spread half of the mixture over the bottom of the pie shell. Layer the mashed salmon over the rice mixture.

Layer the sautéed mushroom and onion mixture. Layer with remaining rice mixture. Sprinkle the grated cheese on top. Place the remaining pie crust on top and seal the edges. Pierce the top with a fork to vent.

Bake for 10 minutes. Sell out heat to 350 degrees and continue baking for an additional one 30 to 35 minutes.

Real Jamaican Jerk Chicken recipe

Jerk is one of the most popular styles of Jamaican cooking. It is used for cooking meat, traditionally pork or goat, but nowadays chicken and fish as well. All jerk dishes are spicy, even fiery, but they can be very tasty and are appreciated by many spice lovers.

The main underground behind the flavor of jerk is in the preparing of the meat. This is done by marinading the meat in a combination of spices known as "Jamaican jerk spice". Ideally, you should marinade the meat over night in the 'fridge and then cook the following day. Rather than just letting the marinade soak into the meat, I would suggest making some light cuts in the surface of the meat, and rubbing the marinade into these as well as the meat generally.

Meat Casseroles

As already mentioned, Jamaican jerk spice is a authentically a combination of some spices. It gets most of its flavor from two single ingredients, namely Jamaican allspice (also known as "pimento" or "pimenta") and Scotch bell peppers. Jerk spice also regularly contains some other spices such as garlic, cloves, cinnamon and thyme, and is regularly mixed with chopped onions and/or scallions before being applied to the meat.

The best way to cook jerk chicken is over a charcoal barbecue grill. Ideally, you should place some pimento wood or berries on the grill - but if this is not potential you can put some hickory or apple on the coals instead. Of course, barbecuing meat is not all the time possible, for example while the Winter or if you live in a city - in that case, you can instead roast the meat in a normal kitchen oven, and still get good results.

An Easy Meatloaf Recipe For A Busy Cook

There are as many meatloaf recipes are there are cooks. This one is my favorite, an easy meatloaf recipe that can be varied to suit your tastes. Start with the basic recipe and add seasonings from the list below to suit your family. You can vary the meats used and the seasonings.

To keep my meatloaf recipe easy, I use ground beef. Many cooks use a combination of ground beef, ground pork or ground veal. Some use sausage in their mixture. If you desire a mixture of meats, use 1/2 to 3/4 pound of pork, veal or sausage to 1 pound of beef. Using the seasoned Italian style bread crumbs seasons the meatloaf, making this recipe easy and quick to prepare. I don't actually even measure anything. I just dump the ingredients together using a reasonable amount of each. If the mixture is too moist, add more bread crumbs. If too dry, add more ketchup. It really is an easy meatloaf recipe that is foolproof.

Basic Easy Meat Loaf Recipe

1 1/2 pounds ground chuck

3/4 cup Italian style bread crumbs

2 eggs

1 large onion, finely chopped

1 1/2 teaspoon salt

1/2 teaspoon pepper

1 teaspoon each garlic powder and onion powder, optional

1/4 cup catsup + more for top if desired

2 Tablespoons Worcestershire sauce, optional but good

1. Preheat oven to to 375 degrees F.

2. In a large loaf pan or ovenproof baking dish, mix all ingredients.

3. Shape into loaf shape.

4. Bake at 375 for 1 hour or until done.

5. I like to cover the top with more catsup during the last 20 minutes of baking.

You can try additional seasonings such as diced bell pepper, chopped celery leaves, minced parsley and thyme. If using sausage, try adding finely diced apple, and eliminate the garlic, onion powder and Worcestershire sauce. Small diced vegetables such as potato, carrots, or peas can be added if you like. Some cooks add chopped olives or chopped pickles or hard boiled eggs. You can substitute canned soup for the catsup, pouring more over the top as it bakes. The variations are endless.

If you are blessed with leftovers of this easy meatloaf recipe, this makes a delicious sandwich filling the next day, but don't count on it. My family eats this up.

Recipe Potpourri Featuring Vintage Recipes From Grandma's House

This is a potpourri of recipes from my late mother's recipe collection.  These recipes are from a variety of places but all are quick, easy, economical, and tasty.  Now what could be better than that?  The first recipe is a simple turkey-rice casserole that is perfect for using up left-over chicken or turkey.  You know we don't want to throw away food since it costs a lot to feed our families today!  The second recipe is for Vinegar Dumplings.  How long has it been since you've had homemade dumplings?  They aren't hard to make and are very economical.  Why not try your hand with this recipe?  The third recipe is one I don't care for but I know that many of you do.  It is Magic Fruit Cake.  If you like old fashion fruit cake, give this recipe a try.  You might want to make some as gifts for the holiday season.

Easy Chicken Recipe - Stewed Chicken Trinidad Style

The word "stewed" means something cooked in hot liquid, usually hot water. You can stew lots of types of meat, poultry, or fruit. Stewing is a moist cooking method and if you are looking for recipes for moist chicken breast, you might like to cook it in this way.

Stewing is similar to poaching or braising. It is a technique, which is used for tougher cuts of meat, since it cooks slowly and stays succulent in the liquid. Stewing beef is great for making casseroles and similar dishes and you can either cook this type meat in a crockpot or in the oven. You can also cook it on the stove.

Meat Casseroles

There are various recipes for stewed chicken, including a New Orleans style dish, in which the chicken is poached in a garlic-infused chicken broth with plenty of onions. You can also stew chicken to make other dishes, for example Mexican tacos.

Fruit can also be stewed. Peel and chop an apple and simmer it in water until it is soft, then use a potato masher to make a puree. This is great served alongside pork chops or you can use it to top your breakfast cereal in the morning. Add a little cinnamon to make the apple sauce extra tasty.

The following recipe is from Trinidad and serves eight people. You can either use boneless chicken breasts and thighs or a whole chicken. To make it low fat, simply switch the coconut milk for chicken broth. If you have time, let the chicken marinate overnight for a richer flavor.

What you will need:

4 lb chicken pieces 1 teaspoon garlic 3 tablespoons fresh cilantro 1/4 cup brown sugar 1 tablespoon vegetable oil 1 teaspoon onion 3 tablespoons green onion 1 teaspoon red pepper flakes 1/2 tablespoon fresh thyme 1/2 cup canned coconut milk 1 tablespoon olive oil 1/2 teaspoon ground black pepper 1 teaspoon salt 1 tablespoon butter 2 tablespoons ketchup 1 cup water

How to make it:

Put the chicken in a shallow glass dish. Add the cilantro, garlic, green onion, thyme, salt, pepper, and onion to a food processor with the olive oil and puree it until you have a paste. Rub the chicken with this paste and let it marinate for at least half an hour.

Put the vegetable oil in a deep pot and heat it over a moderate heat. Add the sugar and cook until it has melted. Add the chicken and brown them, stirring all the time. Cover the pot and cook for a couple of minutes.

Pour in the coconut milk and water. Add the pepper flakes. Put the lid back on and cook the mixture for ten minutes over a moderate heat. Stir in the butter and ketchup. Keep cooking the chicken until it is tender. This will take about twenty five minutes. Taste the dish and season with more salt and pepper if necessary. Serve the chicken with the sauce and maybe some rice, noodles or potatoes too.

Old Fashion Recipe for Kellogg's Nachos Casserole

If you are cutting back on expenses even at the grocery store, and who isn't, this casserole recipe from the Kellogg Company should be in your recipe file.  This Nachos Casserole dish has almost everything you need in this one dish. It has meat, vegetables, dairy, and grain.  All you really need to do is add a salad and/or fruit and you have a complete meal.  What a deal--quick, easy, inexpensive, and quite tasty, too.

Mexican Casserole Recipe - Easy Mexican Casserole

You can spice up this recipe a little more by adding taco seasoning to the ground beef before you cook it.

1 pound lean ground beef

Meat Casseroles

2 cups salsa

1 (16 oz.) can chile beans, drained

3 cups tortilla chips, crushed

2 cups sour cream

1 (2 oz.) can sliced black olives, drained

1/2 cup green onion, chopped

1/2 cup fresh tomato, chopped

2 cups shredded Cheddar cheese

Directions

Preheat oven to 350 degrees. Prepare a 9x13-inch baking dish with nonstick cooking spray.

In a large skillet, cook the ground beef over medium high heat until brown. Stir in the salsa, reduce heat and simmer for 20 minutes, or until all the liquid is absorbed. Stir in the beans and heat thoroughly.

Spread the crushed tortilla chips into the bottom of the baking dish. Spoon the beef mixture over the chips. Spread the sour cream on top of the beef mixture. Sprinkle on the olives, green onion and tomato. Top with the cheddar cheese.

Bake for 30 minutes or until hot and bubbly.

Quick and Creamy Mexican Casserole

This creamy casserole features two kinds of soup, chili peppers, salsa and sour cream.

1 (10.75 oz.) can condensed cream of mushroom soup

1 (10.75 oz.) can condensed cream of chicken soup

1 (4 oz.) can chopped green chile peppers, drained

1-1/2 cups prepared salsa

1/4 cup milk

2/3 cup sour cream

8 (6-inch) flour tortillas

6 boneless chicken breast halves, cooked and cubed

2 cups shredded Cheddar cheese

Directions

Preheat oven to 350 degrees. Lightly grease a 9x13-inch baking dish.

In a medium bowl, combine the mushroom soup, chicken soup, chile peppers, salsa, milk and sour cream; mix until well blended. Place a layer of tortilla strips in the bottom of the prepared baking dish.

Layer in the following order: 1/2 of the soup mixture, 1/2 of the chicken, 1/2 of the shredded cheese. Repeat layers until you use up all of the ingredients. End with a layer of shredded cheese.

Bake for 45 minutes, covered, then remove the cover and bake for an additional 15 minutes.

Chicken Cornbread Bake

Two great flavor sensations come together in this casserole - chicken and cornbread.

1/2 cup margarine

1 onion, finely chopped

1 clove garlic, minced

1 (15.25 oz.) can whole kernel corn, drained

1 (15 oz.) can cream style corn

1 can cream of chicken soup

1/4 teaspoon salt

2 eggs

1 (8.5 oz.) pkg. corn bread mix

2-1/3 cups cooked chicken breast, chopped

2 tablespoons canned green chili peppers, chopped

1 (4 oz.) jar chopped mushrooms, drained

1/2 cup light sour cream

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1 (8 oz.) pkg. Monterey Jack cheese, shredded

Directions

Preheat oven to 375 degrees. Grease a 9x13-inch baking dish.

Melt the margarine in a small skillet over medium high heat. Saute the onion and garlic until tender for 4 to 6 minutes; set aside.

In a large bowl, combine the corn, cream style corn, chicken soup, salt and the eggs.

Beat in the muffin mix. Fold in the cooked onion mixture. Pour into the prepared baking dish.

In another large bowl, combine the chicken, green chilies, mushrooms, sour cream, salt and pepper. Spoon chicken mixture over the corn mixture to within 1-inch from the edge. Sprinkle the top with cheese.

Bake for 35 to 40 minutes or until the edges are golden brown.

A Hearty English Chicken Casserole Recipe

When the weather is cold and gray and you fancy something hearty and warming for dinner, sometimes nothing but a casserole will do. One of the nicest ways to cheer up your family on a cold day is to make an authentic English chicken casserole recipe with dumplings.

There are various recipes for casseroles and beef and chicken feature in a lot of them, along with typical winter vegetables, herbs and other delicious ingredients. The following recipe has quite a few ingredients in it but the preparation is simple and the flavor is amazing. Unusual walnut dumplings liven the dish up and stilton cheese and English ale add a wonderful taste.

Meat Casseroles

You will also like the ale, sage, mustard, bacon, garlic, thyme, and other full-flavored ingredients. All these ingredients work nicely together and blend perfectly over the long, slow cooking time, to result in one of the most delicious casserole recipes ever created. It smells heavenly while it cooks and the flavor is amazing.

What you will need:

4 oz unsalted butter 8 chicken pieces 2 oz all purpose flour 4 leeks, in 2 inch pieces 2 sticks celery, in 2 inch pieces 1 chopped yellow onion 4 chopped sprigs thyme 4 chopped cloves garlic 8 chopped strips bacon 1 tablespoon Dijon mustard 1 bay leaf 1 pint chicken stock 2 peeled, chopped parsnips 8 oz peeled, chopped rutabaga 12 1/2 fl oz English ale 1 teaspoon dried sage 2 chopped carrots 1 teaspoon white sugar 1 teaspoon malt vinegar 1/2 teaspoon black pepper

For the dumplings:

2 egg yolks 1 oz chopped walnuts 1 3/4 oz chopped stilton cheese 1/2 teaspoon salt 1 3/4 oz suet 3 1/2 oz all purpose flour 1/4 teaspoon black pepper 1/4 teaspoon ground nutmeg

How to make it:

Preheat the oven to 350 degrees F. Season the flour with sage, salt and pepper and dust the poultry in this mixture. Heat the butter in a big casserole dish and brown the chicken all over. Take the chicken out. Fry the bacon in the dish for a couple of minutes, then add the onion, leeks, celery, garlic, and carrot and fry these for five minutes, stirring often.

Add the sugar, ale, thyme, mustard, and vinegar and bring the mixture to a boil, then add the stock, rutabaga, parsnips, bay leaf, and chicken. Cover the dish and bake for ten minutes. Turn the heat down to 285 degrees F and cook for another hour and a half.

Recipe For Chicken Casserole With Noodles and Vegetables

Chicken casserole is a warm and filling meal. It is convenient and easy to prepare and can be very economical. I enjoy chicken casserole with my family regularly. It is ideal for weekday family meals, but with the appropriate ingredients, it can be used for casual dinner parties.

Here is my favourite recipe for a tasty chicken casserole made with noodles and vegetables. It is a meal in one dish.

Meat Casseroles

Ingredients

6 ounces of uncooked noodles

1 cup milk

1/3 cup of butter

1 teaspoon salt

1 cup sliced celery

6 tablespoon flour

2 cups diced chicken

6 ounces mushroom pieces

2 cups chicken broth

1 ounce jar pimento

1/3 teaspoon pepper

1 cup shredded cheese

1 grated carrot

1 cup chopped onion

1 teaspoon mixed herb seasoning

Cooking instructions

1. Cook the noodles until tender, drain and set it aside.

2. Cook chicken and cut it into small pieces (diced).

2. Put a big saucepan on a low heat and melt the butter in it.

3. Pour the grated carrot, sliced mushrooms and chopped onions into the saucepan. Cook this combination until tender.

4. Add the flour to the content of the saucepan and stir until smooth.

5. Add the pimento, salt, mixed herb and pepper.

6. Slowly add the chicken broth and the milk and stir until the sauce becomes thick.

7. Pour all the content of the saucepan into an oven proof casserole dish. Add the chicken and the

noodles to it and sprinkle cheese over the top.

8. Bake the chicken noodle casserole in a pre-heated 350 oven for 25 to 30 minutes.

9. Ensure that it is thoroughly cooked and the cheese is melted.

Brandied Moose Meat Roast Recipe

In this Brandied Moose Roast recipe you will discover how to cook and turn naturally dry moose meat into a deliciously tender roast dish, perfect for any family gathering or guest dinners. Chili Relleno Recipes - Chili Relleno Casserole Recipe

Whip up this chili relleno casserole when you're in the mood for a hearty Mexican meal night. Serve as is, or with a side of Spanish rice, tortilla chips and salsa.

2 (7 oz.) cans whole green chile peppers, drained 8 oz. Monterey Jack cheese, shredded 8 oz. Longhorn or Cheddar cheese, shredded 2 eggs, beaten 1 (5 oz.) can evaporated milk 2 tablespoons all purpose flour 1/2 cup milk 1 (8 oz.) can tomato sauce or enchilada sauce
Directions

Meat Casseroles

Preheat oven to 350 degrees. Spray an 8x8-inch or 9x13-inch baking dish with nonstick cooking spray. Layer half of the chilies evenly on the bottom of the baking dish. Sprinkle half of the Jack and Cheddar cheese on top and cover with remaining chilies. In a bowl, mix together the eggs, milk and flour. Pour over the top of chilies. Bake for 25 minutes. Remove from the oven and pour the tomato sauce evenly over the top of casserole. Continue baking for another 15 minutes. Sprinkle with remaining Jack and Cheddar cheese before serving.

3 cups Monterey Jack cheese, shredded 1 1/2 cups Cheddar cheese, shredded 2 (4 oz.) cans chopped green chilies, drained 2 eggs 2 tablespoons milk 1 tablespoon all purpose flour
Directions

Preheat oven to 375 degrees. In a greased 8-inch square baking dish, layer the Jack and Cheddar cheeses in the bottom of the dish. In a bowl, beat the eggs, Add in the milk and flour. Pour over cheese. Bake for 30 minutes, or until set. Cut into small squares. Serve warm.

Directions

Preheat oven to 375 degrees. Grease a casserole dish with 1/2 tablespoon of olive oil. Open four cans of the green chilies. Cut chilies lengthwise and remove their seeds; drain on paper towels. Insert cheese pieces into the green chilies. Separate the biscuits and roll each one out flat. Cover each chili with a biscuit and seal well. Place wrapped chilies inside a casserole dish and bake for 10 minutes, or until the dough is halfway cooked. Remove the casserole from the oven. Cut the remaining chilies lengthwise and layer them down flat on top of each wrapped chili relleno. In a pan, sauté the onion in 1 tablespoon of olive oil; place onions on top of chilies. Add remainig cheese on top. In a bowl, beat the egg whites and fold them into the egg yolks. Spread egg mixture over the cheese layer. Bake another 15 minutes, or until golden brown. Let stand for 10 minutes before serving.

Filipino Recipes - Shrimp Meat Tortilla (Omelet) Recipe - Pinoy Food

The good thing about tortillas is the fact that you can use almost anything to whip into a wonderful recipe. For this post, I combine pork and shrimps (two of my favorites) into a yummy Shrimp Meat Tortilla good for young and old folks alike. I say so, because from my Grandma down to my little 2-year old boy, this all-around recipe can be served any day. I prefer to serve this during breakfast to break the monotony of cooking plain eggs. With meat and shrimps in the mix, you can tease the taste buds of the people you love. An ordinary breakfast can be turned into something full of smiles and praises whenever I place this dish on the table.

There are still many versions of tortilla that you can prepare out of mixed meats but I always find this recipe as the best meat combination. You can trust me on this!

Meat Casseroles

Ingredients:

1 cup ground pork ½ cup shrimps shelled(cut finely) 1 clove garlic (minced) ½ cup onions (chopped) 2 eggs ½ cup sliced tomatoes 4 tbsp shortening Salt and pepper (to taste)

Cooking Procedure:

Sauté garlic, onion and tomatoes in shortening. Add ground meat then shrimps and continue cooking until well cooked. Season with salt and pepper. Remove the cooked mixture from the pan and set aside. Grease the pan with enough shortening and line with a banana leaf. Beat the eggs and add the cooked mixture. Pour the mixture over banana leaf and let cook. Line a plate with another banana leaf and turn the tortilla upside down. Put it back in the pan to brown the other side. Serve hot.

Meat Pie Recipe - Easy Turkey Pot Pie Recipe

Here's a great way to use up that leftover turkey.

2 (9-inch) unbaked pie shells

Meat Casseroles

1 (10.75 oz.) can condensed golden mushroom soup

1 cup turkey, cooked and chopped

1 (10 oz.) can mixed vegetables, drained

1/3 cup milk

Directions

Preheat oven to 400 degrees. Place one pie crust in an ungreased pie dish.

In a medium bowl, mix the mushroom soup and milk. Stir in the turkey and mixed vegetables. Pour the mixture into the pie crust in the dish. Top with the other pie crust; seal the crust edges by crimping with a wet fork.

Bake for 45 minutes, or until the crust is golden brown.

This is a hearty meat pie recipe featuring ground pork, ground beef, mashed potatoes and spices.

2 (9-inch) unbaked pie shells

2 pounds lean ground pork

1 pound lean ground beef

1 1/2 cups mashed potatoes

Salt and pepper to taste

1 teaspoon ground nutmeg

1 egg white

Directions

Preheat oven to 375 degrees.

In a skillet, brown the ground beef and pork over medium high heat; cook until thoroughly brown. Drain on paper towels.

In a bowl, mix together the cooked meat, potatoes, salt, pepper and nutmeg.

Spoon the mixture into one of the pie shells. Cover with the second pie shell. Brush the top crust with egg white. Wrap aluminum foil around the edges to keep them from getting burnt.

Bake for 45 minutes. Remove the foil for the final 15 minutes of baking to brown edges.

A nice alternative to other meat pies, this fish pie recipe features salmon, rice, mushroom soup and cheddar cheese.

2 (9-inch) unbaked pie crusts

2/3 cup white rice

1 1/3 cups water

2 onions, thinly sliced

1 tablespoon butter

1 (10.75 oz.) can condensed cream of mushroom soup

2 (6 oz.) cans red or pink salmon, drained and mashed

2/3 cup cheddar cheese, shredded

Directions

Preheat oven to 450 degrees.

In a medium saucepan, cook the rice in the water.

Line a pie plate with the pastry and set aside.

In a large saucepan, sauté the onions and mushrooms in the butter over medium heat.

In a bowl, combine the cooked rice with the mushroom soup and spread half of the mixture over the bottom of the pie shell. Layer the mashed salmon over the rice mixture.

Layer the sautéed mushroom and onion mixture. Layer with remaining rice mixture. Sprinkle the grated cheese on top. Place the remaining pie crust on top and seal the edges. Pierce the top with a fork to vent.

Bake for 10 minutes. Reduce heat to 350 degrees and continue baking for another 30 to 35 minutes.

Water Content in Ham Steaks Can Alter Recipe Results

Cooking for two can be a challenge. I want to fix interesting and nutritious meals, but I don't want the refrigerator to turn into a forest of leftovers. So I often buy a center cut ham slice. A medium slice, not double thick, serves four. I get one dinner from it and the rest of the meat winds up in soup, casseroles, and egg dishes.

My recent experiences with this cut of meat have not been good. In fact, the excess water almost ruined one casserole and I had to cook my scrambled eggs with ham longer than usual.

According to the US Department of Agriculture (USDA), manufacturers are required to list the water content on the label. This can work well in theory and not in practice. During a recent trip to the grocery store I read all of the center cut labels. Only one manufacturer listed the water content and it was 23 percent of the weight, which I consider a high percentage.

Ham is divided into three categories, fresh, cured, and smoked. To make ham what it is, pork is cured with a solution made of salt, sodium, potassium nitrate, sometimes sugar, seasonings and sodium ascorbate, which is a preservative. Manufacturers say these injected ingredients give the meat flavor and keep it moist and tender.

But one of the packages I checked said the product contained soy protein, an ingredient I avoid because I am allergic to it. Why would a manufacturer inject soy protein into ham? The only reason I can think of is to make the product weigh more, which means you pay more.

"Ham--Glossery Term," an article on the Recipe Tips website, discusses the protein content in ham. There are four basic levels and the highest, 20.5 percent, indicates a prodect with no added water. The next protein level is less than 18.5 percent, and indicates meat with natural juices. A level of 17 percent tells consumers that some water has been added. And the lowest protein level "represents a ham product in which any quantity of water may have been added."

Meat with a high water content has less protein and, more important for the cook, is a bit rubbery.

Tina Danze, in a "Dallas Morning News article, "A Guide to the Right Easter Ham for You," also discusses the water-added issue. If the meat has been injected with a low amount of water that evaporates during cooking, the USDA considers it a no-water-added product. Canned hams have water added, Danze notes, and she doesn't think they heat well.

Still, this cut of meat has advantages. For one thing, it is usually cut from the center, which is the leanest part of the meat. Convenience is the main advantage. Some companies that sell glazed, spiral-sliced meat also sell center cuts. The moral of this meaty story: Check the label for water content. If you are going to use the meat in a casserole, cream sauce, or fritatta, fry it first to remove excess water.

Cheese Stuffed Chicken Breasts

Meat Casseroles

Ingredients:

4 chicken breasts
1 tablespoon of Parmesan cheese.
2 oz of mozzarella cheese
1 teaspoon chicken flavored bouillon
1 teaspoon parsley
1/4 cup of fine breadcrumbs
1 medium beaten egg
salt and pepper to taste

Make a long incision in each chicken breast and sprinkle the mozzarella inside. Secure the incision with a toothpick or string. Place the chicken breasts into a baking dish and brush each piece with the beaten egg. Mix the remaining ingredients together and sprinkle over the chicken. Cover the dish with aluminum foil and bake for 40 minutes at 375 degrees F.

Cheddar Ball

2 (8 ounce) blocks of cream cheese
1/2 cups relish
1 1/2 cups grated cheddar
2 teaspoons finely chopped onion
1/2 teaspoon salt
1/2 cup chopped nuts (slivered almonds work especially well)

Mix together everything but the nuts. Shape the mass into a ball and roll in the nuts so that it is completely coated. Place in an air-tight container or wrap with plastic wrap and refrigerate until thoroughly chilled.

Cheddar 'n Crab Meat Casserole

12 oz Crab meat
3 oz grated cheddar
3/4 cup skimmed milk powder
3 tablespoons of plain flour
1/4 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon mustard powder
1 cup water

In a small pot mix the flour, mustard and milk powders, and salt and pepper. Add the water slowly - be sure to mix continuously as the mixture thickens. Remove from heat and stir in the cheese until melted. Add the crab meat. Pour the mixture into a casserole dish and bake at 350 degrees F until thoroughly cooked.

Cheese on Toast with a Twist

Toast
Grated Mozzarella
1 Slice of Swiss or Muenster Cheese
4 (Thin) Slices of Turkey or Ham Sandwich Meat
Salt and Pepper to Taste

Make toast to a medium brown in the toaster. Top with Swiss/Muenster slice, meat, salt and pepper, and top with sprinkled mozzarella. Heat in a toaster oven (or a regular oven if you're willing to wait a bit) until cheese is melted and starts to brown.

Ultimate Macaroni and Cheese Recipe

When most of us think of Macaroni and Cheese, we can not get past the image of the plastic bag of miniature elbow noodles and orange powder that we prepare for our kids. Thankfully, a generation of fans of that boxed concoction have now grown up and invented many delectable variations that are more compatible with the mature palate. Creativity knows few bounds, and the variations are countless. But after experimenting with numerous combination's, we found this to be the creamiest, most flavorful Mac and Cheese recipe yet. Save the elbow noodles and orange powder for the kids.

Ingredients

Meat Casseroles

16 Ounces of seashell pasta 2 1/2 Tablespoons of Butter (we recommend Fresh Amish Butter) 2 Tablespoons of all-purpose flour 2 cups of milk 4 Ounces of Grated Smoked Gouda cheese 4 Ounces of Grated Medium-Sharp Orange Cheddar cheese 1/2 teaspoon of salt 1/4 teaspoon of ground white pepper Dash of garlic powder 1 cup of breadcrumbs

Preparation

Preheat oven to 375 degrees (190 degrees C). Lightly grease a 10-inch casserole dish. Bring a large pan of lightly salted water to a boil, add pasta and cook for about 8-10 minutes until tender; drain. Melt the butter in a small saucepan over medium heat. Stir in the flour and cook until it is consistent. Stir in the milk, salt, pepper, and garlic. Simmer, stirring constantly until sauce is thick and smooth enough to coat the back of a spoon. Remove from heat and stir in both cheeses. Combine finished pasta and cheese sauce. Transfer to prepared casserole dish. Spread breadcrumbs over top. Bake in preheated oven for 15 minutes or until heated through.
