Soul Food popular - Fried Cabbage

Fried cabbage is growing in popularity, not only for it's soothing taste, but because of it's health benefits. Cabbage recipes, long praised for it's salutary dose of vitamins A, B,C and E, as well as the intestinal benefits of fiber to boot. It has been a favorite vegetable of mine, it adds a unique interest to any dish, especially chicken, turkey or fish. Cabbage is also one of the most reasonable vegetables for the number of edible parts (no steams or leaves to throw away), in addition to the vitamin content.

Cabbage is an easy vegetable to handle, prepare and cook. Meaning the leaves are sturdy, cleans assuredly and cooks quick. All you have to do is just cut the cabbage into four pieces (this makes it more bite sized) . Next you slice thin into a shredded thickness. Now it is ready for the frying pan. With a small teaspoon of olive oil, butter, margarine or cooking spray in a large skillet or frying pan, you're ready to go.

Meat Casseroles

First place half a cup of chopped onion in frying pan and cook 3- 5 minutes. Next add cabbage and cover on medium high heat for 3 minutes. locate and stir mixture, then cook other 3 minutes. Check and remove when cabbage is soft. Season with one teaspoon of butter or margarine, garlic powder, onion powder, and seasoned salt and a half teaspoon of black pepper. If you like yours a puny spicy you can add a teaspoon of hot sauce if like your cabbage to bite back a little. Serve hot with your favorite meat. This method makes 4-6 servings. Old Fashion Recipes For Vegetable Casseroles - Cabbage, Okra, Or Broccoli Casseroles

Do you remember coming into the house as a child and the wonderful aromas that met your nostrils? It was usually because mom or grandma had something delicious baking in the oven. Below are some recipes to help you recreate those wonderful aromas right in your own home. Enjoy some old-fashion vegetable casseroles on your own dinner table. They are also perfect for pitch-in meals, potlucks, reunions, picnics, etc. For your next occasion choose from Cabbage, from an old rural newsletter, Okra, from the community where I attended school in the 1950s, or My Favorite Broccoli Casserole. All these recipes are from my early years in Southern Indiana. The Broccoli Rice is especially good; it will always get good comments when shared with others at any occasion.

CABBAGE CASSEROLE

Meat Casseroles

1 med head cabbage
1/2 lb bulk pork sausage
1 tbsp onion flakes
1 cup dry bread crumbs
2 eggs
1/4 cup milk
Salt to taste
Pepper to taste

Chop and cook cabbage until tender. Drain. Meanwhile, crumble and fry sausage until browned Drain fat off the sausage. Beat eggs and add milk. Mix onion flakes and bread crumbs into the egg mixture. Add salt and pepper to suit your taste. Pour into a greased baking dish or pan and bake at 350 degrees for 25 minutes.

OKRA CASSEROLE

1/2 cup chopped onion
1/2 cup chopped green bell pepper
1/3 cup margarine
2 tbsp flour
1 tsp salt
1/2 tsp pepper
2 cup chopped tomatoes
1 1/4 cups sliced okra
4 slices American cheese

Preheat oven to 350 degrees. Grease a casserole dish. Set aside.

In a 10-inch skillet, melt the margarine; saute onion and bell pepper until crisp tender. Stir the flour, salt, and pepper into the skillet mixture; blend well. Add the tomatoes and okra; stir to blend well. Spoon mixture into the prepared casserole dish. Top with the cheese. Bake at 350 degrees for 20 to 25 minutes.

BROCCOLI RICE CASSEROLE

This is the broccoli casserole that has been popular in my family for many, many years.

1/2 stick oleo, use part to grease 2-qt baking dish
1 small onion, chopped
1 square box frozen chopped broccoli
1 can cream of mushroom soup
2-in square of Velveeta cheese, cubed
1 cup minute rice, cooked according to pkg directions

Bake at 375 degrees.

Melt oleo in pan, add chopped onion. Cook over low heat until onion is transparent. Add the broccoli and continue to cook just until broccoli is separated. Add soup and cheese; mix well. Add the minute rice. Mix well and pour into the prepared baking dish. Bake at 375 degrees for 20 minutes.

Note: This casserole can be made up to a day ahead, refrigerate before baking then add 5 to 10 minutes to the baking time.

Corned Beef and Cabbage Casserole Dinner - Suitable For Diabetics, Too!

Here's a quick and easy meal for busy families. What's easier than having your meat, potatoes, cabbage, and cheese all in one dish. That covers, meat, vegetable, salad, and dairy all in one. And that's exactly what this Corned Beef and Cabbage Recipe does for you. Add a simple microwave dessert of Date-Oat Bars for the fruit and grains.

CORNED BEEF AND CABBAGE CASSEROLE

Meat Casseroles

2 cups mashed potatoes
1/4 cup chopped parsley
2 cups finely shredded or chopped cabbage
1 1/2 cups finely chopped cooked corned beef
1 cup shredded process cheese food
1/2 cup shredded carrot
1/4 cup chopped onion
1 tsp caraway seed, optional

Preheat oven to 350 degrees. Mix parsley with potatoes and spoon into a 2-qt casserole dish that has been sprayed with vegetable cooking spray. Mix remaining ingredients together and spoon over potatoes. Bake 35-40 minutes or until heated through.

DATE-OAT BARS

1 pkg (8-oz) pitted dates, chopped
1 tbsp flour
1/2 cup water
3/4 cup unsweetened grated coconut
1/2 cup salt-free butter
1/3 cup Splenda granulated
2 1/2 cups uncooked quick-cooking oats
1/2 tsp vanilla extract
Vegetable non-stick cooking spray

In a large mixing bowl, combine dates with flour. Stir to coat dates. Place water in a 1 cup glass measuring cup and microwave on high until boiling, about 2-3 minutes. Pour over dates. Add coconut, butter, and Splenda to date mixture, stirring well. Microwave on high 2 to 3 minutes or until thickened, stirring at 1 minute intervals. Add oats and vanilla to date mixture. Mix well. Spray a 9-inch square baking pan with vegetable spray. Spoon mixture into pan and press evenly to bottom of pan. Cover and refrigerate until set. Cut into 24 bars and store in an airtight container. Keep in refrigerator.

Per bar: 80 calories, 13 g carbs, 1 g protein

Dinner menu with beef and cabbage Casserole Amish

Here's a good dinner, very sparingly and successfully. Cabbage stew beef is recommended Amish I had a friend Amish. 1 tablespoon lemon juiceJuice

1 cup cheddar cheese

Preheat oven to 350 degrees.

Grease (for health reasons, it is preferable to use a pan spray vegetables) to 2 liters. Located in a dish of cabbage. Stir in minced meat and onions. The remaining ingredients, except cheese and mix well. Cover and cook for 1 hour. Remove from oven and sprinkle cheese on top. Ready to serve.

Three bean salad

1 can of beans, drainedrinsed

1 can yellow wax beans, drained and rinsed

1 can white beans, drained and rinsed

02:01 Cup pepper, finely chopped

Cup chopped onion 02:01

Dressing: 3 / 4 cup sugar or Splenda Equal Lite

02:01 cup extra virgin olive oil

02:01 cider vinegar cup or 1.4 per cup of vinegar and balsmic

4.1 V. teaspoon salt

V. 2.1 tsp black pepper

In a large bowl, combine beans, peppers and onions.

Prepare the vinaigrette: In a jar with a screw cap,spices combine sugar substitute, oil, vinegar, salt and pepper. Secure the jar lid and shake the ingredients well together. Pour the bean sauce mixture and stir. Cover and hold for about 24 hours in the refrigerator. Remove from the refrigerator and leave at room temperature before serving.

DIABETIC moist chocolate cake

2 cups flour

1 teaspoon teaspoon baking powder

1 teaspoon salt

2 v. teaspoon baking powder

04:03 cup unsweetened cocoa

2 cups Splenda granular

1 cup vegetable oilOil

1 cup hot coffee

1 cup milk

2 eggs

1 tablespoon mayonnaise

1 teaspoon vanilla extract

Preheat oven to 325 degrees.

In a bowl sift together all dry ingredients. Oil, coffee and milk mix dry ingredients with electric mixer at low speed for two minutes. Eggs, mayonnaise and vanilla, then beat two minutes. Spray a 13 "x 9" x 2 "non-stick cooking spray type. Pour batter into prepared pan and bake at 325 degrees for 25-30Minutes until a toothpick inserted in center comes out clean. Sprinkle with powdered sugar (to see how sugar-free icing sugar on this site), if desired, or drizzle with chocolate sauce without sugar.
