Rouille - The greatest Fondue ornamentation

When you have a fondue meal you need meat for your main courses and you want garnishes to dip the meat in after it is cooked. Favorite main courses for fondue comprise beef, steak, lobster, and fish. (Be sure to marinate these for tenderness.)

If you cook fish you should have a dish of rouille on hand. This French sauce is still very Favorite in Provence. A sample recipe for this sauce calls for one egg yolk, 1 cup of olive oil, 2 cloves of garlic, and 10 pistils of saffron. You also add salt and cayenne pepper to taste.

If you've ever been to France, then you know that the French are very opinionated and creative when it comes to their food. That means there is more than one way to make this excellent sauce--and that each chef will insist their recipe is the best.

A slightly more involved recipe ready on Epicurious, a Favorite Internet cooking site, adds a few more ingredients. Here you use 3 tablespoons water, 3/4 cup fresh bread crumbs with the crusts removed, three garlic cloves, 1/2 teaspoon base sea salt, 1/2 teaspoon cayenne pepper, and 3 tablespoons extra virgin olive oil.

Start by pouring water over the breadcrumbs in a bowl. Then use a mortar and pestle to mash the garlic and the sea salt into a paste and add the cayenne pepper. Next, add the moistened bread crumbs and continue to mash. Finally, pour the oil in a slow stream as you continue to mash and stir intensely with your pestle until all the ingredients are well combined. Note that if you do not have a mortar and pestle, an alternative way to get ready the dish is to use a large knife to mince and mash the garlic; then you exchange the paste to another dish and stir in the bread with a fork. Continue to stir in the same fashion and add the oil.

If you're having a fish-based fondue meal, you might also serve bouillabaisse. Bouillabaisse is a fish stew that comes from the French city of Marseille and rouille makes a great together with sauce for it. The stew has separate kinds of cooked fish and shellfish as well as vegetables. Herbs, garlic, orange peel, basil, bay leaf, saffron, and fennel are used to flavor it.

If you want to have your supper party as the French do, you will need to make bouillabaisse for at least 10 people. The more citizen sharing the meal, the more collection of fish you need for the dish. Then, the final stock will be even better.

Also, if you have a large get together you can make your fondue party potluck. Your friends can bring other sauces to add to the meat once it's cooked. Your guests can also bring separate types of meat, although it may be easier for you to make the main courses and ask your guests to bring items to dip in the chocolate for dessert. Favorite treats comprise fresh fruit such as raspberries and strawberries. Just make sure you have enough fondue sets and fondue forks so that everybody can enjoy the delicacies.

Meat Fondue Recipes

If cooking meat in a pot of hot oil sounds like a great way to spend a Saturday night, then let me share a few meat fondue recipes with you.

When most people think of fondue, they come up with an image of people sitting around a hot pot with little forks. And they're usually dunking pieces of French bread or vegetables into some cheese. Another popular version of fondue is made with chocolate. You melt the chocolate in the fondue pot and then dip small pieces of fruit or cake into it. But did you know that you can also make meat fondue recipes?

The key to meat fondue recipes is the oil. Peanut oil is the best oil to use in your fondue pot for both flavor and safety. Peanut oil has the highest flash point of the most common cooking oils. That's good because you want to make fondue, not set the house on fire. It also adds a nice subtle flavor to the meat.

Fondue is all about the prep work. No matter what type of meat you choose, whether it's filet mignon, pork loin or chicken breast, you're going to want to cut it into bite sized cubes. Do this in advance so that you can relax during your meal. You might want to prepare a plate of raw meat for each guest and leave it in the refrigerator until dinnertime. Always use caution when handling raw meat.

Heat the oil to 350 degrees in a stainless steel or cast iron fondue pot. Save the ceramic fondue pot for chocolate fondue because it will likely crack when filled with hot oil.

Next you should skewer a cube of meat with your fondue fork and slowly lower it into the pot. Let it cook for 1-3 minutes. The exact cooking time depends on the choice of meat and the desired doneness. Start with one cube of meat and see how you like it, then adjust your cooking time. Longer cooking time for well done, less cooking time for rare, etc.

The best part about meat fondue recipes is the dipping sauces. You'll need to put out at least three dipping sauces for your guests but five is even better. Dipping sauces can also be prepared in advance and be sure to give each guest their own bowls. Nothing spoils a fondue meal quicker than someone complaining about double dipping.

Here's some dipping sauce recipes to get you started.

Bearnaise Sauce


1 tablespoon Shallots (chopped)
1 teaspoon Fresh Parsely (chopped)
1/4 teaspoon Thyme
1/4 teaspoon Tarragon
1/4 cup Dry White Wine
1/4 cup Tarragon Vinegar
3 Egg Yolks
1/2 cup Butter
Salt and Pepper to taste

Add Shallot, Parsley, Seasoning, Wine and Vinegar to a pot

Boil mixture until reduced by 1/2

Strain liquid and cool

Beat in Egg Yolks and Butter

Mixture should be consistency of Mayonnaise

Hollandaise Sauce


4 ounces Butter
2 Egg Yolks
1 teaspoon Lemon Juice
1 teaspoon Water
Salt to taste

Melt Butter - Do not brown

Remove from Heat

Mix rest of ingredients in blender

Spoon out bubbles from butter

Add butter to running blender

Horseradish Sauce


2/3 cup Whipping Cream
1 teaspoon Horseradish (grated)
2 Green Onions (chopped)

Whip the Whipping Cream

Mix in the rest of the ingredients

Chill for at least an hour

The most important thing to remember about meat fondue is the dipping sauce. Of course the choice of lean cuts of meat is also important but the fondue sauce recipes really can make or break your meat fondue party. In this article, we will discuss the most popular meat fondue sauce recipes.

Before we get to the recipes, let us first discuss the need for a variety of sauces. You'll need at least three choices of dipping sauces to serve your guests. Five choices would be even better but any more than that would be overkill. What you really should have for a fancy fondue party is a real set of fondue plates that have individual spots for the sauces. That would be even better. 1 1/2 cup Mayonnaise
1 1/2 tablespoons Lemon Juice
1 tablespoon Minced Garlic
1/2 teaspoon Tabasco

Combine ingredients in a bowl

Mix well

Refrigerate until serving

Soy Wasabi Sauce

2 oz Soy Sauce
2 tbs Wasabi

Mix until smooth

Dijon Mustard Sauce

1/2 cup Mayonnaise
1/2 cup Dijon Mustard
Black Pepper (to taste)

Combine ingredients in a bowl

Mix well

Refrigerate until serving.
