2 Lentil Recipes For Meat Eaters

Contrary to beloved belief, lentils are not only for vegetarians. There are many recipes that call for lentils as well as meat, and they add a delicate flavour as well as nutritious substance. Here's a few of my favourites.

Lentils with Bacon, Chorizo and Rice

Meat Casseroles

Ingredients for 4 servings:

- 1 lb of lentils

- 8 oz of rice

- 1 onion

- 1 bulb of garlic

- 4 cloves of garlic

- 8 oz of chorizo

- 10 oz of bacon

- Water

- Olive oil

- Salt

- 1 tbsp of sweet pepper

- Minced Parsley

Preparation:

Soak the rice overnight, and the lentils for an hour, before beginning this recipe. Place the lentils in a pot along with the chorizo and bacon, and a few cloves of garlic. Cook a little, then add the minced onion. Add a pinch of salt and peppers, get the lid, then cook for an additional one 15 minutes.

In large saucepan, add a minute oil, and fry the minced garlic. Add the rice and some water - practically 3 times as much as the rice. Simmer for 20 minutes.

When the lentil are done, remove the garlic. Chop up the chorizo and bacon into small bite-sized pieces, and mash the garlic. Put it all back in the saucepan and mix well.

The rice and lentils should be served separately, sprinkled with minced parsley.

Lentils With Pigs Ear:

Ingredients for 4 servings:

- 1 lb of lentils

- 3.5 oz of bacon

- 3.5 oz of chorizo

- 1 ear of a pig

- 2 cloves of garlic

- 1 chive

- 1 carrot

- Water

- Flour

- 1 egg, whisked

- Olive oil

- Salt

- 1 sprig of fresh Thyme

- 2 bay leaves

- Sweet pepper

Preparation:

The pigs ear should be cooked in a pressure cooker with just a small pinch of salt. Simmer it for 20 minutes. The lentils should be soaked overnight before attempting this.

Start with a minute oil in wide saucepan, and add the whole garlic cloves. Mince the onions and carrot, then add them to the saucepan along with the strained lentils, chorizo and bacon cut into fourths, the sprig of thyme and the bay leaves. Cover with water, season and simmer for 20 minutes.

Remove the ear and chop into strips. Dip the strips in whisked egg and flour, and fry them in a pan with some oil.

While cooking, the lentils should be covered thoroughly with water to avoid the skin cracking, so add water slowly if it evaporates too much.

When the lentils are done, serve with the pig ear, uncomplicated yet delicious!
