Green Bean Taco Casserole Recipe

Mexico is an exotic country full of color and tradition. And they gave us a lot of the stuff we eat today like chocolate and coffee.

But they also invented fiesta and tacos. And this casserole uses that spicy and tangy flavor from tacos and chili to give us a nice and filling casserole. If you follow the recipe closely you will find that it is so very easy to do and you'll family will love it.

Meat Casseroles

I know it because I used to have a Mexican boyfriend and he just loved this casserole.

And hey, it's green beans! One of the best veggies out there! They come from a far point in history and now to our tables. Just imagine what food would say if it could tell us about the rich and great history they've seen.

This recipe perfect when you are running late and need to cook in a flash. You can use veggie chili or meat. That's up to you. But no matter what you decide, use good quality tortilla chips because that's the secret and what gives this recipe it's really Mexican flavor.

Ingredients

2 roma (plum) tomatoes, chopped

2 Cups of vegetarian chili with beans

6 Cups of corn tortilla chips

1/4 Cup of sour cream

2 Cups of shredded lettuce

1/2 Cup of salsa

1 Cup of shredded Cheddar cheese

Directions

Preheat the oven to 350 ยบ F (175 degrees C).

Cover the bottom of a 9 inch square baking dish with the chips. Pour chili straight from the can to cover the chips. Top with shredded cheese over all the casserole.

Bake for 20 to 25 minutes in the preheated oven, until chili is bubbling and cheese is melted. Top with lettuce, tomato, sour cream and salsa in the pan, or after serving.
