In a 10 or 12-inch skillet crumble and cook the ground beef with the crushed garlic and onion until the meat is browned; drain off excess fat. Stir the chili powder and the tomato sauce into the meat mixture. Spoon the meat combination into the prepared baking dish. Sprinkle the cheese evenly over the meat mixture. Spoon the pinto beans over the cheese. Prepare the cornbread mix according to the container directions and pour the batter over the beans. Bake at 400 degrees approximately 25 minutes or until the cornbread is browned.

Variations:

If you don't want the extra spice of Mexican cornbread, use a yellow or white cornbread mix pouch. For a bit of a sweet taste, use Jiffy Cornbread mix.

If you like more heat, use pepper jack cheese instead of cheddar.

If you don't like to use red meat, substitute lean ground chicken or turkey for the ground beef. You will need to add a tablespoon of canola oil to the skillet before browning the meat.

5. Chip dip: Mix meat loaf with salsa and Velveeta, or similar cheese. Microwave until cheese is melted. Mix well and serve with tortilla chips.
6. Sloppy Joes: Put meat loaf into a frying pan with ketchup, mustard and barbeque sauce. Simmer for 10-15 minutes on low heat. Serve with pickles on buns.
7. Patty Melts: Slice the meat loaf into medium slices (about burger thickness). On a frying pan or griddle, place a piece of buttered bread, butter side down. Place the meat loaf slice on the bread with a slice of cheese on it. Toast another piece of bread on the griddle for the top. Sauté onion rings and place on the meat loaf and cheese combination. Top with the other piece of bread and serve with desired condiments.
8. Taco Salad: Chop meat loaf in a frying pan and cook on medium heat. Add a container of taco seasoning and whole of water indicated on the package. Simmer for 10-15 minutes. Serve with tortilla chips, lettuce, cheese, sour cream and tomatoes.
9. Spaghetti Sauce: Add crumbled meat loaf to a sauce pan. Add two cans of tomato sauce, ½ tablespoon Italian Seasoning, and 1 teaspoon of salt. Simmer for 15-20 minutes. Serve with your favorite cooked noodles.
10. Biscuits and gravy: Crumble meat loaf into a sauce pan and set to medium heat. Add 2 tablespoons of flour and stir until coated. Add 2 cups of milk and stir until thickened. Add salt and pepper to taste and serve over biscuits.

Hamburger Casserole Recipes - Mexican Hamburger Casserole

The South of the border flavors gives this casserole a real boost.

1 pound ground beef

Meat Casseroles

1 onion, chopped

1 stalk celery, chopped

8 ounces egg noodles

1 (15 oz.) can chili

1 (14.5 oz) can peeled and diced tomatoes

1 (15 oz.) can whole kernel corn, drained

1/4 cup salsa

1 (1 oz.) pkg. Taco seasoning mix

Directions

Preheat oven to 250 degrees.

In a large skillet, sauté the ground beef, onion and celery over medium heat for 10 minutes, or until the meat is wholly brown. Drain the fat out of the pan and set aside.

In other saucepan, cook the noodles agreeing to package directions. Drain water out of the noodles and stir in the meat mixture, chili, tomatoes, corn, taco sauce and the taco seasoning mix; mix well.

Pour aggregate into a 10x15-inch baking dish.

Bake for 20 minutes or until wholly heated.

In the skillet, melt the butter. Add in the flour; stir and whisk for 5 minutes. Slowly whisk in 3 cups of milk, then the cream. Season with salt and pepper and take off from heat.

Spread a small estimate of the sauce aggregate in the bottom of a 9x13-inch baking dish. Alternate layers of potatoes, onions, ground beef, cheese and sauce, with 2 to 3 layers of each. Cheese should be last layer.

Bake for 45 to 55 minutes or until the potatoes are tender.

Layer meat aggregate in bottom of baking dish. Place broccoli on top. Sprinkle evenly with cheese.

Bake for 1 hour or until casserole is bubbly and lightly brown.

Start by heating a wok or non-stick skillet with about 2 tablespoons of canola oil and a few drops of sesame oil on high heat. When the oil is piping hot and just starting to smoke, add the beef strips and a pinch of salt.

Once the beef strips are about halfway done, add the onions and peppers. Once they are also halfway done, add the mushrooms. Allow all to cook, stirring frequently, until the beef is just about cooked through.

Herb Encrusted Beef Tenderloin - Grill Time special

Step 2 - Tie. - You will need some butcher twine to perfect this step. The tenderloin has a thick end and a narrow end, called the tail. Fold the tail toward the head and tie with the butcher twine. Before you do though, season the interior of the tenderloin, with ground pepper and organic thyme. Use about one tablespoon of thyme and be fairly liberal with the pepper. Tie the meat with twine about every two inches.

Step 3 - Herb Encrusted Seasoning. - Place the tenderloin in a shallow pan or baking dish. Pepper both sides and rub with garlic. Use crushed garlic and apply liberally to all sides of the tenderloin. Mix two Tbs of organic rosemary and one Tbs of thyme together and sprinkle over all sides of the meat. Finally, pour about 1/3 cup of olive oil over it and make sure all these ingredients are rubbed in well. Cover, set aside and let it marinate 2-4 hours.

Step 4 - Grilling Time. About an hour before you are ready to grill bring the meat to room temperature. If you are using a charcoal grill prepare the coals so they are red hot ready. Gas grill users will want to preheat and make sure the grate is hot. When ready place the tenderloin on the hot grill. Careful, it will flame up. Be sure to turn the tenderloin so that all sides are exposed to the hot grill and each turn results in searing the meat. That will wish about 3 - 5 minutes a side.

Step 5 - prepare to Serve. When the internal temperature of the tenderloin reads 110 degrees take off the meat and place on a platter. Cover the entire platter with aluminum foil and let it rest for 15 -20 minutes. Internal temperature should rise to about 130 degrees which will effect in a exquisite medium rare cut.

Serves 6

A recipe which has been in our family for years and was always one of my mother’s favourites.  It is a lovely comforting dish for cold winter evenings and can be left simmering slowly in the oven whilst you are out, ready for your return.
Ingredients:
1.25 kg round or chuck steak
Flour
Olive oil
Butter
Black pepper
4 tablespoons cognac
2 carrots
1 leek
4 shallots
Lemon juice
1 medium onion
1 clove garlic
1 bouquet garni
Half a bottle of Red Burgundy
Beef stock or water to cover
18 baby onions
Sugar
12 button mushrooms
Finely chopped parsley

Method:
Remove excess fat from the beef, cut into large cubes and roll in flour.  Heat 2 tablespoons of olive oil and 2 tablespoons of butter in a large frying pan.  Brown the meat, season and add the cognac.  Ignite the cognac, then when burned off, put the meat into a casserole.  Coarsely chop the carrots, leek, shallots, onion and garlic and cook in the oil remaining in the pan.  Transfer to the casserole with the meat.  Add the bouquet garni.  Pour over all but four tablespoons of the wine and enough water or stock to cover.  Put the lid on the casserole and cook in a moderate oven (370F) for 1.5 to 2 hours.  Remove from the oven, skim off any fat on the sauce, then gradually stir in 1 tablespoon of flour.  Put the lid back on and return to the oven for a further 2 to 3 hours.  When the meat is nearly ready brown the baby onions in butter in a saucepan with a little sugar.  Add the remaining 4 tablespoons of red wine, cover and cook over a low heat until the baby onions are almost tender.  Meanwhile sauté the mushrooms in the remaining oil and butter and a little lemon juice.
When the meat is tender, remove the bouquet garni, correct the seasoning, add the onions and mushrooms and sprinkle with finely chopped parsley.

Crock Pot Casseroles are the Quintessential One Dish Meal

I'm a fan of casseroles - meat, vegetables, and carbohydrates all in one dish. But when you categorically take a look, you perceive as you're cooking that casseroles are truly Not a one dish meal. You have a pot to cook the noodles, a strainer to drain them, a pan to brown the meat, a pot to heat the cream base and combine everything in, and a baking dish to bake it in. That doesn't seem like one dish; it seems more like five.

Then I realized there's categorically no conjecture why you couldn't make casseroles a one dish meal by production them in your crock pot. Yet, to be fair, it's not one dish. 2)If you are using sour cream, add during the last 30-45 minutes of cooking.

2 cups cooked, drained noodles
1 tbsp margarine, melted
5 tbsp grated Parmesan
4 to 5 slices cooked turkey
1 cup milk
1 cup shredded Cheddar cheese

Mix noodles, margarine, and half of the Parmesan cheese. Pour into a greased baking dish. Top aggregate with turkey slices. In saucepan, heat milk and Cheddar cheese until cheese melts. Pour over turkey and top with remaining Parmesan. Bake at 350 degrees for 40 minutes.

Tamale Pie

2 lb hamburger meat
2 medium onions, chopped
1 tbsp chili powder
1 bell pepper, chopped
1 cup vegetable oil
2 tsp red pepper
1 1/2 tsp salt
1 can whole kernel corn
1 can diced tomatoes
2 cups corn meal
1 cup milk
3 eggs

In a large skillet, brown hamburger meat in oil with onions, chili powder, bell pepper, red pepper and salt. Do not drain. When meat is brown, add corn and tomatoes. In a large bowl, mix corn meal, milk, and eggs. Add skillet aggregate and mix well. Bake in a greased 9 x 13-inch baking pan for 30 minutes or until done at 375 degrees.

Easy Casserole Recipes - Ground Beef Casseroles

Casseroles are a great way to make a hearty, cheap meal for your family. My favorite ingredient to use in them is ground beef. There are countless recipes you can come up with using ground beef in your casserole dishes. If you have it in your home, odds are you can put together a appetizing meal with ingredients already in your pantry. It's also a great way to couple all four food groups into one dish. Here are a couple quick and easy ground beef casserole recipes that your whole house can enjoy.

Ground Beef Casserole

Meat Casseroles

What you need:

2 lbs lean ground beef
1 medium onion, chopped
1 garlic clove, chopped
8 oz macaroni noodles, cooked and drained
2 (8 oz) cans tomato sauce
8 oz sour cream
8 oz pkg cream cheese, softened
3/4 c cheddar cheese, shredded
1 t salt
1/4 t black pepper

What you do:

In a large skillet, add beef, garlic, salt and pepper and cook until meat is browned. Drain grease from pan, add tomato sauce and onion and mix well. Simmer uncovered for 10 minutes, stirring occasionally. Remove from heat.

Preheat oven to 350 degrees. Layer noodles on the lowest of a large baking pan or casserole dish. In a medium bowl, couple cream cheese and sour cream. Cover noodles with cheese mixture. Pour meat blend on top of cheese and noodles. Sprinkle shredded cheddar cheese on top. Bake, uncovered, for 40-45 minutes.

Southwest Pasta Bake

What you need:

8 oz corkscrew pasta, cooked and drained
1 lb lean ground beef, browned and drained
3/4 c ready medium picante sauce or salsa
1 c sharp cheddar cheese, shredded
1 egg
1/4 t ground cumin
1/4 t black pepper
16 oz cottage cheese
10 oz container freezing corn, thawed and drained

What you do:

In a large bowl, couple beef, salsa and corn. In a small bowl, couple egg, cottage cheese, pepper and cumin. Place half of beef blend in lowest of 11/2 to 2 quart casserole dish. Add pasta on top of beef. Add cottage cheese blend on top of pasta. Top off with remaining beef mixture. Add cheese to top of casserole. In a 350 degree preheated oven, bake casserole for 30 to 40 minutes, or until heated through.

Hence, non-anodized (has no layer of aluminum oxide) aluminum may cause oxidation to some of the foods like sauces that contains egg yolks, or vegetables such as asparagus or artichokes. Aluminum is commonly used for pie plates, cake or muffin pans, baking sheets and even pasta pots, steamers, skillets and stockpots.

• Copper - is good for thermal conductivity, it provides most of the heating aspect. Copper tends to be heavy and requires occasional re-tinting. It is also expensive. So far, they are considered as the best for fast cooking and sautéing due to such high heat.

• Cast Iron - a reactive material that can withstand very high temperatures. Cast iron is a porous material that easily rusts and requires seasoning before usage.

• Stainless Steel - is a relatively poor heat conductor. It is commonly used for kitchen equipment that contains a minimum of 11.5% chromium. Stainless steel is an iron alloy that also blends containing 18% chromium with either 8% nickel, called 18/8, or with 10% nickel, called 18/10. It reacts with either alkaline or acidic foods. Thus, they do not easily dent.

• Carbon Steel - maintains high strength and heat resistance when rolled into very thin sheets of material. Carbon Steel may be an advantage for woks and paella pans, but it does not conduct any heat. A process of rubbing fat on the surface can be done as its recommended usage in cooking.

There are also composite and coated cookwares such as:

• Enamel casted iron - made of cast iron which covers the surface with porcelain. It is has the properties that combines cast iron with a non-reactive and low stick surface. Thus, this creates a piece that has retention and heat distribution.

• Enamel over steel - this technique creates a piece that has a non-reactive, heat distribution of carbon steel and a low stick surface. Enamel over steel is ideal for large pans that are used mostly in water based cooking. Thus, it is a popular piece of cookware for camping instances because of its lightweight feature.

• Clad aluminum or copper - a technique with a layer of heat conducting material that can fabricate pans, such as aluminum and copper. Both its inner and the outer portion of a pot made of aluminum are typically clad. This way, it provides stainless surfaces for cooking and a contact cook top. Plus, the interior surface of copper is typically clad which leaves more attractive copper for exposure to the outer side of the pan.

• Teflon coated frying pan (Non-stick) - Teflon (polytetrafluoroethylene) minimizes the possibility of food sticking to the pan's surface. Using Teflon is much easier because it is effortless to clean it as compared to other pots. Aside from this, there are no frequent results of having foods burned in its usage. It is important that while cooking, never use metal implements on the pan. This requires cautious care and attention.

Non-metallic

Non-metallic cookware can be used in microwave ovens but cannot be used on the stovetop. Such examples are as follows:

• Ceramics - provides a nonstick cooking surface such as glazed ceramics like porcelain. Terra Cotta (unglazed ceramics) has a porous surface. During the cooking process, its surface can hold water and other liquids. Hence, some glazes used on ceramic have a highly contained level of lead that can be a risk to our health.

• Glass - Borosilicate glass is oven safe and allows the food to be seen with its clear glass.

• Glass-ceramic - this ceramic is used in making different products that has the best properties of both glass and ceramic cookware. It is immune to thermal shock because of it's near-zero co-efficiency to thermal expansion.

• Silicone - able to withstand maintained temperatures of 675°F (360°C). It is light and flexible. The advantage of removing baked goods from the pan is its own flexibility.

Cooking vessels such as pots and pans have different variations and types. Such are:

• Braising pans and roasting pans - also known as roasters and braisers. It provides space for cooking chicken, pork or beef. It is also a shallow, large and wide pan, usually made of heavy gauge metal for safety usage on cook tops. Thus, it typically has a cover and two loops or handles.

• Casserole pans - can be used on the stovetop and in the oven. It is commonly made from glazed ceramic. A casserole is similar to having a roaster and a Dutch oven that can be used interchangeably.

• Dutch ovens - used for stews, soups, braised meats and a variety of large dishes, for slow low heat cooking. It is made from cast iron. Generally it is made into a deep pot with a heavy lid, for the purpose of re-creating oven conditions on the stovetop.

• Frying Pans or Skillets - sometimes called omellette pans. Frypans provide shallow sides, a large flat heating surface, and it measures 20-30 cm in diameter. Thus, it is best for frying food.

• Griddles - used for grilling, making pan breads such as pancakes and crepes, and frying. It is a flat circular plate metal with a semicircular hoop that is attached to the sides. It has a measurement of about 20 up to 30 cm in diameter. There are also rectangular and square griddles like grill pans, which enables its content to define a pattern similar to a waffle maker.

• Saucepans - used for boiling or simmering. It has one long handle unlike sauce-pots that possesses two handles, for easy lifting with both hands. Usually 1-8 liters, saucepans are measured by volume.

• Sauté pans - like a fry pan, it is used for sautéing. Sauté pans have vertical sides and a large area surface in order to prevent food during cooking from escaping.

• Stockpots - allows stock to simmer for a period of time. It is a large pot that comes in different sizes in order to meet the needs of a family who wants to prepare the food for a banquet.

• Woks - typically used for stir-frying, but can be used also for steaming and deep frying. It has a rough bowl shape that is wide and has one or two handles near the rim.

How To Lower Your Cholesterol Naturally

No medications can do a better job than treating your high cholesterol naturally. And, if you are one of those lucky people who do not have cholesterol concerns, you may want to take steps to keep it that way!



What can you do to improve your cholesterol levels? Here's the list and we will cover each item thoroughly.



Reduce fat in your diet



One of the best plans is covered previously in our chart on saturated fat. But there is more you can do. Buy the leanest cuts of meat you can find. Regularly substitute poultry (without the skin) and fish for red meat. Both are lower in saturated fat. Switch to low fat cottage cheese and yogurt, reduced fat hard cheeses and skim or 1 percent milk.



Eat no more than four egg yolks a week



Many people don't have to worry about eating cholesterol. Normal bodies adjust to increased intake by cutting back on regular product. However, since one third of Americans are cholesterol responders their blood cholesterol does go up when they eat cholesterol. You probably don't know if you fall into this category so play it safe. Eat no more than four egg yolks a week. An average egg yolk contains 213 milligrams of cholesterol!



Eliminate fried foods



Buying low fat is just the beginning. You need to institute low fat cooking methods to keep the cholesterol from sneaking back in to your diet.

Remove fatty skin from chicken and turkey.

Don't fry foods. Roast, bake, broil, grill or poach them instead.



Use fat free marinades or basting with liquids like wine, tomato or lemon juice.

Use olive or canola oils for sauteing or baking. Both are very low in saturated fat.

Use diet, tub or squeeze margarines instead of regular. Watch for the term hydrogenated, which means some of the fat is saturated.



Eat vegetables and complex carbohydrates

Yep, that's what we wrote. Snack several times a day on low fat foods. Yogurt, fruit, vegetables, bagels and whole grain breads and cereals are excellent for snacking. In fact, there is evidence that points to lower cholesterol levels in people who eat several small meals a day. Eating often can keep hormones like insulin from rising and signaling your body to make more cholesterol. Make certain that your total intake of calories doesn't go up when you eat more often.



Nuts to you!



Do you like nuts? If you do, sprinkle a few on your cereal, bake them into muffins or pancakes or add them to casseroles or stir-fries. Walnuts and almonds are especially good. Eating about three ounces of walnuts a day is shown to decrease blood cholesterol levels by 10% more than an already low fat, low cholesterol diet. Walnuts are high in fat, but it is mostly polyunsaturated fat, which is the kind that lowers cholesterol. Another study shows that about three ounces of almonds which are rich in monounsaturated fat, lowers LDL by 9%!



Drink fruit juices



You may have read about the low rate of heart disease in France. It led researchers to believe that the French habit of drinking red wine with meals contributes to this. Apparently some of the non-alcoholic ingredients in red wine raises HDL and suppresses the body from producing LDL.



Purple grape juice works the same way. It will work like red wine to lower the fat level in your blood. The LDL lowering effect of red wine and grape juice comes from a compound that grapes produce normally to resist mold. The darker the grape juice, the better.



Eat garlic



Cholesterol lowering effects of garlic have been demonstrated repeatedly in people with normal and high cholesterol. Eat all the garlic you can. It also seems to raise the HDL levels as well. If you are worried about the odor, take the tablets instead. They have proven to be nearly as effective as the cooked or raw cloves.



Take niacin carefully



We discussed niacin earlier. Remember as one of the B vitamins, it is proven effective for lowering LDL and raising HDL. It is also one of the cheapest drugs available for lowering cholesterol. But, without medical supervision it may not be totally safe. A dose high enough to lower cholesterol can cause extremely high blood sugar or liver damage.



Take vitamin E



Studies indicate that vitamin E may have a positive impact on lowering cholesterol when taken in fairly large quantities up to 800 IU per day. This is more than you can get from your diet alone. Larger amounts do not seem to cause any harm.



Further studies showed that even amounts of just 25 IU per day helps in preventing LDL from sticking to blood vessel walls. That amount is only slightly higher than the recommended daily amount (RDA) of 12 to 15 IU. It's interesting to note that even that small amount has an impact on preventing that hardening of the arteries.



Take Calcium



One study indicates that when 56 people took a calcium carbonate supplement, their total cholesterol went down 4 percent and their HDL increased 4 percent. That was taking a dosage of 400 milligrams of calcium three times a day with no harmful effects reported. That does refer to calcium carbonate.



Take a multivitamin it can't hurt



While you are building your calcium and vitamin E intake, remember the old standby, vitamin C. It is the number one immune system booster and also drives up HDL. A study of people who took more than 60 milligrams of vitamin C per day (60 milligrams is the RDA) had highest LDL levels.



Fill up on fiber



Remember several years back when oat bran was the latest craze for lowering cholesterol? Later studies arrived at inconsistent results, but the medical community do agree that soluble fiber, the kind found in oat bran, does help lower LDL and raise HDL. As little as three grams per day of fiber from oat bran or oatmeal can be effective.



There are 7.2 grams of soluble fiber per 100 grams of dry oat bran and five grams of soluble fiber per 100 grams of dry oatmeal. There are other sources of fiber as well such as barley, beans, peas and many other vegetables. Corn fiber is also good for reducing LDL, lowering it by as much as 5 percent in a recent study. Researchers used 20 grams of corn fiber a day.



That would be a bit difficult for the average user when you take into account that one serving of corn has three grams of corn fiber. But, every little bit does make a difference. Pectin, which is found in fruits like apples and prunes, reduces cholesterol even better than oat bran, as does psyllium which is the fiber you find in many breakfast cereals and bulk laxatives.



Quit smoking



Smoking promotes the development of atherosclerosis. Tobacco smoke is actually more damaging to the heart than the lungs. Smokers have a higher chance of having a heart attack (three times greater than nonsmokers) and a greater risk of dying of the attack (twenty one times greater than nonsmokers.) Tobacco smoke contains carbon monoxide, which is uniquely damaging to the heart. Not only does it reduce the amount of oxygen the heart receives, it also actually damages the cells of the heart, rendering them less able to produce energy and thereby weakening the hear.



In addition to the dangers of carbon monoxide, there's the danger of the nicotine. Nicotine interferes with the electrical impulses that cause the heart to beat. When the blood flow is compromised, the heart can beat in a fast, uncontrolled, irregular beats that actually cause a heart attack. If you smoke, reducing the risks of atherosclerosis is yet another reason to stop. Even if you have smoked for years, stopping now can still immediately help combat the development of atherosclerosis



Reduce sugar intake



Many people don't realize that sugar affects cholesterol and definitely affects triglycerides. Sugar stimulates insulin production, which in turn increases triglycerides. Men in particular, seem to be sensitive to this effect from sugar. The mineral chromium which helps to stabilize blood sugar, can also raise the level of HDL. 100 mcg of chromium three times daily can help to improve your cholesterol levels.



Eliminate alcohol



The jury is still out and the different schools of thought are still at odds regarding the benefit or lack of benefit to consuming alcohol. This suggestion has nothing to do with our previous discuss on red wine. A moderate amount may be helpful. The problem is that to one person a moderate amount might be a glass of wine with their meal, while to another it might be a half bottle of Scotch!



Anything above the arbitrary 'moderate' amount elevates serum cholesterol triglycerides and your uric acid levels as well as potentially increasing blood pressure all of which promote heart disease. So, the best bet would be to eliminate it totally.



Eliminate caffeine



We Americans definitely have a love affair with our coffee! People who drink large amounts of caffeine (more than 6 cups a day) are far more prone to elevated cholesterol. That connection does not hold for tea drinkers. Limit your coffee intake to no more than one cup a day and eliminate caffeinated sodas entirely.

Old Fashion Casseroles Are Economical, Nutritious

Most of us are seeing for ways to stretch our food dollars without cutting back on nutrition and taste. Casseroles are the perfect solution. They commonly use lesser expensive meats, integrate ingredients into some very tasty combination's and they are easy for the busy cook to assemble. Here are a integrate of recipes for some casseroles from my vintage formula collection. I think you and your house will enjoy them. Phil's Mexacali Casserole combines ground beef and noodles. Hamburger-Onion Hash combines ground beef with rice.

Phil'S Mexacali Casserole

Meat Casseroles

This formula is from an old Southern Indiana Fire division cookbook.

1 lb ground beef
3/4 cup chopped green peppers and jalapeño peppers* mixed
3/4 cup chopped onion
1 1/2 tsp salt
1 can (17 oz) cream-style corn
1 can (16 oz) tomato sauce
1 can (4 oz) mushroom pieces
1 cup shredded cheddar cheese
1 tsp chili powder
8 oz pkg noodles, cooked agreeing to pkg directions and drained

Preheat oven to 350 degrees.

Brown the ground beef in a large skillet with the peppers and onion. When beef is browned, drain the fat. Stir in the remaining ingredients; mix together well. Turn into a buttered 2 1/2-quart casserole dish. Cover and bake for 45 minutes at 350 degrees.

*When working with jalapeño peppers, it is a good idea to wear gloves. Do not touch hands to eyes when handling hot peppers. Take off the seeds unless you want your dish to be verily hot. The heat is mostly in the seeds.

Hamburger-Onion Hash

1 lb lean ground beef
2 medium or 1 large yellow onions, sliced
1 medium white onion, sliced
1 can (16-oz) diced tomatoes
1 to 2 tsps chili powder, agreeing to taste
1/2 cup uncooked quarterly rice
1 large green bell pepper, chopped
1 1/2 tsp salt
1/8 tsp pepper

Preheat oven to 350 degrees.

In a large skillet, cook meat, onions, and bell pepper until meat is browned. Drain off excess fat. Stir in the tomatoes, rice, chili powder, salt and pepper. Pour blend into an ungreased 2-quart casserole dish. Cover and bake for 45 minutes to 1 hour until cooked through and rice is tender.
