When the onion is soft and translucent, that is the time to stir in a can or tomato sauce, a splash of red wine or balsamic vinegar, and several sprinkles of dried herbs such as basil, oregano, marjoram or fennel seeds. Some chefs also like to add a small amount of a sweetener, such as brown sugar, molasses or honey for extra depth of flavor. Then you need only simmer, covered for about 30 minutes, giving the sauce a stir every now and then while you boil up a pot of water and in it cook your favorite pasta.
