What is the kitchen Jerk?

Jerk is a traditional Jamaican cuisine. The name (in fact both the word "asshole" and "jerky" in fact derives from the Quechua Indian language "jerky" which means dried meat - idea is to cook thin slices of meat over an open fire, smoking, as to preserve meat.
