Old Fashion Recipes For Sausage Stuffed Zucchini Casserole and Honey Mustard Coleslaw

This old fashion recipe for garden favorite, zucchini, is quick, easy, and delicious. The inside of the zucchini is scooped out and replaced with a sausage mixture. The whole thing is covered with cheese and baked in the oven. You have meat, vegetables, dairy, and grain all in one easy dish. Serve with Honey Mustard Coleslaw, if desired.

SAUSAGE STUFFED ZUCCHINI CASSEROLE

Meat Casseroles

This recipe is from the neighborhood where my school was located. (My elementary, junior high, and high all in one building!)

4 medium zucchini
1/2 lb sausage, crumbled, fried, and drained
1 onion, chopped
1/2 cup fine whole wheat bread crumbs
1/4 cup tomato sauce
1 beaten egg
1/4 tsp salt
1/4 tsp dried thyme
1/4 tsp dried oregano
1/4 tsp pepper
Parmesan cheese for topping

Preheat oven to 350 degrees.

Leave zucchini whole and cook in boiling water for 10 minutes. Remove zucchini from water and allow to cool enough to handle. Cut zucchini in half lengthwise and scoop out the centers. Combine the sausage, bread crumbs, tomato sauce, egg, salt, pepper, thyme, and oregano. Mix together well and stuff the zucchini with the mixture. Top with as much Parmesan cheese as desired. Bake at 350 degrees for 20 minutes.

HONEY MUSTARD COLESLAW

4 cups shredded cabbage
1 cup shredded carrots
1/4 cup sliced green onions
1/4 cup cider vinegar
3 tbsp honey mustard
1 cup mayonnaise
1 tsp poppy seeds
2 tsp sugar
salt to taste
pepper to taste

In a large mixing bowl, combine the shredded cabbage, carrots, and green onions; toss well to mix. In a small bowl, blend the vinegar, honey mustard, mayonnaise, poppy seeds, sugar, salt and pepper. Whisk until smooth. Pour the dressing over the cabbage mixture and season with salt and pepper. Chill several hours before serving.

How To Cook Dried Shell Beans And More

Before dried shell beans of any variety are cooked, look them over very carefully, reject any that are unfit for use, and wash the rest in cold water. They may then be cooked without further preparation, but in order to hasten their cooking and save fuel in their preparation, it is a good plan to moisten them by soaking them in water before cooking. If they are to be soaked, place them in cold water and allow them to remain there for 8 to 12 hours. Then put them on to cook in water to which has been added a small pinch of soda. Parboil the beans in this water until the outside skin begins to crack and then pour off the water. While it is true that a certain amount of mineral salts and perhaps a small percentage of food value are lost in this procedure, because the water that is poured off is too strong to be used for any other purpose, the improvement in the flavor warrants any loss that might occur. After pouring off thewater, wash the beans in cold water, add fresh water to continue the cooking, and allow the beans to simmer slowly until they are cooked soft enough to crush between the fingers, but still retain their original shape. Nothing is gained by cooking them rapidly on a hot fire, and considerable fuel is wasted by this practice. The fireless cooker and the double boiler are excellent utensils for the cooking of dried beans, because they cook the beans at a temperature below boiling point. They therefore cook the beans soft with little difficulty and prevent the protein from becoming hard. The theory of the cookingofprotein--that is, the higher the temperature, the harder the coagulation--applies in the cooking of dried beans, just as it does in the cooking of eggs or milk.
The common small white beans are called navy beans from the fact that they are much used in the navy. These may be prepared in various ways, but the simplest method is to stew them. In the preparation of this dish, as well as any other made from dried beans, it will be well to remember that 1/2 cupful of beans is usually sufficient to serve four persons when they are cooked. Look over the required amount of beans, reject any that are imperfect, wash thoroughly, and put to soak overnight in cold water. Pour off any water that remains, cover well with boiling water, and add a pinch of soda. Cook slowly until the skins begin to burst. Pour off the water, add fresh hot water and 1 teaspoonful of salt for each quart of water, and allow to simmer until the beans may be easily crushed between the fingers. During this process, the water should cook down until just a sufficient amount to serve with the beans remains. When this isaccomplished, add 1-1/2 tablespoonfuls of butter, a dash of pepper, and, if necessary, additional salt. Instead of the butter, ham or bacon fat may be used for seasoning, or a small piece of ham or salt pork may be cooked with the beans and the fat omitted. Serve the beans hot.
Dried Lima beans, when combined with thin cream, make a very appetizing dish. To prepare them in this way, clean, soak, and cook them as explained in Art. When they are soft enough to crush easily between the fingers and the water has boiled down so that practically none remains, add 1/2 cupful of thin cream to a sufficient quantity for four persons. Allow the beans to simmer for a short time in the cream, add additional salt and a dash of pepper for flavoring, and serve.
While the small varieties of dried beans are more commonly baked than the larger ones, Lima beans will be found especially delicious when prepared in a casserole. Soak the beans overnight and then parboil them in soda water. Drain off the water and turn the beans into a baking dish. Add the fat, milk, salt, Serve hot from the casserole. If a dish that is not only appetizing, but sufficient in food value to be used as a meat substitute, is desired, Lima-bean loaf, which is illustrated in Fig. 4, should be selected. This is very good when served alone, but it becomes more attractive and at the same time more palatable when a sauce or gravy is added.
Soak the beans overnight and parboil them in soda water. Pour off this water, cook until tender in boiling salted water, and then drain. Moisten the bread crumbs slightly with milk, mix them with the beans, and add the beaten eggs and seasoning. When the entire mixture is well blended, place in a loaf pan, dot the top with the butter, and bake in the oven until nicely browned and quite firm. Turn out on a platter, garnish with parsley, and serve by cutting it into slices, as shown in Fig. 4.
Probably the daintiest dish that can be made from dried beans is bean soufflé. This is equally suitable as the main dish for a luncheon or a home dinner. One point to remember about it is that it should be served immediately, for soufflé usually settles when taken from the oven.Make the bean pulp by forcing well-cooked beans through a colander or a press. Add all the seasoning and the beaten egg yolks. Beat the egg whites stiff and fold them into the mixture. When well blended, pour into a greased baking dish, or individual dishes, place in a pan containing hot water, and bake in a moderate oven until the soufflé is set, which will require from 30 to 45 minutes. Test by tapping slightly the finger. If the dent thus made in the soufflé springs back, it is sufficiently baked. Remove from the oven and serve at once.  Almost any kind of dried beans may be used for baking. Some persons prefer the small navy beans, which are mentioned in this recipe, whereas others like the larger marrowfat beans or Lima beans. Pinto beans have for some time been taking the place of navy beans, and are found to be a very good substitute. To bake beans successfully, a dish with a tight-fitting cover, such as the one, is required. This is made of heavy glass, but if such a utensil is not available, very satisfactory results can be obtained by using a heavy earthen bowl, crock, or baking dish. To produce the delicious flavor that is agreeable to most persons, beans should be baked a long time. Therefore, as considerable heat is consumed in their cooking, it is a wise plan to prepare more than enough for one meal. They may be served the second time as baked beans, or, if this is not desired, they may be used for various other purposes.  Soak the beans overnight, parboil in soda water, and drain. Add a sufficient amount of water to cover the beans well, cook until they break open, and then pour with the liquid into a baking dish. If this liquid does not almost cover the beans, add more until it comes nearly to the top. Add the molasses and salt, cut the salt pork into pieces, and distribute these well through the beans, placing a piece or two over the top. The beans should then appear. Place the cover on the dish and bake in a slow oven for 4 or 5 hours. Remove the cover occasionally, stir the beans carefully so as not to crush nor break them, and add enough water from time to time to keep the beans well moistened. When done, the beans should be light brown in color, but the top shouldbe well browned. Sometimes it will be found necessary to remove the cover in order to brown the beans sufficiently.
Left-over baked beans need never be wasted, for there are numerous uses to which they can be put. If it is not desired to reheat them and serve them again as baked beans, they may be utilized in soup, salads, and sandwiches, or they may be made into soufflé, or into croquettes according to the accompanying recipe. Bean croquettes may be served plain, but they are much improved by the addition of tomato sauce.

Mexican Casserole Recipe - Easy Mexican Casserole

You can spice up this recipe a little more by adding taco seasoning to the ground beef before you cook it.

1 pound lean ground beef

Meat Casseroles

2 cups salsa

1 (16 oz.) can chile beans, drained

3 cups tortilla chips, crushed

2 cups sour cream

1 (2 oz.) can sliced black olives, drained

1/2 cup green onion, chopped

1/2 cup fresh tomato, chopped

2 cups shredded Cheddar cheese

Directions

Preheat oven to 350 degrees. Prepare a 9x13-inch baking dish with nonstick cooking spray.

In a large skillet, cook the ground beef over medium high heat until brown. Stir in the salsa, reduce heat and simmer for 20 minutes, or until all the liquid is absorbed. Stir in the beans and heat thoroughly.

Spread the crushed tortilla chips into the bottom of the baking dish. Spoon the beef mixture over the chips. Spread the sour cream on top of the beef mixture. Sprinkle on the olives, green onion and tomato. Top with the cheddar cheese.

Bake for 30 minutes or until hot and bubbly.

Quick and Creamy Mexican Casserole

This creamy casserole features two kinds of soup, chili peppers, salsa and sour cream.

1 (10.75 oz.) can condensed cream of mushroom soup

1 (10.75 oz.) can condensed cream of chicken soup

1 (4 oz.) can chopped green chile peppers, drained

1-1/2 cups prepared salsa

1/4 cup milk

2/3 cup sour cream

8 (6-inch) flour tortillas

6 boneless chicken breast halves, cooked and cubed

2 cups shredded Cheddar cheese

Directions

Preheat oven to 350 degrees. Lightly grease a 9x13-inch baking dish.

In a medium bowl, combine the mushroom soup, chicken soup, chile peppers, salsa, milk and sour cream; mix until well blended. Place a layer of tortilla strips in the bottom of the prepared baking dish.

Layer in the following order: 1/2 of the soup mixture, 1/2 of the chicken, 1/2 of the shredded cheese. Repeat layers until you use up all of the ingredients. End with a layer of shredded cheese.

Bake for 45 minutes, covered, then remove the cover and bake for an additional 15 minutes.

Chicken Cornbread Bake

Two great flavor sensations come together in this casserole - chicken and cornbread.

1/2 cup margarine

1 onion, finely chopped

1 clove garlic, minced

1 (15.25 oz.) can whole kernel corn, drained

1 (15 oz.) can cream style corn

1 can cream of chicken soup

1/4 teaspoon salt

2 eggs

1 (8.5 oz.) pkg. corn bread mix

2-1/3 cups cooked chicken breast, chopped

2 tablespoons canned green chili peppers, chopped

1 (4 oz.) jar chopped mushrooms, drained

1/2 cup light sour cream

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1 (8 oz.) pkg. Monterey Jack cheese, shredded

Directions

Preheat oven to 375 degrees. Grease a 9x13-inch baking dish.

Melt the margarine in a small skillet over medium high heat. Saute the onion and garlic until tender for 4 to 6 minutes; set aside.

In a large bowl, combine the corn, cream style corn, chicken soup, salt and the eggs.

Beat in the muffin mix. Fold in the cooked onion mixture. Pour into the prepared baking dish.

In another large bowl, combine the chicken, green chilies, mushrooms, sour cream, salt and pepper. Spoon chicken mixture over the corn mixture to within 1-inch from the edge. Sprinkle the top with cheese.

Bake for 35 to 40 minutes or until the edges are golden brown.

How Meat Extenders Can Be Life Extenders

Americans do like to eat meat. But we consume far more of it than we actually need for good health.

And many "gourmet" recipes are designed to make a little meat go a long way. Just read through your favorite cook books and you'll start to see it.

Meat Casseroles

Every cuisine has these recipes. Think of soups and stews, casseroles, pastas, rice and bean dishes, and many others. You can pick and choose and add all your favorite herbs and flavorings. Instead of having tacos, have grilled chicken with taco seasoning and sliced onions, peppers and zucchini. It's yummy and 2 chicken breasts will go 2 meals for us. We still get those great Mexican flavors. There are a lot of other ways to make dishes that are healthier than the ones you buy in restaurants and grocery stores.

We always eat whole grains. Anything that has been refined to white also has very few nutrients left. They are hardly worth either buying or eating. We regularly simmer up clear chicken or turkey broth which we use a base for many recipes.

For one we simmer 1/2 pound of boneless, skinless chicken in a ½ gallon of broth. When the chicken is partially cooked we add chopped carrots (3) and one potato with chopped garlic.

When the vegetables are nearly done we add onion and celery so it does not become overcooked. Some herbs, like parsley and sage are nice. I usually use some Worcestershire sauce and maybe even a little hot sauce.

Pick your favorites.

Then serve over a generous handful of raw spinach. The soup cooks the spinach as it ladles into the bowl.

I use big, rimmed soup bowls for this low calorie treat and have the homemade, whole grain bread I make once a week with it. But the soup makes enough for us to have dinner and then lunch the next day, 2 good meals. And many recipes can work this way.

You can control the amount fat, salt, sugar and other things that aren't doing you any good. Food manufacturers put a lot of things in food that make you fat and sick.

When you start to think about a recipe think of how you can increase the amount of fiber while you reduce the amount of salt, protein and fat per serving. Things like mushrooms and carrots will take the flavors of whatever meat you are using. Brown rice and pasta will make your meal dollars go further and benefit people who have blood sugar problems.

But remember portion control. You can only have small meals if you want to be healthy.

The big payoff of eating this way is that the gourmet meat extender will make you healthier if you prepare it properly. It will extend your life as well as you meat purchases. Best of all you will save money on medical care, medications and health and life insurance. It's the really big payoff of eating better.
