Cooking Vegetarian - Simple Ways To Cook Vegetarian Food

In all forms of cooking there are some principles to bear in mind that can make it easier. Vegetarian dishes are no exception. Even the simplest recipe can look really complicated unless we understand the basics.

The simplest of all dishes is a one pot stew or casserole. There are vegetarian versions that taste just as good as meat based ones. If you have the essential ingredients to hand you can make a very simple vegetarian casserole.

All you need to do is add a tin of beans such as kidney beans, pinto beans, butter beans of flageolet beans to a root vegetable casserole. You can develop some variations on this theme by adding a topping of breadcrumbs with or without grated cheese and putting it in the oven for a few minutes. You could even add a pastry crust or a cobbler topping and bake it. Dumplings are an excellent addition and make a hearty vegetarian meal.

Vegetarian soups are just as simple. If you cook some lentils, carrots and onions for about 15 minutes you can whizz the whole thing in a food processor to make soup. Season to taste and stir a spoonful of yoghurt or creme fraiche into each dish as you serve it. A sprinkling of chopped coriander or parsley adds a special touch.

A pea soup is even easier. Cook some frozen peas in boiling water with a sprig of mint. When they are cooked put them in the food processor. Season to taste and serve. A slice of wholemeal bread makes a satisfying vegetarian lunch.

Another one pot stand by is risotto. A mushroom risotto makes a quick and easy vegetarian supper. Arborio rice cooks in about 10 minutes and it will take about the same to chop up some onions, garlic and mushrooms.

Stir fry is a great vegetarian stand by. The great advantage of this kind of cooking is that you can adapt it to whatever vegetables you have available. If you have some tofu in the store cupboard it is easy to make a vegetarian stir fry. Mushrooms also make a good vegetarian stir fry.

A stir fry is not quite a one pot dish because you will need to cook some rice or noodles to go with it. But noodles are very easy and only take about 10 minutes or less.

Cooking brown rice can be a slow business which puts many people off using it. But the best way to make this essential vegetarian food easy is to invest in an electric rice. cooker. Your rice will be done perfectly every time and become the basis of many easy vegetarian meals.

But it can be easy to put in order easy entrees at home, rescue you both time and money. So move beyond burgers and fries and fix one of these dishes tonight! All are easy to put in order and ready in about 30 minutes.

Soups: Soup is one of the easiest, most wholesome, well-received house meals. Unfortunately though, most canned soup offerings are high in salt and chemical preservatives and lack any distinguishable flavor. You can do better. Start with either low sodium broth or a combination of water and tomato juice. Don't worry about exact measurements - you can all the time add more water later if necessary. To the soup pot add; chopped or instant minced onion, cut up cooked meat or drained, canned beans, your beloved frosty vegetables, a handful of rice, barley or pasta, and dried herbs like basil, thyme, rosemary, bay and/or marjoram for flavor. Simmer until heated through and the rice or pasta is cooked, 20-30 minutes. Just before serving add a splash of balsamic or red wine vinegar and season with freshly ground black pepper. To make a soup extra special, top with dumplings, serve over a slice of toasted French bread or serve in a purchased bread bowl. Cost: Deli soup .59, Homemade per serving.

Meat Casseroles

Stir Fries: Stir-fries are a great way to use up odds and ends of leftovers. Heat olive or peanut oil in a skillet. Speedily cook small pieces of chicken, beef or shrimp and add cut up vegetables like carrots, zucchini, broccoli, bell pepper and green beans. Make a easy but flavorful sauce by mixing together broth or water and orange or pineapple juice. Add a dash of cayenne pepper, your beloved herbs and a microscopic cornstarch. Stir the combination until the sauce thickens, adding more water if necessary. Serve over rice or noodles. Cost: Lunch counter rice bowl: .49, Homemade .50.

Casseroles: Mom was right. Casseroles are easy to put in order and money rescue too! Start with cooked rice, pasta or millet. Use brown rice instead of white rice or pasta shells or ziti in place of spaghetti noodles for variety. Stir in cooked, chopped meat and your beloved vegetables. Peas, carrots and corn are especially good choices in casseroles as they enunciate their flavor even when baked at high temperatures. Mix all things together with a thickened broth or a can of low-fat, low-sodium cream of celery soup. Add herbs for flavor. Top the casserole with dried bread or cracker crumbs and grated cheese and bake until hot and bubbly. Serve with a tart relish, chutney or dill pickles on the side for a unblemished meal. Cost: Food court baked ziti .49, Homemade .

Sandwiches: Traditionally considered lunch food, sandwiches are now a dinnertime beloved too. Keep whole-wheat sandwich rolls or pita bread in the cupboard to make your own Hoagies, Grinders or Italian sandwiches. Start with a flavorful mustard (Walla Walla Sweet Onion by Aj's Edible Arts and Seadog Beer Mustard by Raye's Mustards are good choices) and stuff with deli meat and cheese, ready hummus, chicken, tuna or egg salad. Add slices of bell pepper, tomato, spinach, avocado, olives and pickles and top with a splash of olive oil and red wine vinegar. There Are Plenty of Simple, Healthy Ways to Cook Chicken Breast Meat

Chicken breast meat is probably one of the healthiest meat you can eat if you are on a low-calorie, low-fat diet to lose weight. That's because this part of the chicken has less fat and if you get the skinless ones, it is choke full of protein and very little fat.

However, many are not sure about cooking the chicken breast meat as it could turn out to be stringy and tough. You can always use a meat tenderizer but if you prefer not to use that, there are more natural ways to make sure the chicken meat is tender, soft and succulent after it was cooked. Here is a simple stir-fry chicken recipe that is healthy, wholesome and easy.

Easy Stir-fried Chicken Breast Meat with Vegetables

The ingredients you may need are:

1 pc chicken breast meat
6 tbs light soya sauce
2 tbs fish sauce
1 tbs dark soya sauce
2 tbs five spice powder
1 cup green peas
1 cup chopped carrot
1 cup sweet peas
3 medium potatoes, boiled, skinned and cubed
2 tbs diced garlic
1 onion, diced
1/2 cup boiling water
2 tbs cooking oil

To prepare the chicken, you need to first slice the chicken meat very thinly. Then season it with 2 tbs light soya sauce, 2 tbs fish sauce, 1 tbs dark soya sauce and 2 tbs five spice powder. Let it marinade for about 30 minutes or so.

In a wok, heat up the cooking oil. Saute the garlic till fragrant and then add the onions and continue to saute till it is almost brown. Add the marinated chicken. Stir fry over medium heat for a minute or so but make sure the chicken is still half-cooked before you add the carrots, peas, sweet peas, potatoes and water. Cover and let it simmer over medium heat for two minutes. Then add the remaining light soya sauce and cover. You can let it simmer for another two minutes then remove.

This dish is best served hot with steamed wild brown rice or you can even eat it as an all-in-one meal since it has potatoes and vegetables too. The recipe is ideal for two if eaten with rice or for one if eaten as is.

The secret behind ensuring that the chicken is not tough when cooked is to time the cooking time to ensure that it is not overcooked. Always cook it just right and it will remain tender and juicy. Seasoning the chicken before cooking it is a great way to add wonderful flavours to it.

Simple Chicken Recipes

Chicken is the Worlds most popular meat and in this time consuming World we live in simplicity is key. So what better way to combine the two than some delicious chicken recipes that are simple to make. We all want to eat healthy, delicious meals but most of us think that healthy means time consuming and usually opt for a quick and easy ready meal or take away instead.

What we want, for ourselves and our kids, is the delicious home cooking that we had when we were kids. But we don't have the time to prepare these tasty dishes. A lot of home made food is now much simpler to make and these dishes are far healthier than what they were before. With chicken being so popular, even with fussy eaters, it tends to feature in a wide variety of recipes. It is also low cost and easy to prepare so is an ideal main ingredient for simplicity.

Chicken is the only meat my family seem to agree on so it makes a perfect choice as the main ingredient of many of my dishes. At one point searching the internet for delicious chicken recipies was overtaking the actual cooking of these recipies! In the end I just bought a cookery book based around chicken recipies, it was much easier. I have now spent hours perfecting my families favourite dishes and am always on the lookout for new and even more tast recipies.

An all time family favorite chicken recipe of mine is chicken casserole. Chicken casserole is simple to make but can sometimes be quite stodgy. This is quite a healthy version and serves 4, so if your family is bigger or smaller just adjust the quantities.

Chicken Casserole

Ingredients

* 1tbsp olive oil

* 1 onion, halved and finely sliced

* 2 carrots, peeled and thickly sliced

* 2 celery sticks, thickly sliced

* 605g pack chicken thigh fillets, without skin

* 1tbsp plain flour

* 500g new potatoes, quartered

* leaves from 2 rosemary and 2 thyme sprigs

* 600ml stock, made from a stock cube (or, for even more taste, follow the recipe for chicken stock)

* 2tbsp cornflour

* Crusty wholegrain or seeded bread to serve

Method

1. Preheat the oven to 180C/160C Fan/ Gas 3. Heat the oil in a large ovenproof pan and cook the onion until soft. Add the carrots and celery and stir so they are all coated in oil. Cook for 4-5 minutes.

2. Toss the chicken in the flour, add to the pan and cook until lightly browned. Then add the potatoes, rosemary, thyme and stock. Heat until simmering, cover and cook in the oven for 45 minutes.

3. That's 45 minutes you have to yourself or to clean up a bit around the house ready for dinner!

4. Mix the cornflour with four tablespoons of water to make a paste. Stir into the casserole and cook for another 10 minutes. Serve with big hunks of bread.

Now hows that for simplicity - 4 simple steps (well 3 really)!

There are many other chicken recipes that can be easily simplified. What about this for a romantic Chicken Cacciatore meal for two.

Chicken Cacciatore

Ingredients

* 1 pound skinless, boneless chicken breasts

* 1/2 cup chopped onion

* 1 medium green pepper cut into strips

* 1 16oz. can of whole tomatoes

* 1 6oz. can of tomato sauce

* 1/2 teaspoon oregano

* 1/2 teaspoon basil

* 1 cup minute rice

* Cooking spray

Method

In a large saucepan, brown the chicken, onion, and pepper in some cooking spray, tossing occasionally for even cooking. Stir in tomatoes, sauce and seasonings. Bring to a boil. Stir in rice and cover. Reduce heat to low and simmer for 10 minutes.

It not only sounds romantic and upmarket but it only takes minutes to cook and it tastes delicious.

So with chicken being easy to prepare, tasty and low cost there is now the added simplicity that makes Chicken Recipes so delicious!

A Simple Jewish Meal

Now that it is fall cooking is more of a production. Meals need to be hot to warm your family up after a long day in the cold. However, because you spend you day working and taking care of your family you may not always be in the mood to cook a large hot meal. Fortunately, a simple Jewish meal prepared with love can be just as satisfying as a gourmet meal that took hours to prepare.

The Main Course

When planning a simple meal you will want to start with the main course. Since you want to simplify the cooking process you will want to create a single dish that has all the food groups in its ingredients. Stews and casseroles are two dishes that help you to create well rounded meals in a single pot or dish.

Jewish cuisine is filled with traditional Jewish recipes for great casseroles, especially noodle casseroles. Noodle casseroles are easy to prepare, as they are what I like to call a dump and cook recipe. All you do is dump the ingredients into a casserole and pop it in the oven to cook. A basic noodle casserole, that is intended to be served as a main dish, will contain noodles, vegetables, a dairy base and some form of meat. For example, if you want to make a tuna noodle casserole you will need noodles, a can of tuna, cheese, milk, a bag of mixed vegetables and a basic rue made from butter and flour.

Another easy to make one pot meal is a stew. Stews work well for working Jewish parents as they can be started in a crock pot in the morning and left to cook safely in the crockpot through the day, and by the time that you get home form work/school, the stew is ready. To prepare a stew you will need brother (chicken, vegetable or beef), meat and vegetables. You will want to skin and cube your vegetables in large enough pieces so that they survive the long cooking time. If you have young children, you can cut down the vegetables when they are served to make them easier for them to eat.

Dessert

For an easy dessert there are several options that you can go with. You can prepare a cake mix and top it with berries or warmed fruit preserves, or you can simply serve a baked apple. Baked apples are a great and inexpensive dessert to make. All you have to do is to core your favorite type of apple, place it in a cake pan filled with about a half inch of water, sprinkle the apples with a tablespoon of sugar and a tablespoon of cinnamon and bake at 350 degrees until soft. When you serve the apply sprinkle with a little more sugar and cinnamon.

Enjoy new Jewish recipes this week!
