Stir in the chicken, rice, cheese, chilies, olives, and garlic salt. Spray a 2-quart baking dish with nonstick cooking spray. Transfer composition into prepared dish. Bake, uncovered, for 25 to 30 minutes, or until bubbly, at 350 degrees. Take off from oven and just before serving, sprinkle top with corn chips, lettuce and tomatoes in that order.

Herb Encrusted Beef Tenderloin - Grill Time Special

A special event or holiday gathering with family and friends might just require something different than the normal BBQ fare. Beef tenderloin could be just the right alternative. Pound for pound it is a cost effective way to serve a quality main course and this herb encrusted receipt will be sure to please.

Beef tenderloin can range in price from $6.99 to $12.99 a pound, depending on where you buy it and how it is trimmed. Unless you have a brother for a butcher, look for whole tenderloin that has been vacuum sealed packaged. Many of the big box stores carry them and typically they are in the 5 - 6 pound range of weight. Most are Choice cut meats. You will need to do the final trim, which is not difficult, and takes just minutes to complete. If you don't want to fool with it, then expect to pay the butcher the upper end price and you will have the same result.

Preparing the tenderloin for the grill is key to an award winning result. Here's how:

Step 1 - Trim. - Trim the excess fat from the tenderloin. Also be sure to cut off the silver skin that is normally on the one side. Use a sharp knife to cut and peel it off and don't worry if you take a little meat in the process. Left on, this skin will cause the tenderloin to curl when cooking.

Step 2 - Tie. - You will need some butcher twine to complete this step. The tenderloin has a thick end and a narrow end, called the tail. Fold the tail toward the head and tie with the butcher twine. Before you do though, season the interior of the tenderloin, with ground pepper and organic thyme. Use about one tablespoon of thyme and be fairly liberal with the pepper. Tie the meat with twine about every two inches.

Step 3 - Herb Encrusted Seasoning. - Place the tenderloin in a shallow pan or baking dish. Pepper both sides and rub with garlic. Use crushed garlic and apply liberally to all sides of the tenderloin. Mix two TBS of organic rosemary and one TBS of thyme together and sprinkle over all sides of the meat. Finally, pour about 1/3 cup of olive oil over it and make sure all these ingredients are rubbed in well. Cover, set aside and let it marinate 2-4 hours.

Step 4 - Grilling Time. About an hour before you are ready to grill bring the meat to room temperature. If you are using a charcoal grill prepare the coals so they are red hot ready. Gas grill users will want to preheat and make sure the grate is hot. When ready place the tenderloin on the hot grill. Careful, it will flame up. Be sure to turn the tenderloin so that all sides are exposed to the hot grill and each turn results in searing the meat. That will require about 3 - 5 minutes a side.

Step 5 - Prepare to Serve. When the internal temperature of the tenderloin reads 110 degrees remove the meat and place on a platter. Cover the entire platter with aluminum foil and let it rest for 15 -20 minutes. Internal temperature should rise to about 130 degrees which will result in a perfect medium rare cut.

In a large skillet heat the oil until hot. Add the beef cubes, onion, and garlic; cook until the beef is browned and onion is getting tender. Drain.

Round Steak With Onion

2 lb beef round steak about 3/4-inch thick
1/4 cup flour
1/2 tsp salt
couple dashes black pepper
2 tbsp canola oil
1 medium to large yellow onion, sliced
1 can (10 3/4-oz) condensed cream of celery soup, undiluted
1/2 tsp dried oregano
1/4 tsp dried thyme
1/3 cup cold water
3 tbsp flour

Trim any excess fat from the round steak and cut steak into 6 equal portions. Coat meat in the 1/4 cup of flour; pound gently with a meat mallet. Sprinkle the meat with the salt and pepper.

Heat canola oil in a large skillet over medium-high heat. Brown the meat, on both sides, in the skillet. Remove meat from the skillet and place in slow cooker or crockpot. Discard the drippings from skillet, reserving about a tablespoonful.

Cook the onion in the reserved drippings in the skillet; stir in the celery soup, oregano, and thyme to blend well. Pour the soup blend over the meat in the cooker. Place the cover on the cooker and cook on low setting for 8 to 10 hours.

Measure out 1 1/2 cups of the cooking liquid and place into a saucepan. Blend the cold water gently into the 3 tablespoons of flour; stir into liquid. Cook, stirring, until thickened and bubbly. Season, if needed. Serve over the steak pieces.

In a 4-quart or larger crockpot or slow cooker layer the mushrooms, carrots, and onions. Sprinkle the tapioca over all. Place the meat blend atop the vegetables and add the thyme, bay leaves, marjoram, salt, and pepper. Combine the Burgandy and the beef broth; pour over the meat.

Place cover on pot and cook on low for 10 to 12 hours or on high for 5 to 6 hours until meat and vegetables are tender. Discard the bay leaves then stir in the crumbled bacon. Serve over the hot buttered noodles.

Heat straight through and serve in rolls with a pickle and some Cole slaw.

Uk Sunday Roast method

A ritual that dates back to the industrial revolution, the Sunday roast is one of the United Kingdom's most storied and yummy of traditions. Consisting of a joint of roasted meat, roasted vegetables, and Yorkshire pudding, the Sunday roast is custom observed by roughly every household in Britain and Ireland.

It is believed by many that this tradition began because a roast could be settled in the oven Sunday morning and would be closed cooking by the time the house returned home from church in the afternoon. This meal is normally enjoyed in the afternoon and is sometimes alternately referred to as Sunday Lunch and Sunday Joint (referring to a joint of meat).

Meat Casseroles

Along with their choice of roast beef, lamb, or turkey; a variety of roast seasonal vegetables are also customarily served during a Sunday roast. Potatoes, carrots, peas, turnips, parsnips, cabbage, and broccoli are among many of the vegetables that are served whether roasted or boiled.

Below is a recipe for a original Sunday roast, faultless with roast beef, vegetables, and Yorkshire pudding. First you will need the following cookware and ingredients.

The Roast:

2 ½ pounds beef round roast salt and pepper to taste 1 tablespoon butter ¼ cup water ¼ teaspoon dried sage Dutch oven

First preheat the oven to 175 degrees C. Next season the roast with salt and pepper. Melt 2 tablespoons butter in a Dutch oven over medium heat. Brown the outside of the roast on all sides in the butter. Once browned, add ¼ cup of water to the pan, and sprinkle ¼ teaspoon of sage onto the roast. Place onion and garlic into the pan if you like and season with seasoning salt.

Next cover the pot, and place the roast in the oven for 1 to 2 hours, depending on how well done you prefer your meat. 1 hour will cook the roast rare and 2 hours will be well done. Take off the cooked roast from the oven and place it in a pan and keep it warm.

The Vegetables:

If you want roasted vegetables with your roast, cut peeled potatoes, carrots, onions, parsnips, and turnips into quarters, toss with a diminutive vegetable oil, and add salt and pepper. After the roast has cooked for about 45 minutes, arrange the vegetables in a separate pan and let them cook until tender. They should be done about the same time as the roast.

Yorkshire Pudding:

1 ½ tablespoons butter 1 ½ tablespoons flour ¼ cup cold water ¼ teaspoon sage Drippings from the Roast Frying pan

Melt 1 ½ tablespoons of butter in a frying pan. Whisk flour with melted butter until its smooth. Take off the pan from the stove top and stir in ¼ cup cold water. Mix the ingredients until you have a paste. Return the pan to medium heat and season with sage. Mix in the drippings from the roasting pan and stir constantly until the gravy is thick. Lastly, pour the mix over the roast and vegetables.

10 Ways to Use Leftover Meatloaf

Have you ever made meatloaf, and found yourself with enough left overs to last the whole week? If you're like me, I do not enjoy eating the same meal more than twice in a row, once for dinner, then lunch the next day. I discovered that a little meatloaf can go a long way, and that does not mean by sprouting legs from sitting too long in the fridge.

The following is a list of things that can be done so your family will not even recognize the meat loaf from the night before. This list is by no means exhaustive, but it should give you a good start, and may spark your own creativity.

1. Whenever you make too much of something, one option is always to divide into individual portion sizes, date, label, and freeze. You can easily grab it out for a quick meal.
2. Easy Chili: Crumble up your leftover meat loaf into a pot. Add a can of kidney beans, rinsed and drained. Add a couple cans of tomato sauce, or your choice of ground or chopped tomatoes with juice (if your tomato base is runny, add a tablespoon of cornmeal). Add a tablespoon of chili powder, half a tablespoon of seasoned salt, and half a tablespoon of brown sugar. Simmer for ½ hour and serve with cheese and sour cream if desired.
3. Shepherd's Pie: Crumble the leftover meat loaf. Stir in a can of cream of mushroom soup and half a can of water or milk. Spread into bottom of casserole dish. Add a layer of your favorite vegetable: if canned just drain and add, if fresh or frozen, cook and drain then add. Top with mashed potatoes and cook on 350 for half an hour.
4. Tater tot casserole: Prepare meat and vegetables like you would for shepherd's pie. On top of the vegetables, put a layer of chopped Velveeta or sliced American cheese. Top with tater tots and cook at 400 for 20-25 min.
5. Chip dip: Mix meat loaf with salsa and Velveeta, or similar cheese. Microwave until cheese is melted. Mix well and serve with tortilla chips.
6. Sloppy Joes: Put meat loaf into a frying pan with ketchup, mustard and barbeque sauce. Simmer for 10-15 minutes on low heat. Serve with pickles on buns.
7. Patty Melts: Slice the meat loaf into medium slices (about burger thickness). On a frying pan or griddle, place a piece of buttered bread, butter side down. Place the meat loaf slice on the bread with a slice of cheese on it. Toast another piece of bread on the griddle for the top. Sauté onion rings and place on the meat loaf and cheese combination. Top with the other piece of bread and serve with desired condiments.
8. Taco Salad: Chop meat loaf in a frying pan and cook on medium heat. Add a package of taco seasoning and amount of water indicated on the package. Simmer for 10-15 minutes. Serve with tortilla chips, lettuce, cheese, sour cream and tomatoes.
9. Spaghetti Sauce: Add crumbled meat loaf to a sauce pan. Add two cans of tomato sauce, ½ tablespoon Italian Seasoning, and 1 teaspoon of salt. Simmer for 15-20 minutes. Serve with your favorite cooked noodles.
10. Biscuits and gravy: Crumble meat loaf into a sauce pan and set to medium heat. Add 2 tablespoons of flour and stir until coated. Add 2 cups of milk and stir until thickened. Add salt and pepper to taste and serve over biscuits.

The Muffuletta Sandwich

The Muffuletta is a Sicilian specialty sandwich that is affectionately called The Muff. When the Italians came to America The Muff was adopted by the southern states and specifically New Orleans. The Muff was made famed in 1906 by the Central Grocery shop of New Orleans. The Muff is like the extreme club sandwich and then some. The Muff is made of a 10 inch wide round loaf or ciabatta. The loaf is traditionally hollowed out and stuffed full of cured meats like Parma ham, Mortadella, Pepperoni, Milano and Napoli salami layered upon each other. Then add a combine of dissimilar types of cheese like mozzarella and provolone and to quit it off with an olive salad made up of sundried tomatoes, black and green olives, capers, basil, parsley and extra virgin olive oil. Ideally you make up an olive salad the day before to let the flavours marry.

Once The Muff is made press it all down, wrap in shrink-wrap and leave in the fridge for 2-3 hours. It is best to add some added weight to compress the sandwich and so that the oils and flavours get absorbed into the meat, cheese and bread. I think the type of holed cheeses I used enhances this process. I like it warmed slightly in the oven for 5 minutes so that the fats run out of the meat into the bread and the cheese melts. This creates the extreme warm ham and cheese sandwich or manwich might be more accurate. Apparently warming the sandwich is a big no, no for a Muffuletta. I also made mine more into a Mediterranean sandwich and not strictly Italian. I added Chorizo and Serrano ham, generally because I couldn't get Parma ham. I also added German peppered salami and Jarlsberg and Emmental cheese. I have seen Peter Gordon do a version were he added some beetroot and carrot, I guess to put a New Zealand spin on The Muff. When I did mine I added the roasted beetroot, but not the carrot. The increasing of the beetroot adds a fabulous vibrant colour to the layers when you cut into The Muff. Making and eating this sandwich is an experience, one that needs a napkin for all the juices that dribble down your chin.

Crockpot Spaghetti Sauce

I love spaghetti with meat sauce. The best thing about the sauce is that the more it cooks the better it gets. I used to make spaghetti sauce only on the weekend because I would start it in the morning and then watch it simmer until early evening. Recently I came across a meat sauce formula that combines my popular ingredients but cooks in a crockpot.

Crockpot Spaghetti Sauce

Meat Casseroles

Ingredients

1/2  pound Italian sausage

1/2  pound ground beef

1 1/2 medium onions, chopped (1 1/4 cups)

1 cup sliced mushrooms

3 cloves garlic, finely chopped

1 can (14 1/2 ounces) diced tomatoes, undrained

1 can (14 ounces) tomato sauce

1 can (6 ounces) tomato paste

1 Tbsp. Dried basil leaves

1 1/2 Tsp. Dried oregano leaves

1 1/2 Tsp. sugar

1/2 Tsp. Salt

1/4 Tsp. pepper

1/4 Tsp. Crushed red pepper

Directions

In a large skillet, cook sausage, ground beef, onions, mushrooms, and garlic over medium heat for about 10 minutes or until meat is no longer pink. Stir occasionally. Drain.

Spoon sausage and beef blend into 5 quart crockpot. Add remaining ingredients and stir to mix.

Cover and cook on low heat setting for 8 to 9 hours.  

This formula make 12 1/2 cup servings.

Quick Tips

Coat crockpot with cooking spray for easier cleanup.

Use pre-cut onions and minced garlic.

Use pre-sliced mushrooms in a jar or icy mushrooms.

Spaghetti and meat sauce is a extra meal at my house. What Exactly is an Electric Frying Pan?

An electric frying pan is exactly as the name suggests - a type of frying pan, which is powered by electricity. You might be surprised to find out that the electric frying pan, or electric skillet as it is also known as, has been around since the 1890s! The frying pan was heated by an element on the pan base. Electricity at that time was very expensive however, which made the these pans a luxury item.

As electricity became more widely available, the electric frying pan still did not really become a popular kitchen appliance because it was easier to cook with a conventional frying pan on the stove than locate your electric frying pan at the back of the cupboard and find somewhere to plug it in.

A company called Sunbeam produced an automatic frying pan in 1953 and this cast aluminum, square shaped pan had a built-in element to heat the pan. There were heat controls on the handles. A stainless steel version was launched in 1954. The pans enjoyed some popularity in the 1970s because it could cook everything from roasts to stews and casseroles, as well as basic fried foods.

Modern Electric Frying Pans

Today we have nonstick pans and electric skillets, which are round or square. You can also get electric woks. These pans range from twelve to eighteen inches in diameter.

Electric pans are a timesaver and they do not fill your kitchen with smoke. They are easy to use. You just have to plug it in and turn the heat up or down. Most models have a low, medium, and high setting but some of the newer ones also have a "keep warm" setting.

As well as being really easy to cook with, electric pans are simple to clean. Because most of the newer ones are made of nonstick stainless steel, you can just use paper towels and a de-greaser to remove any stuck-on food. The fact that the pan is nonstick means that you do not have to use fat or oil to cook with, so soapy water is all you need to clean the pan. Obviously, you cannot wash the electrical parts like the heating element, but it is easy to clean the inside of the electric skillet.

What Can You Cook in It?

Because electric frying pans do not have the same hot spots as pans on the stove, they are especially good for making foods like pancakes. As well as pancakes, hamburgers and eggs, you can use electric frying pans to cook lots of other recipes.

You can braise meat in them. To do this, add three tablespoons of oil to the pan and turn the temperature setting to high. Brown your meat all over, then fill the pan halfway with water, and cover it. Turn the heat down and cook the meat for a couple of hours or until it is tender and juicy.

You might like to use your pan for frying fish. You will need to add oil and lower the fish into the oil with a big, specially shaped wooden spoon. Cook the fish until it is golden brown and done through.

You can make chili, stews, and soup recipes in an electric skillet too. All you need is some stock in the pan, and the right ingredients. Start the cooking process at a high temperature, and then turn it down to medium when the recipe begins to boil. Simmer these dishes for at least half an hour before serving them.

How to Braise Any Meat in a Slow Cooker

Braising meat is becoming some what of a trend. The benefits of it, however, are endless. It's a slow cooking technique that provides tender, juicy meat, regardless of the cut. The tricky part is truly trivial if you know what you're doing.

The main ingredient in braising is your liquid. Think about the meat you are cooking and what savory or sweet liquid would lead a good flavor to your meat i.e. Beef-red wine, Asian dish- soy sauce, Pork-beer or apple juice. When I braise pork, I like to use 1 part beer or apple juice or white wine to 3 parts chicken, veal, or pork stock. Same goes for other cuts of meat, just think about how flavorful your liquid is and cook.

Meat Casseroles

Next, you want to think about other flavoring agents such as vegetables and spices. Ordinarily speaking, 1 part carrots, 1 part celery and 2 parts onions is determined the "holy trinity". These veggies are used in all primary French and Italian cooking. Garlic is also used widely or you can use shallots instead of garlic or onions. Shallots are what I tend to use most. Also, with the mention of apple juice, consider cutting up apples instead as they among other fruits are suited flavoring agents. Spices are crucial...remember: Salt is a chemical before it is a seasoning so it is crucial in any braising process. Furthermore, rosemary is great with all meat, basil is good if your manufacture an Italian or Provence style dish with tomatoes and garlic. Generally, I tell my cooks to fantasize what is growing on farms in determined regions. If a chef looks out the window and sees carrots, onions, celery, rosemary and a pig. * Third, add you're braising liquid. 3 parts stock to 1 part added liquid. You should also add your spices now. Again, Rosemary and thyme are the best for pork belly.

* Fourth, Cook on low or in oven at 200 for 3 to 8 hours depending on the size of your cut. What you can do is poke at your meat with a fork every hour or so until you feel that tension within the meat has diminished. This process is so much easier with a slow cooker.

That's all it takes. Braising meat is so beneficial because it will save you time and money while cooking. The end ensue will all the time be tender and delicious. You will most likely have left overs and your whole house will be eating healthy.

Brisket in the Crockpot

One of my daughter's favorite meats is a brisket. She has loved brisket since she was a young child. When I was growing up, my mother used to make brisket in the oven, throwing a little bit of this and a little bit of that into the pot. While my daughter loved the end result it was near impossible for me to duplicate the recipe.

Today, when I make a brisket I almost always use my crockpot. A brisket is a cut of meat that needs to cook for several hours anyway, so why not cook it in the crockpot where it will stay moist and absorb all of the flavors I add in?

One of the sauces I create involves ketchup, Worchestshire sauce and onion soup mix. I mix them all together and then instead of adding water, I add either Coke or 7-Up, depending on what I have in the house. Adding the soda adds a bit of a sweet taste to the ketchup mixture. I place the meat on the bottom and then add the sauces on top. I then set the crockpot on low and cook up to eight hours.

Another recipe I love is a cranberry brisket. This recipe requires a little prep work before you can put the ingredients into the crockpot.
