A Short History on Recipes for Casseroles

Recipes for casserole have become a staple in the American family tradition used for breakfast, lunch and dinner all over the country. The casserole that we know of in these days is a fairly new recipe idea. In the early 18th century, recipes for casserole had ingredients like rice that was pounded, pressed and filled with savory meats, like chicken or sweetbread. That's a little different from the casserole dished we see today.

The word casserole originally referred to the pan. "Casserole" is from a French word meaning "sauce pan". It is usually a large, deep dish used in an oven for baking or to serve food prepared in it. In the late 1950's, casserole came to mean the dishes cook in the pan.

Meat Casseroles

Casseroles in today's meals usually are made of meat, more commonly chicken, or fish, like tuna, and a mixture of vegetables. There is usually flour, potato, or pasta is used as a binder. Gin, cider, vegetable juice, milk, wine or beer is added as stock in addition to the juices from the meat or vegetables that are released when the casserole is cooked.

Barbecue Beef and Potato Bake

Ingredients:

• 1 package (7.2 ounces) roasted garlic mashed potatoes (2 pouches)
• 2 cups hot water
• 1 1/3 cups milk
• ¼ cup butter or margarine
• 1 container (18 ounces) refrigerated barbeque sauce with shredded beef
• 1 ½ cups shredded Cheddar cheese (6 ounces)
• 1 cup French-fried onions (from 2.8-ounce can)

Directions:

Heat your oven to 350°. Lightly grease a baking dish, 11x7x1 ½ inches, with cooking oil or spray. Make potatoes according to directions on package for 8 servings, using 2 pouches Potatoes and Seasoning, 2 cups water, the milk and butter. Spread half of the potatoes over bottom of baking dish. Layer the pan with beef, 1 cup of the cheese and remaining potatoes. Cover with aluminum foil and bake about 30 minutes or until hot. Sprinkle with remaining ½ cup cheese. Sprinkle onions around edges of baking dish. Bake uncovered 3 to 4 minutes or until cheese is melted and onions are brown.
