In terms of globally recognized food culture, the Philippines is relatively unknown - sadly, because the country surely has an awful lot of great recipes to discover. Though it lacks a recognizably unique character, Pinoy food is remarkably diverse - much like the country's origins.
This diverse cuisine is drawn from a estimate of sources - most notably Chinese and Mexican, but also from Japanese, American, Indian and Arabic nations. Filipino food is ordinarily referred to as a "fusion".
Meat Casseroles
Today I'd like to introduce you to a meat dish, similar to Mexican tortillas but with a Pineapple based sauce.
Ingredients:
For the tortillas:
1 lb of minced pork meat
5 oz of shrimp (the smallest kind)
1.7 oz of water chestnuts
1 tbsp of salt
1 tbsp of pepper
10 flour tortillas (used instead of egg roll wrapper in case you don't have any)
10 toothpicks
4 cups of oil
For the pineapple sauce:
1 1/2 cups of pineapple juice
A pinch of salt
A pinch of black pepper
2 cups of ketchup
Cooking instructions:
Cut the shrimp well, mincing them if possible. Peel and cut the water chestnuts. Then mix these all together with the Pork mince.
Before filling the tortillas, I advise you start to make the pineapple sauce. In a small pan, start simmering the pineapple juice. Add in the ketchup, and enough vinegar to give it a light consistency. Season with salt and pepper. Let this thicken a little while you continue with the tortillas.
Next, fill the flour tortillas with the meat, shrimp and chestnut mix; then roll them into thin wraps. Fry these in very hot oil and drain them.
Pour the pineapple and ketchup sauce on the wraps and serve immediately.
This is in itself a very filling dish, but I usually serve with a traditional Filipino salad.
