10 Ways to Use Leftover Meatloaf

Have you ever made meatloaf, and found yourself with enough left overs to last the whole week? If you're like me, I do not enjoy eating the same meal more than twice in a row, once for dinner, then lunch the next day. I discovered that a little meatloaf can go a long way, and that does not mean by sprouting legs from sitting too long in the fridge.

The following is a list of things that can be done so your family will not even recognize the meat loaf from the night before. This list is by no means exhaustive, but it should give you a good start, and may spark your own creativity.

1. Whenever you make too much of something, one option is always to divide into individual portion sizes, date, label, and freeze. You can easily grab it out for a quick meal.
2. Easy Chili: Crumble up your leftover meat loaf into a pot. Add a can of kidney beans, rinsed and drained. Add a couple cans of tomato sauce, or your choice of ground or chopped tomatoes with juice (if your tomato base is runny, add a tablespoon of cornmeal). Add a tablespoon of chili powder, half a tablespoon of seasoned salt, and half a tablespoon of brown sugar. Simmer for ½ hour and serve with cheese and sour cream if desired.
3. Shepherd's Pie: Crumble the leftover meat loaf. Stir in a can of cream of mushroom soup and half a can of water or milk. Spread into bottom of casserole dish. Add a layer of your favorite vegetable: if canned just drain and add, if fresh or frozen, cook and drain then add. Top with mashed potatoes and cook on 350 for half an hour.
4. Tater tot casserole: Prepare meat and vegetables like you would for shepherd's pie. On top of the vegetables, put a layer of chopped Velveeta or sliced American cheese. Top with tater tots and cook at 400 for 20-25 min.
5. Chip dip: Mix meat loaf with salsa and Velveeta, or similar cheese. Microwave until cheese is melted. Mix well and serve with tortilla chips.
6. Sloppy Joes: Put meat loaf into a frying pan with ketchup, mustard and barbeque sauce. Simmer for 10-15 minutes on low heat. Serve with pickles on buns.
7. Patty Melts: Slice the meat loaf into medium slices (about burger thickness). On a frying pan or griddle, place a piece of buttered bread, butter side down. Place the meat loaf slice on the bread with a slice of cheese on it. Toast another piece of bread on the griddle for the top. Sauté onion rings and place on the meat loaf and cheese combination. Top with the other piece of bread and serve with desired condiments.
8. Taco Salad: Chop meat loaf in a frying pan and cook on medium heat. Add a package of taco seasoning and amount of water indicated on the package. Simmer for 10-15 minutes. Serve with tortilla chips, lettuce, cheese, sour cream and tomatoes.
9. Spaghetti Sauce: Add crumbled meat loaf to a sauce pan. Add two cans of tomato sauce, ½ tablespoon Italian Seasoning, and 1 teaspoon of salt. Simmer for 15-20 minutes. Serve with your favorite cooked noodles.
10. Biscuits and gravy: Crumble meat loaf into a sauce pan and set to medium heat. Add 2 tablespoons of flour and stir until coated. Add 2 cups of milk and stir until thickened. Add salt and pepper to taste and serve over biscuits.

Great Things to do With Your Leftover Thanksgiving Turkey

If you've slaved away for hours on a huge bird for Thanksgiving, there's no reason that the extra meat has to go to waste. It's inevitable-99% of the time, you'll have leftover turkey after everyone's had their fill. Although you can simply heat up the meat in the microwave, that isn't very interesting or tasty. You've spent a lot of time and money cooking the perfect Thanksgiving turkey. Don't let the leftovers go to waste!

One of the tastiest things you can do with your leftover turkey is make turkey salad. This is a great way to stretch the leftover meat as well. You can use the recipe for any turkey or chicken salad recipe, with isn't much more than mayonnaise and a few extra additives (it depends on your specific recipe). You can than use the turkey salad in sandwiches, or on top of toast. Add some cheese, and you'll have a wonderful lunch!

Meat Casseroles

Another great use for leftover turkey is potpie. You can make pot pie with whatever vegetables you have leftover from Thanksgiving as well. Although most people like to use chicken or beef, turkey holds up well in a potpie and can be delicious with the same recipe you use for chicken potpie. In fact, turkey works well in place of chicken in most recipes. You can try turkey a la king, turkey casserole, turkey and rice, and any of your other family chicken recipes.

Don't forget that you don't have to eat all of your leftovers right after thanksgiving. If you have a tone of leftovers, you can get sick of turkey rather quickly, and the heavy, rich foods associated with Thanksgiving are not always very healthy for your body. Why not spread out the leftovers all year? Thanksgiving turkey and other leftovers can be frozen in convenient packs, meaning that all you have to do when you want a taste of November is heat up the meal. Instead of freezing all of the turkey together, all of the corn together, etc, make up plates with single meals. These are great to take with you to work as lunch or to heat up for a child who doesn't like what you're making for dinner. Use your frozen meals in about six month if you choose this option.

And hey, no one's saying that you can't cook a larger Thanksgiving turkey on purpose! If you like the leftovers that you can make from turkey or if you want to freeze a number of extra Thanksgiving meals, try cooking a bird twice the size than you'll actually need for Thanksgiving while you're already taking the time to prepare the large meal.

At the very least, don't throw your leftover turkey away! Regulations prevent you from donating the meat to the food bank, but if you know of a need family in your area, you can offer the leftovers to them, mentioning that you have more than you can use before it spoils. Thanksgiving is a time of sharing the food you have with others, after all, so you can help keep in the spirit with your leftover Thanksgiving turkey.

No Such Thing as Leftover Chicken for a Week

I like to crock pot meat on Monday and then serve it several different ways throughout the week. Even the leftover hater in your family will embrace this crock pot chicken that transforms itself into white bean chili, Caesar salad, broccoli casserole, pesto pasta and tortilla soup and you'll love the 10 minute or less prep time each. For the chicken, just place 10 frozen chicken breasts in crock pot and cover with chicken broth (one large can or three small – add extra water if needed to cover) and heat on high 6-8 hours or low 8-10 hours*. Chicken will be so tender that it will be easy to cut with a butter knife or shred it with two forks. (*3-4 on low or 5-6 on high if fully thawed)

Monday’s Chicken Broccoli Rice – great separate or as a casserole

Meat Casseroles

Cook Time: 30 minutes, Prep time: 15 minutes (just to cook the flavored rice), Serves 4

A. 1 pkg. Rice-a-Roni chicken flavor or long grain wild rice prepared according to instruction

B. 2 large chicken breasts, 1 pkg. frozen chopped broccoli pieces cooked

C. 1 can cream of chicken soup and 1 cup grated sharp cheese

If cooking as a casserole, combine A, B and C with the cheese as the ingredient on top. Bake in casserole dish at 350 until heated through – about 30 minutes. If not eating as a casserole, just combine A and B, add salt and pepper to taste, and microwave as needed.

Tuesday’s Chicken Tortilla Soup Recipe – So Easy and So Good

Cook Time: 5 minutes Prep Time: 10 minutes Serves: 4

2 chicken breasts cooked

1 can chicken broth

1 can V8 juice

1 can cheddar cheese soup

1 can corn

1 can black beans

1/3 pack taco seasoning mix

chopped up tortilla chips (to sprinkle on top once cooked)

optional: roasted red pepper to taste, cooked rice

Since the chicken is cooked, the instructions are as simple as:

1. Open cans

2. Heat on stove over medium heat

3. Serve with chopped up tortilla chips on top

I like the 90 second microwavable rice from Uncle Bens because my husband can add it to his but I prefer it without.

Wednesday Chicken Basil Pasta – best with fresh herbs and tomatoes from the garden

Cook Time 10 minutes, Prep Time 10 minutes Serves 4

2 large chicken breasts cooked

3 cups bow tie pasta (8 oz.)

1 jar alfredo sauce (approx. 1 lb)

milk (optional)

4 medium fresh tomatoes (when tomatoes aren't in season, I substitute roasted red peppers for the tomatoes)

6 leaves fresh basil

Add the pasta to boiling water (10 minutes)

Heat the alfredo sauce in the microwave (5 minutes on medium heat - although microwaves differ)

Add milk to sauce if you prefer thinner sauce (I do!)

Chop the chicken, basil and the tomatoes

Drain the pasta

Combine all ingredients

Thursday’s White Bean Chili – a Tasty Variation to Standard Chili

Cook Time: 10 minutes, Prep time: 10 minutes Serves 4

2 large chicken breasts – cooked and shredded or chopped

1 (16 oz.) can white beans

1 (16 oz.) can corn

1 (16 oz.) can diced tomatoes

1 small cans chopped green chilis, drained

1 clove garlic

1 medium onion, chopped

1 T vegetable oil

1 envelope ranch salad dressing mix

1 envelope taco seasoning mix

In saucepan, saute onion in vegetable oil until browned. Combine all remaining ingredients until heated through. Serve with crusty bread or tortilla chips.

Friday’s Chicken Caesar Salad – it’s the weekend!

Cook time: 0 minutes, Prep Time: 2 Minutes, Serves 4

1-2 Chicken Breasts – chopped

2 bags Caesar salad mix includes shredded parmesan, croutons, dressing

Salt and pepper to taste

Add salt and pepper to taste on chicken. Combine remaining ingredients. Serve with crusty bread and leftover chili from Thursday, or with a good take-out pizza!

Leftover Chicken Ranch Style

Almost everyone eats some chicken and a lot of people eat a lot of chicken. Either way, they almost always have leftover chicken to deal with and there are a zillion recipes out there from which they can choose. A few are really good but most of them are forgettable. Even those that are good neglect to warn you that, once a chicken is cooked the way you like it, further cooking will not make it any better and quite often will ruin it. One must be very careful not to overcook leftover chicken and King Ranch Chicken is one recipe that will not do that.

A word of caution is in order. Quite often a person who is a good cook will look at a recipe like this one and have the urge to get creative. For example, instead of a can of mushroom soup they will want to saute fresh mushrooms and blend them into a real cream sauce. Big mistake! Stick with the recipe because it was never meant to do anything but feed a crowd of hungry ranch hands.

Meat Casseroles

You will need:

4 cups of leftover chicken, white or dark meat, chopped into bite-sized pieces
2 tbs butter
1 tbs canolo oil
1 green pepper, chopped
1 medium onion, chopped
2 (10 ounce) cans Rotel diced tomatoes with chilies
1 can cream of chicken soup
1 can cream of mushroom soup
12 (6 inch) corn tortillas cut into quarters
8 oz shredded cheddar cheese

Melt butter and oil in a large skillet over medium heat. Add bell pepper and onion and cook until slightly soft but not brown. Remove to a large bowl and thoroughly mix in the chicken, onions and peppers, diced tomatoes and both cans of soup

Arrange one-third of the tortilla quarters on the bottom of a 13X9x2 greased baking dish. (You can also use a souffle dish which makes it easier to arrange the tortilla quarters) Top the tortillas with one-third of the chicken mixture and sprinkle evenly with two-thirds of the cheese. Repeat the layers twice, reserving two-thirds cup of cheese. Cover the top loosely with foil and bake at 325 degrees for 35 minutes. Remove foil, sprinkle on remaining cheese and bake another 5 minutes. Let stand for ten minutes before serving.

All you need is a good salad and maybe a few warm tortillas to complete the meal.

NOTE: If you have no leftover chicken just poach some chicken breasts in chicken broth, cut them up and go for it.
