Economical, Quick, and Easy Beef and Noodle Casserole That's favorable For Diabetics, Too

This is a perfect formula for today's busy cooks. It is quick, simple, and economical. You can even make it ahead, refrigerate, and pop it in the oven when you get home from work, the game, kids practice, music lessons, dance lessons, etc. You can put a unblemished meal on the table for your family in barely more time than fast food. And with the meat and dairy products in this dish, it allows diabetics to enjoy noodles.

Beef And Noodle Casserole

Meat Casseroles

1 package (8 oz) no-yolk noodles

2 lbs lean ground beef

1 can (8 oz) tomato sauce

2 tbsp flour

2 cups low-fat bungalow cheese

1 cup sour cream

1/2 cup chopped onion

1/3 cup chopped green bell pepper

1 tsp garlic salt

1/4 tsp oregano

1/2 tsp basil

1/2 cup low-fat Mozzarella cheese, shredded

Preheat oven to 350 degrees.

Cook noodles according to package directions. Remove from heat and drain in a colander. Spray a large skillet with non-stick cooking spray; add meat and cook until browned. Drain meat in a large colander and rinse with hot water to Remove any fat. Return meat to skillet and stir in the tomato sauce and flour. Simmer for ten minutes. In a bowl, integrate bungalow cheese, sour cream, onion, bell pepper and spices. Spray an oblong casserole dish with non-stick vegetable spray. Put half of the noodles in the lowest of the casserole dish. Spread the bungalow cheese mixture over the noodles. Top the bungalow cheese mixture with the remaining noodles. Cover with the meat mixture. Bake for 30 minutes. Remove from oven and sprinkle shredded cheese over the top. Let set at least 10 minutes before serving.

Healthy Diet for Diabetics

If you have been diagnosed with diabetes, the doctor advised that you must change your diet and to start a program of regular exercise. Your doctor may have made you an appointment with a nutritionist. You will be able to get a dietician and diabetic recipes out off the internet.
Diabetics are at increased risk of heart disease and problems in the flow of blood in the legs. They have to follow a healthy diet low in fat and a diet that also helps control the level of blood sugar.
So what can you do to manage their diabetes, and to be healthy?
The Diabetes organization has developed a healthy eating food pyramid as a guide to healthy eating for diabetics. They recommend eating: --
1. 6-11 portion of grains and starches per day - bread, pasta, rice, cereals, dried beans and starchy vegetables like potatoes.
2. A minimum of 3-5 servings of vegetables a day - look for vegetable recipes and diabetic recipes using vegetables.
3. 2-4 servings of fruit a day.
4. 2-3 servings of low fat or no fat milk.
5. 4-6 ounces (about 112-168g) of meat and meat substitutes, per day - This should be shared between meals and not eat at a meal. Visible fat should be trimmed off meat should be cooked and healthy - grilled, baked or grilled instead of fried. Meat alternate are cheese, cottage cheese, nut butters, dried beans, eggs and tofu.
6. The smaller group is alcohol, fats and sweets that need to be limited. Alcohol and sweets should only be consumed as treats in small portions. Use recipes low fat and non fat or low fat products.
Other suggestions for diabetics are: --
- Look for specific diabetic recipes to help you follow a healthy diet for your situation.
- Eating the same amount of food at the same time every day - eat regularly to control their level of blood sugar.
- Add starchy foods such as dried beans and bean soups and casseroles to increase their intake of starch. Look out for diabetic recipes that use these starchy foods, because it will have a positive effect on the level of blood sugar.
- Eat plenty of fruit and vegetables for soluble fiber helps reduce the absorption of glucose in the intestine.
- Control your weight - This is particularly important for type 2 diabetes because extra body fat causes the body to have difficulty making and using insulin. Look for diabetics and healthy recipes low fat recipes to help you lose weight and weight control. If you lose a few pounds, you may even be able to reduce medication.
- Control your intake of carbohydrates in meals by carbohydrate count. Your medical professional will be able to advise you on how you need many carbohydrates in each meal, based on their level of exercise and medication.
- Follow a diet low in fat - Diabetics are at a greater risk of heart disease so try to limit your fat intake below 30% of their total daily calorie intake.

Two Sweet Potato Casseroles Both suitable For Diabetics

There is no need for diabetics to avoid sweet potato casserole if it is one of their popular dishes. Below are two dissimilar recipes for Sweet Potato Casserole that are diabetic friendly. While they are not wholly sugar-free they are fine for diabetics when eaten as part of a balanced meal that includes a good protein meat. Turkey, chicken, ham, etc. Are all excellent with these casseroles. Remember, diabetics can enjoy good food too!

Sweet Potato Casserole #2

Meat Casseroles

4 med sweet potatoes
3/4 cup Splenda granular
1/2 cup milk
2 tsp grated orange rind
1/4 cup fresh orange juice
2 tsp vanilla extract
1 large or extra large egg, lightly beaten
1/2 cup all-purpose flour
3 tbsp butter, melted
1 cup panko (Japanese bread crumbs)
1/2 cup finely chopped pecans
2 tbsp butter, melted
3 tbsp sugar-free maple-flavored syrup

Preheat oven to 375 degrees. Lightly grease a 13x9x2-inch baking dish or pan. Place sweet potatoes on a baking sheet; bake for 1 hour or until done. Cool to the touch; peel and mash. Cut oven climatic characteristic to 350 degrees. Couple sweet potatoes, Splenda, milk, orange rind, orange juice, vanilla, egg, flour, and the 3 tablespoons butter in a large mixing bowl. Beat at medium speed of electric mixer until smooth. Spoon into the ready baking dish. Couple the panko crumbs, pecans, butter, and syrup together and sprinkle over the top of the casserole. Bake 1 hour or until wholly heated through.

1/4 tsp salt
2 beaten eggs or 1/2 cup egg substitute
1 stick melted butter
1/2 cup low-fat milk
1 tsp vanilla extract

Combine all ingredients and mix well. Pour into a shallow 8"x8" baking dish that has been sprayed with cooking spray.

Topping:

1/3 butter, melted
1/3 cup flour
1/2 cup brown sugar
1/2 cup Splenda
1 cup chopped pecans

Mix sugar and Splenda together. Add flour and pecans to sugar mixture. Pour melted butter into mixture and stir to blend. Sprinkle evenly over sweet potatoes. Bake at 350 degrees for 30-35 minutes.

Note: This recipe uses some sugar in the topping. Remember this when incorporating into your diet or replace brown sugar with 1/4 cup of Splenda's brown sugar substitution.

While they are not completely sugar-free they are fine for diabetics when eaten as part of a balanced meal that includes a good protein meat. SWEET POTATO CASSEROLE #2

Meat Casseroles

4 med sweet potatoes
3/4 cup Splenda granular

Preheat oven to 350 degrees.

How to Make a Potato - Cheese Casserole That is Suitable For Diabetics, Too

I took a week away from the computer to spend time with three of my grandchildren over their Spring Bread but now it is time to get back to work. For today's recipe I have chosen a Potato-Cheese Casserole. This mashed potato casserole is not only a good one for us diabetics as it has a ratio of 3 to 1 carbs and protein, it is also easy and very tasty. I great way to add potatoes to your favorite steak, pork chop, or other meat. Each serving is 15 grams of carbs to 5 grams of protein. That is right on the nose for a diabetic ratio. Isn't it great to have potatoes that are tasty for everyone yet fall into the diabetics ratios? Give this recipe a try at your next dinner and see for yourself how it can dress up your meal.

POTATO-CHEESE CASSEROLE

Meat Casseroles

3 cups cooked, mashed potatoes

1 egg, separated

1/2 cup shredded low-fat process American cheese

1/2 small green bell pepper, finely chopped

1 tbsp finely chopped green onion

1/2 tsp celery salt

1 egg white

1/2 tsp paprika

2 tbsp shredded low-fat cheddar cheese, if desired

Preheat oven to 375 degrees. Spray a 1 1/2-quart casserole dish with a nonstick cooking spray; set aside.

In a mixing bowl, combine the mashed potatoes and egg yolk; stir until well blended. Stir in the cheese, bell pepper, green onion, and celery salt.

In a small mixing bowl, beat the 2 egg whites at the high speed of an electric mixer until soft peaks form. Gently fold the egg whites into the potato mixture.

Gently spoon the potato mixture into the prepared casserole dish. Sprinkle the paprika evenly over the potato mixture. Bake the casserole for 25 to 30 minutes at 375 degrees.

Remove casserole from oven and sprinkle the top with the shredded low-fat cheddar cheese, if desired. Serve immediately while hot.

Yield: 8 (1/2 cup) servings

Note: This is a great potato dish for diabetics as it has 15 g of carbs and 5 g of protein per serving (without the shredded cheddar cheese topping).

Corned Beef and Cabbage Casserole Dinner - Suitable For Diabetics, Too!

Here's a quick and easy meal for busy families. What's easier than having your meat, potatoes, cabbage, and cheese all in one dish. That covers, meat, vegetable, salad, and dairy all in one. And that's exactly what this Corned Beef and Cabbage Recipe does for you. Add a simple microwave dessert of Date-Oat Bars for the fruit and grains.

CORNED BEEF AND CABBAGE CASSEROLE

Meat Casseroles

2 cups mashed potatoes
1/4 cup chopped parsley
2 cups finely shredded or chopped cabbage
1 1/2 cups finely chopped cooked corned beef
1 cup shredded process cheese food
1/2 cup shredded carrot
1/4 cup chopped onion
1 tsp caraway seed, optional

Preheat oven to 350 degrees. Mix parsley with potatoes and spoon into a 2-qt casserole dish that has been sprayed with vegetable cooking spray. Mix remaining ingredients together and spoon over potatoes. Bake 35-40 minutes or until heated through.

DATE-OAT BARS

1 pkg (8-oz) pitted dates, chopped
1 tbsp flour
1/2 cup water
3/4 cup unsweetened grated coconut
1/2 cup salt-free butter
1/3 cup Splenda granulated
2 1/2 cups uncooked quick-cooking oats
1/2 tsp vanilla extract
Vegetable non-stick cooking spray

In a large mixing bowl, combine dates with flour. Stir to coat dates. Place water in a 1 cup glass measuring cup and microwave on high until boiling, about 2-3 minutes. Pour over dates. Add coconut, butter, and Splenda to date mixture, stirring well. Microwave on high 2 to 3 minutes or until thickened, stirring at 1 minute intervals. Add oats and vanilla to date mixture. Mix well. Spray a 9-inch square baking pan with vegetable spray. Spoon mixture into pan and press evenly to bottom of pan. Cover and refrigerate until set. Cut into 24 bars and store in an airtight container. Keep in refrigerator.

Per bar: 80 calories, 13 g carbs, 1 g protein
