Casseroles: Perfect for Any Meal

Casseroles are said to have originated from a time where households needed a quick meal occasionally. Today with our busy schedule, it seems we need a quick fix all the time.

For a Quick Breakfast

Meat Casseroles

You can try green chili strata, where you only need grated cheese, milk, green chili pepper, oregano, flour tortillas, ground cumin and salt. Lightly oil the bottom of a baking or casserole dish. Fill the bottom of the dish with tortillas and top with half of the cheese and green chili pepper. Arrange a second layer over the first. Mix milk, eggs, salt and seasonings in a bowl. Arrange egg mixture over layered ingredients. Put the casserole in the fridge for the night and then bake at 350 degrees F. for 30-45 minutes the next day.

One the Kids Will Love

The spaghetti casserole is so easy to make, and you can easily find the ingredients in your pantry. Simply cook spaghetti as indicated in the package instructions and drain. Add bottled or grated fresh Parmigiano-Reggiano cheese and butter and toss the pasta for a light coating. Pulse or puree canned, peeled tomatoes and garlic. Combine the puree mixture and the spaghetti sauce, along with Italian seasonings, heavy cream and mozzarella cheese. Finally, add in the spaghetti. Spoon the mixture evenly into a baking dish sprayed with oil. Top with grated Parmesan and place a lid over the dish. Bake casserole in a preheated 350 degree F. oven for half an hour, or until heated through. Sprinkle with mozzarella cheese, return to the oven and heat until cheese has melted and browned.

Late-Night Fix

For a midnight snack, try the hot brown casserole. This dish derived from the Kentucky Hot Brown Sandwich created by Chef Fred K. Schmidt at the Brown Hotel in the 20's. It is made as an alternative to ham and egg late-night dinners. Turkey or chicken are diced and layered at the bottom of a baking dish. Melted butter and flour are cooked in a saucepan on the stovetop for a bit before milk is gradually whisked in. Next, eggs and the white sauce are incorporated together, along with pepper, grated fresh Parmigiano-Reggiano cheese and coarse salt. The egg mixture is spooned evenly over the meat. The dish is topped with Colby Jack cheese and baked for 20 minutes at 350 degrees F. until heated through, the cheese has melted and the top is golden brown.

Summer - The Perfect Time For a Meat Vacation

It is summer, and summer is vacation time. So if you are staying home this summer, take a vacation anyway-a food vacation. You've been careful all year to eat less meat and more legumes. Now is the time to get out the grill and enjoy your steaks. The news media are telling us to take a "stay-cation." Well, turn your "stay-cation" into a "steak-cation!" And who is the king of the steaks? King Porterhouse! This cut of steak has plenty of marbled fat to make it juicy and flavorful and, most important, tender. Porterhouse is one of the most tender cuts of beef. Picture the porterhouse steak in your head. It is that nice, thick triangular steak with the bone down the middle. The bone divides the steak into two neat sections.

The larger one is classic, wonderful porterhouse, a treat to eat. But the smaller one is the treasure. It is even more flavorful and juicy. If someone divides the steak and gives you the choice of pieces, follow your mother's etiquette instructions and take the smaller piece. And that leaves the bone. Meat processors these days always want to remove the bones. Supermarket meat departments do not give us half the bones that our parents could buy. But where is the flavor? Next to the bone. You know not to gnaw on the bone in a restaurant (Mom's etiquette again), but if you are in your backyard, anything goes! Chew! Gnaw! Lick! Slurp! Enjoy every fiber of flavor on that porterhouse bone.

Meat Casseroles

There are a couple of schools of thought when it comes to cooking steaks. The first is gas grill versus charcoal grill. The second is marinated versus gloriously naked.

This is just my opinion, but, if you're going to use a gas grill, you might as well broil your steak in the kitchen. You will not have to wave off the flies, mosquitoes, and yellow jackets, and the steak will taste pretty much the same. I know, you put the lava rocks in the bottom of the grill. Supposedly, the fat drips from the steak, hits the rocks, and gives the steak a grilled flavor. But, to me, it does not work. A charcoal fire is a lot more mess and work, but it is worth every bit of the bother. You absolutely have to be sure to allow the fire to die down to ash-covered embers, and you need to keep a spray bottle of water handy to put out the licking flames, but the result is an aroma that will call hungry carnivores from hundreds of feet and a flavor like no other.

The second question is to marinate or not to marinate. In my opinion, the native flavor of the charcoal-grilled steak is so satisfying that adding other flavor via a marinade reduces the perfection of the pure steak flavor. So, sprinkle on a little salt (go on, salt it-it is vacation, remember?) and maybe a little pepper, but that's all the perfect porterhouse needs.

What is it about comfort food?

We all need a bit of comfort food when we're cold, tired, stressed, down in the dumps and good old home cooking fits the bill every time. How to Make the Perfect Dish For Pitch-In Meals, Family Reunions, Picnics, and More

Are you tired of taking the same old dishes to family reunions, office pitch-ins, church potlucks, or picnics? For something a little different try this recipe for 3-Meat Baked Beans. Baked Beans are always a good standby but surprise everyone this time with these baked beans with meat. The Bacon Topped Tater Tot Casserole is a more unusual potato dish. Both dishes will go over well with your family and friends.

3-MEAT BAKED BEANS

1/2 lb smoked sausage, cut in thin slices

1/2 lb. ground beef

3 tbsp chopped onion

5 slices bacon, cooked, drained and crumbled

2 cans pork and beans

1/3 cup ketchup

3 tbsp Splenda Brown Sugar Blend

1 1/2 tsp molasses

1 1/2 tsp Worcestershire sauce

1 1/2 tsp prepared mustard

Preheat oven to 350 degrees.

Combine ground beef and onion in a skillet and cook until meat in browned, stirring to crumble. Drain and rinse with hot water, draining again. Combine the beef mixture with the remaining ingredients. Pour mixture into a 2-quart casserole dish that has been sprayed with a nonstick cooking spray. Bake, uncovered, at 350 degrees for 30 minutes.

BACON TOPPED TATER TOT CASSEROLE

1 can (12-oz) fat-free evaporated milk

1 can (10 3/4-oz) condensed cream of chicken soup, undiluted

1 cup (8-oz) reduced-fat sour cream

1/4 cup butter, melted

1 tsp onion powder

1 tsp garlic powder

1 pkg (32-oz) frozen Tater Tots

1 cup shredded cheddar cheese

3/4 cup crumbled crisp-fried bacon

Preheat oven to 350 degrees.

In a large mixing bowl, combine the evaporated milk, soup, sour cream, butter, onion powder, and garlic powder until blended. Gently fold in the Tater Tots. Spray a 13x9x2-inch baking dish with nonstick cooking spray and pour the mixture into the pan. Sprinkle the top with the cheese and bacon (reserve bacon and add during last 5 minutes of cooking, if desired). Bake, uncovered, at 350 degrees for 30 to 35 minutes or until bubbly and heated all through.

Cast Iron Cookware - The Perfect Casserole Dish

For a long while I have been experimenting in my kitchen hoping to create the culinary classic cast iron casserole dish. My ability to cook isn't great; neither is my technical understanding of food and the intricate combinations. However, my desire and passion for cooking is immense and it is this enjoyment which drives me on to find new pastures in the culinary world.

My kitchen which is modest in size has friendly appeal and I believe lends itself to the discerning Cook. The kitchen area is populated with the basic cupboards, shelves and cooking implements. However, my pride and joy is the cast iron cookware pans, skillets, and casserole dishes which were presented to me as a gift a few years ago.

The wide range of cookware and cooking implements certainly does not make my ability any greater or more technical, yet with in reason, provides a basic belief and assistance which gives me hope. By this I mean that having the comfort of sound, well crafted cooking utensils, I am less likely to destroy a culinary creation. The whole heating process through enameled cookware offers even heat dispersion and distribution which aids the cooking process. In essence this means food preparation, particularly less tender cuts of meat can enjoy an even and slow cooking process which enhances their tenderness and succulence.

Recent creations have included beef stroganoff, Hungarian goulash, maple and sweet meat pie, Irish stew as well as a delicious Italian Bolognese. A very good tip which I have acquired from asking a Chef friend of mine is to ensure that the cookware casserole is well seasoned. Cast Iron cookware due to its very nature needs to be nurtured and delicately prepared as the enamel surface, once having the correct viscosity, embellishes the perfect non-stick cooking surface.

So understanding food isn't a necessity? Well, I have to admit it is become very much a basic requirement. Since I have begun to read around the subject, take advice my expertise has grown considerably. My confidence is unrecognisable and for the first time ever I have extended my skills to a new level of understanding. The introduction and incorporation of cast iron cookware has given my world of cooking a whole new dimension which when combined with my diligence has surpassed my every expectation.

In summary, I have experienced new emotions when cooking and I have witnessed some wonderful culinary creations relative to what I was producing previously for which I have immense pride. It is been a fabulous journey and I would endorse and encourage anyone reading this article to experience the same delightful images and messages. Cooking is as personal as your kitchen, so go and enjoy!
