First of all, did you know that meats and chicken are easier to slice thinly if they are semi-frozen? Wrap your chicken or meat in plastic wrap and pop it into the freezer for fifteen minutes. You will really notice the difference when you cut it. Use the sharpest knife you have to make perfect slices and always cut meats against the grain unless the recipe tells you otherwise.

Ground beef tends to produce a lot of fat when it cooks, especially if you are not using an extra lean variety. The best way to remove the fat is to drain the cooked ground beef on paper towels. Another way is to pour hot water over it while it is draining in a sieve or colander.

If you need small pieces of beef or pork, it might work out cheaper to buy a larger cut and cut it up yourself. You can buy a chuck roast to make beef stew or a pork roast to make baked pork chops. You might expect the smaller pieces to be cheaper to buy but that is not always the case.

If you are using leftover glazed ham to make another recipe, trim off the glaze so it does not clash with the seasonings in the new recipe. This depends what the new recipe is, of course, since the glaze might complement it. If in doubt trim it off though.

Turn chicken pieces or beefsteaks with tongs instead of a meat fork. If you pierce the chicken or beef, the juices escape and it dries out. Use the meat fork to hold your roast securely while you carve it.

However, you should be careful when using lime juice or lemon juice for the marinade. If the recipe tells you to marinate the meat for four hours, stick to the guideline. Citric acid will turn meat gray after a while, which does not look very appetizing!
